HAWAIIAN CARROTS
A simple and delicious side dish that goes well with any grilled entree. From Quick and Easy Weeknights.

Steps:
- 1. Drain pineapple, reserving juice; set pineapple aside. Combine the reserved juice, honey, oregano, and onion powder in a medium saucepan; bring to a boil. Add carrot pieces; cover, reduce heat, and simmer 10 minutes. Stir in pineapple, and cook an additional 5 minutes or until carrot is tender.
- 2. Combine cornstarch and water, and stir well; add to carrot mixture. Bring to a boil, and cook 1 minute or until thickened, stirring constantly. Spoon into a bowl, and sprinkle with cashews.
ALOHA CARROTS
A simple side dish that goes especially well with seafood. I'm guessing that the sauce would also work well with any veggie that you might want to 'Hawaiian up'.

- 2. Bring to boil, reduce heat to medium and cook until carrots are tender crisp, about 15 minutes.
- 3. Drain water, stir in sugar, pineapple and butter.

ROASTED CARROTS WITH ALMONDS AND OLIVES
When you start with fresh baby carrots from the farmer's market, they need little more than a quick toss in salt, pepper, and olive oil to bring out their natural sweetness when they're roasted in the oven. This Spanish-inspired version gets salt and crunch from fat Cerignola olives and Marcona almonds. It pairs equally well with fish, turkey, or lamb and complements chardonnay, pinot grigio, merlot, and cabernet alike, making this dish your all-season starter or side.

- 1. Preheat the oven to 400 degrees F. Toss the carrots, shallots, and orange peel in the olive oil. Season with salt and pepper and spread out in a single layer on a baking sheet. Roast until the carrots and shallots are fork tender, 15 to 20 minutes.
- 2. Smash the olives using the bottom of a heavy skillet and remove the pits.
- 3. Transfer the roasted carrots to a platter and top with the olives and almonds. Garnish with coarse sea salt. Serve with chardonnay or merlot.

HELLMANN'S HAWAIIAN CARROT CAKE
I got this recipe a real long time ago...like 25 years ago. I think I sent away to Hellmans asking for some recipes and this was one of them. It is absolutely moist and delicious. The flavors are outstanding especially with the cream cheese frosting. Can't be too bad for you right, it has carrots....must be healthy. Depends on who I am making this for I sometimes eliminate the walnuts.

- Grease a 9 inch tube pan or 13 x 9 baking dish.
- Stir together first 5 ingredients in medium bowl.
- In large bowl beat eggs, sugar, mayonaise and pineapple until well blended.
- Gradually beat in the flour mixture to the egg mixture.
- Stir in carrots and walnuts if using and mix well.
- Pour into your pan and bake in 350 F oven 60 minutes for tube pan or 50 minutes for baking dish or until done.
- Cool, remove from pan and frost with cream cheese icing.
