CHEESY PULL-APART BREAD
My family absolutely loves this bread. And it's made with only 5 ingredients. For the exception of the bread, I always have everything to make this delicious cheesy bread.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Cut bread widthwise into 1-inch slices to within 1/2 inch from the bottom of the loaf. Repeat cuts in opposite direction. Tear cheese slices into small pieces. Place cheese inside cuts of bread.
- Mix butter, green onions, and poppy seeds. Drizzle over bread, brushing sides of bread with butter mixture. Wrap bread in foil and place on a baking sheet.
- Bake in the preheated oven for 15 minutes. Unwrap bread and continue to bake until cheese is melted, about 10 minutes.

CHEESY CHILE PULL-APART BREAD

- Preheat oven to 350°F. Line a baking sheet with aluminum foil. Melt butter in a small saucepan over medium-low. Add chiles, garlic, and salt; cook, stirring constantly, until fragrant, about 1 minute. Remove from heat; set aside.
- Cut 1-inch-thick slices into bread loaf toward but not through the bottom, leaving a 1-inch bottom. Turn loaf 90 degrees, and repeat process, creating a crosshatch pattern in loaf. Using your fingers, gently pull apart openings in loaf.
- Place loaf on prepared baking sheet. Spoon butter mixture into and around openings in loaf. Press cheese into openings, partially filling the gaps. Bake in preheated oven until cheese is completely melted, about 18 minutes. Sprinkle with scallions; serve immediately.

I just recently have discovered my love for green chilies. Paired with some cheese or bread or meat...GOOD EATS! I thought this would be a good way to add a little spice to the meal, but not burn up my tongue. This bread makes a great appetizer/snack or addition to a Tex-Mex meal.

SPICY CHEESY PULL-APART BREAD

- Preheat the oven to 375 degrees F. Lightly grease a 6-inch cast-iron skillet with canola oil spray.
- Remove the biscuits from the package and lay them out on a clean work surface. Gently pull the layers apart at the middle to divide the biscuits in half. Gently pull each of the halves apart so you are left with four thin, round biscuits each (32 in all). Don't worry if any biscuits tear: just press the torn pieces back together.
- Place 1 teaspoon of the mozzarella in the center of each biscuit round; you will use about 1 1/2 cups of the mozzarella for this. Fold the dough around the cheese and roll into balls. Arrange the balls in a circle around the edge of the prepared skillet, then work your way in until you have completely filled the cast-iron pan with the dough balls. If you start to run out of room as you get closer to the center of the skillet, gently push the dough from the center towards the edges of the pan to make more space.
- Melt the butter in a medium skillet over medium-high heat. Once melted, stir in the scallions, garlic, red pepper and salt. Cook until the butter is just beginning to brown and the garlic is lightly toasted and very fragrant, 2 to 3 minutes. Remove the pan from the heat and stir in the vinegar. Pour the melted butter evenly over the top of the dough and sprinkle with the remaining 1/2 cup mozzarella.
- Bake until the dough is cooked through and golden brown, 25 to 30 minutes. Remove from oven and let cool slightly, about 10 minutes. Serve in the skillet.

- Prepare a wood fired pizza oven with a 400F fire that’s been burning for about an hour (or use residual heat in the oven from a previous fire).
- Combine first 7 ingredients in the bowl of an electric stand mixer. Mix on medium high speed for 7-10 minutes (or until the dough starts to pull away from the bowl) with a dough hook attachment. Scrape down sides occasionally. Remove bowl from mixer and stir in cheese and chiles with a wooden spoon. Let dough rise in bowl for 30 minutes.
- Place bowl back on the mixer and turn mixer back on to medium high speed for 2-3 minutes. Sprinkle pizza peel with a little flour and set aside. Turn dough out on to hands and work dough into a ball shape, place on floured peel (making sure dough isn’t sticking) and let rise for 45 minutes in a warm area.
- Gently slide bread off the pizza peel in hot pizza oven for 30 minutes to bake. If the oven has an active fire leave the door open; however, if using residual heat put the oven door back on to trap the heat for cooking. Remove from oven and let cool for 1 – 1 ½ hours before serving.
