Almond Pesto image

This easy Almond Pesto is a nice way to change it up from traditional pesto. It uses just 5 ingredients, is ready in 5 minutes and pairs perfectly with pasta, meatballs or vegetables!

1/2 cup raw almonds
2 garlic cloves
1 cup spinach
1 1/2 cup fresh basil
1/4 cup olive oil
1/4 tsp salt
water as needed

Steps:

  • Add almonds, garlic, spinach, basil, and salt to your food processor and pulse for 10 seconds.
  • With the motor still running, pour the olive oil in through the top. If mixture gets stuck add 1-2 tbsp of water.
  • Store pesto in a jar in the refrigerator for 5-7 days, or place it in a freezer-safe bag and freeze for up to 2 months.

1 cup packed flat-leaf parsley leaves, (1-2 bunches)
1/3 cup hazelnuts, toasted and skinned (see Tip)
2 tablespoons water
2 tablespoons extra-virgin olive oil
1 tablespoon butter
1 tablespoon lemon juice
1 small clove garlic, quartered
¼ teaspoon salt
¼ teaspoon freshly ground pepper

Steps:

  • Place all ingredients in a food processor; pulse a few times, then process until fairly smooth, or to the desired consistency, scraping down the sides occasionally.

1/4 cup toasted slivered almonds
3 packed cups mixed fresh tender-herb leaves (such as mint, basil, tarragon, cilantro, and flat-leaf parsley)
1/2 cup extra-virgin olive oil
1/4 cup grated Parmesan
1/2 teaspoon coarse salt

Steps:

  • Pulse together garlic, almonds, tender-herb leaves, olive oil, and Parmesan in a food processor until finely chopped. Season with salt. Pesto can be stored in refrigerator, with plastic wrap pressed directly onto surface, up to 2 days.

EASY BASIL PESTO WITH ALMONDS



Easy Basil Pesto with Almonds image

Save some money using garden-grown basil and almonds in place of pricey pine nuts. This recipe is easy, fast, and very tasty. Summer on a plate! Serve over warm pasta with a side salad and a nice loaf of bread. I also spread this on toast. If you have left over, put in a small jar and drizzle some olive oil over the top. Keep refrigerated.

Yield 3/4 cup pesto

Number Of Ingredients 7

2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh tarragon leaves
4 tablespoons roughly chopped walnuts
1 tablespoon bread crumbs
1/3 cup olive oil
Salt
Freshly ground black pepper

Steps:

  • Add to a mortar and pestle, the parsley, tarragon, and walnuts. Add the bread crumbs and grind to a paste. Season with salt and pepper and slowly drizzle the olive oil in while stirring. Serve with good crusty bread.

ROASTED SHALLOT AND TARRAGON PESTO



Roasted Shallot and Tarragon Pesto image

2 large shallots, peeled
2 tablespoons plus 2/3 cup olive oil
3/4 cup (packed) fresh tarragon
2/3 cup (packed) fresh Italian parsley
2 tablespoons sliced almonds
2 tablespoons grated Asiago cheese

Steps:

  • Preheat oven to 350��F. Place shallots in small baking dish. Drizzle with 2 tablespoons oil. Cover dish with foil. Bake shallots 30 minutes. Uncover; roast shallots until soft, about 20 minutes longer.
  • Puree shallots, any oil in dish, and 1/3 cup oil in blender. Add 1/3 cup oil and all remaining ingredients; puree. Season with salt and pepper. (Can be made 1 day ahead; chill.)

From The Moosewood Restuarant Kitchen Garden. It says it is good on grilled fish, vegetables and pilaf. This was quite lovely in a casserole with mixed grains, veggies and topped with mozzarella cheese and pine nuts. Original recipe did not include the garlic, which is why I have listed it as optional.

1 cup loosely packed fresh parsley leaves
1/2 cup loosely packed fresh tarragon leaves
1/4 cup coarsely chopped scallion
1/3 cup pine nuts
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons fresh lemon juice
1/4 cup vegetable oil
2 -3 of crushed garlic cloves (optional)
salt and pepper

Steps:

  • Place all ingredients, except the oil, in a food processor or blender.
  • Mix until everything is well chopped then slowly add the oil in a thin stream to form a fairly smooth paste.
  • Pesto will keep refrigerated for a couple of weeks. Keep in an airtight container and cover with a thin layer of oil, if desired, to prevent discoloring.
