A wonderful fruit bread made from the largest edible fruit native to America. Ripe in the fall, this tropical fruit grows right here in the USA. Pawpaw can be used in many recipes calling for bananas.

1 serving cooking spray
1 cup white sugar
⅓ cup butter, softened
2 eggs
1 ½ cups pawpaw pulp
⅓ cup tepid water
1 ⅓ cups all-purpose flour
½ cup chopped walnuts
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of an 8-inch loaf pan with cooking spray.
  • Combine sugar and butter in a bowl; beat together until smooth. Beat in eggs. Add pawpaw pulp and water; beat until combined, about 30 seconds. Stir in flour, walnuts, baking soda, salt, and baking powder. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes. Allow to cool before slicing, about 30 minutes.

1/3 c vegetable shortening
2/3 c sugar
2 large eggs
1 c pawpaw puree
1 3/4 c all purpose flour
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1/2 c raisins
1/2 c chopped macadamia or walnuts

Steps:

  • 1. Cream shortening, add sugar gradually, and beat until fluffy. Add eggs, one at a time, beating well after each addition. Beat in pawpaw puree. Sift together remaining dry ingredients and add in four portions, beating smooth each time. Stir in nuts and raisins.
  • 2. Pour batter into a greased, floured loaf pan (8x4x3-inches) and bake in a moderate oven (350 degrees) for about 50 minutes, or until a toothpick inserted into the loaf comes out clean. Cool on rack before slicing. Serve slices buttered or with cream cheese.
  • 3. NOTE: To make puree, peel ripe pawpaws and place chunks in blender or food processor and process until smooth.

When it comes to pawpaw, accept no substitutes. Trust us; we tried. We went to a bunch of experts - scholars who specialize in fruit, plus chefs and cookbook authors who know all about the proud culinary history of Appalachia - and we asked them, "If a home cook doesn't happen to have any pawpaw, what combination of other fruits and vegetables might work well as a replacement?" We picked up passing nods to sweet potatoes, bananas, papayas, avocados, really ripe mangoes. But in the end everyone came back with variations on "Forget it, there's nothing like a pawpaw." The goopy-textured, tropical-ish fruit whose name sounds like a punch line on "Hee Haw" can be found scattered all over the country, but recipes (for cakes, pies, puddings) abound largely in West Virginia and nearby states like Kentucky, Ohio and Indiana. If you happen to secure some pawpaw, best to get out of its way, as is the case with this pudding. Pawpaw is a holiday guest who responds well to minimal interference.

This is my recipe for pawpaw tarts which are just little papaya pies. They are little and are perfect for lunches, picnics, or any other place you want to take them. The tarts are very easy to make. The challenging thing is to find a green pawpaw. You may have to make a special trip to your local African, Oriental or Spanish store. But, it is certainly worth the trip.

3 cups papayas (1 large or two medium Papaya)
2 cups sugar
3 tablespoons lime juice (about 4 limes)
1 1/2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons margarine
1 pinch salt
4 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups margarine
1/2 cup sugar
1 1/3 cups milk

Steps:

  • Filling:.
  • Peel your pawpaw and remove the seeds. Cut up into chunks roughly 1 square inch. Place papaya in a pot. Cover with water, add salt, cover the pot, and boil until soft.
  • When done, drain off the water and cool. Use a cook spoon to mash and force the papaya through a strainer.
  • Squeeze the limes and add the juice. Be careful to not add any seeds. Stir in margarine, vanilla, and cinnamon(or nutmeg).
  • Add 1 1/2 cup of sugar, stir, and taste. Slowly add remaining sugar to your taste. I use the entire 2 cups because I like it very sweet. You may not. Mix well and set aside.
  • Preheat your oven to 350 degrees.
  • Pie Crust:.
  • Measure out and combine flour, salt, and baking powder in a mixing bowl. Use a fork to cut the butter into the flour. To cut, you simply mash the margarine into small pieces while mixing in the flour. Cut and mix until the small pieces of butter are more or less spread out in the flour.
  • Stir sugar in the milk. Pour sweetened milk into flour mixture. Fold milk into flour evenly.
  • Use your hands to gather dough into a ball. Place on lightly floured surface. Divide the dough into four pieces. Use a rolling pin to flatten each piece of dough.
  • Divide it into two sections for easy handling. Roll the dough out flat on a lightly floured surface as shown in the photo. Use a large round cookie cutter to cut the dough into circles.
  • Spoon the filling in to the center of the dough and fold over. Seal the edges with a fork.
  • Grease and flour a cookie sheet. Place the tarts on the cookie sheet. Bake at 350 degrees until golden brown (about 20-25 minutes.).
  • Use a spatula to remove from the cookie sheet. Enjoy!
