For the brownies
10 tbsp. unsalted butter (1 1/4 sticks)
1 1/4 c. sugar
3/4 c. plus 2 Tbsp. unsweetened cocoa powder
1/4 tsp. kosher salt
1 tsp. pure vanilla extract
2 large eggs
1/2 c. all-purpose flour
For the topping
2 c. sweetened shredded coconut
1/2 c. sweetened condensed milk
1/4 c. sliced almonds, toasted
1/3 c. chocolate chips, melted

Steps:

  • Preheat oven to 325°, then line an 8"-x-8" baking pan with foil, leaving overhang on the sides, and spray with cooking spray.
  • In a large microwave-safe bowl, combine butter, sugar, cocoa, and salt and heat on high power to melt, about 45 seconds. Stop to stir, then heat in 10-second bursts until mixture has melted and can be stirred smooth.
  • Add vanilla and eggs and stir vigorously until batter is thick, shiny, and well blended. Add flour and stir until just combined, then pour batter into prepared pan and spread evenly.
  • Bake until a toothpick in the center emerges slightly moist with batter, 22 to 25 minutes. (Check with a toothpick; your batch may need a few minutes longer, but do not bake longer than 30 minutes.)
  • While brownies cool, prepare coconut mixture. In a bowl, stir together shredded coconut and sweetened condensed milk, then spread the mixture evenly over cooled brownies. Sprinkle almonds over coconut.
  • Add melted chocolate to a Ziploc bag, then snip a small hole in the corner and drizzle over brownies.
  • Let set in the refrigerator at least 30 minutes before cutting into squares. (Brownies can be stored in an airtight container in the fridge up to 4 days.)

3 tablespoons vegetable oil
1 cup Eagle Brand Condensed Milk
1 (14 ounce) package miniature Almond Joy bars, coarsely chopped
1/2 cup toasted almond

Steps:

  • Prepare mix according to brownie package directions, except only use 3 tablespoons
  • of vegetable oil.
  • Pour into a greased 9 x 13" pan.
  • Pour and spread 1 cup of condensed milk.
  • Sprinkle with chopped candy bars and toasted almonds.
  • Bake at 350 for 35-38 minutes.
  • Let cool completely before cutting into 2 dozen bars.

1 1/3 cups sugar
2/3 cup sweetened condensed milk
1/4 cup butter or 1/4 cup margarine
2 cups mini marshmallows
2 pinches salt
1 (11 1/2 ounce) package chocolate chips
1/2 teaspoon vanilla extract
1 1/2 teaspoons almond extract
1 cup sweetened flaked coconut
1 cup chopped almonds
1 whole almonds, for the top

Steps:

  • Blend together in a stainless saucepan the first five ingredients.
  • Bring to a boil over medium heat, stirring constantly.
  • Boil for 4 minutes being careful not to let the mixture scorch the bottom of pan.
  • Remove from heat and add chips, coconut, vanilla and almond extract, and chopped almonds.
  • Blend thoroughly with rubber spatula.
  • Pour into a foil lined 8x8 pan.
  • Sprinkle more coconut on top and press into fudge then top with whole almonds.
  • Chill in refrigerator till firm, about 2 hours.
  • Cut into bite size pieces.

1/2 cup toasted almond

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 13 inch baking pan with nonstick spray.

FROSTING:
1 cup semisweet chocolate chips
1 carton (8 ounces) frozen whipped topping, thawed, divided
1/4 teaspoon almond extract
1/2 cup chopped almonds

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in chocolate syrup and extract. Combine flour and salt; gradually add to chocolate mixture., Pour into a greased 13x9-in. baking pan. This is a Pillsbury Bake-Off recipe from the 50s. The Almond Joys are melted and mixed into the recipe. I expected a more chocolately brownie when I discovered this recipe and was surprised to end up with a "blonde" coconut brownie with only a hint of chocolate taste. Very good.

4 ounces almond joy candy bars (4 whole regular sized candy bars or 8 miniature candy bars)
1/2 cup butter (I prefer butter, but original recipe called for shortening) or 1/2 cup shortening (I prefer butter, but original recipe called for shortening)
1 cup sugar
1 teaspoon vanilla
2 eggs
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup chopped almonds

Steps:

  • Heat oven to 350°F.
  • Grease 9-inch square pan.
  • In medium saucepan over low heat, melt candy bars and shortening, stirring occasionally until chocolate and shortening are melted.
  • Add sugar and vanilla; blend well.
  • Add eggs 1 at a time, beating well after each addition.
  • Stir in flour, salt and chopped almonds; mix well.
  • Spread in greased pan.
  • Bake for 25 to 30 minutes or until top springs back when touched lightly in center.

brownie batter (homemade or a box mix)
4 cups sweetened flaked coconut
14 ounces sweetened condensed milk
4 dozen almonds
chocolate almond bark

Steps:

  • Preheat your oven according to brownie recipe directions and generously spray two mini muffin pans with nonstick spray.
  • Fill cups about 1/2 full with brownie batter and bake according to directions. When brownies are done, place pans on a cooling rack and remove brownies once cooled completely.
  • In a medium bowl, combine coconut and sweetened condensed milk.
  • With clean hands, roll coconut mixture into balls and press onto tops of brownie bites.
  • Press an almond into the top of each.
  • Place brownies in the freezer to harden for about 15 minutes.
  • Melt almond bark or candy melts according to directions.
  • Remove brownies from freezer and dip the tops in the chocolate.
  • Place dipped brownies on a wax paper lined baking sheet and refrigerate until chocolate is set.
