Steps:
- Set aside 2 Tbsp cocoa powder.
- In a food processor or a medium bowl with an electric mixer on high speed, blend cocoa powder, powdered sugar, cream cheese and vanilla extract.
- Drop cream cheese mixture by teaspoonfuls into reserved cocoa powder, making 24 truffles, roll into balls and chill until firm 1-2 hours.
- Refrigerate any leftovers.

APRICOT ALMOND TRUFFLES
This supposed to be a healthy alternative to traditional candy. This recipe uses dried apricots which are high in fiber. Almonds have many health benefits and the dark chocolate has antioxidants. So this is not candy at all - it's healthfood! Recipe adapted from Ellie Krieger.

Steps:
- Toast almonds in a dry skillet over medium high heat for 5 minutes; set aside to cool.
- Process almonds in a food processor, pulsing until coarsely chopped; add apricots, honey, cinnamon, ginger, and salt processing until everything is finely chopped and sticks together, about 45 seconds.
- Using your hands roll mixture into round balls (about a heaping teaspoon each) and place on a baking sheet lined with waxed paper.
- Melt half the chocolate in a double boiler; stir in remaining chocolate, stirring to melt.
- Roll balls in chocolate to coat and place back on baking sheet.
- Refrigerate until set, about 15 minutes; store at room temperature.

- On sheet of wax paper, reserve 2 tablespoons cocoa powder; set aside. In food processor or with mixer on high speed, combine confectioners sugar, the remaining 1/2 cup cocoa powder, the cream cheese and almond extract; process until well blended. Drop cream cheese mixture by rounded teaspoonfuls in the reserved cocoa powder; roll into balls and refrigerate.

Steps:
- In a sauce pan on low heat, Melt milk chocolate chips. Add in the sweet condensed milk. Blend together well. Place in fridge for 10 mins to cool down.
- Once the fudge is cooled down, roll into balls as you insert the almond in the middle and roll to cover it.
- Roll the almond fudge in the dark chocolate fudge (or thick chocolate icecream topping) and then roll in the crushed almonds. Chill for 10 minutes and Serve!

- Line a 9-in. square pan with foil and greased the foil with butter; set aside. In a heavy saucepan, dissolve coffee in milk over medium heat. Reduce heat to low. Stir in chocolate chips until melted. Remove from the heat; stir in extracts. Spread into prepared pan. Refrigerate until firm., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares.

- In a saucepan, melt milk chocolate with heavy cream until smooth. Remove and cool about 15 minutes.
- Pour into a mixing bowl and add almond extract. Beat on low until smooth (about 1-2 minutes). Cover and refrigerate about 2 hours.
- Scoop mixture into small 3/4 inch balls, roll in chopped almonds and freeze on parchment lined cookie sheet for about one hour.
- Using a toothpick, dip each truffle in melted white chocolate. Tap side of bowl to remove excess. Allow to set on cookie sheet for 30 minutes. Drizzle with melted red and green chocolate candy melts. Set 15 minutes and enjoy. Store in airtight container or freeze in ziploc for future use.

- Place pitted dates, vanilla extract, cocoa powder, almonds, sunflower seeds, and salt (if using) into your food processor. Blend/pulse until a moist dough forms, as pictured above. This will take a minute or two of blending. If the dough is too dry and crumbly, add 1-2 more soaked dates or even a teaspoon of pure maple syrup.
- Once dough is formed, scoop out 1 Tablespoon of dough. Roll into a smooth ball and place onto prepared baking sheet. Repeat with remaining dough. Set aside as you melt the chocolate in the next step.
- You can melt the chocolate in a double boiler or the microwave. If using the microwave: place the chocolate in a medium heat-proof bowl. I like to use a liquid measuring cup. Its depth makes it easy for dipping. Melt in 30 second increments in the microwave, stirring after each increment until completely melted and smooth. Let the warm chocolate sit for 5 minutes to slightly cool before dipping.
