2 cups all-purpose flour ((9 oz, 255 grams))
1/2 cup almond flour ((1.69 oz, 48 grams))
3/4 cup granulated sugar ((5.29 oz, 150 grams))
1 tsp baking powder
1/4 tsp kosher salt
12 tbsp unsalted butter (at room temperature (6 oz, 170 grams))
1 large egg
1/4 tsp almond extract
1 lemon (or lime) (zested and juiced)
3 cups pitted cherries
3 tbsp granulated sugar
1 tbsp cornstarch
1/2 cup powdered sugar (sifted (2.65 oz, 75 grams))
1 tbsp almond milk (or just regular milk)
1/4 tsp almond extract

Steps:

  • Pre-heat the oven to 350ºF.
  • Start by mixing the flour, almond flour, sugar, sugar, baking powder, kosher salt, and lemon zest in a bowl.
  • Add the butter and mix with a spatula until the butter is incorporated into the dry ingredients. You can also use your hands to make this easier. There shouldn't be any chunks of butter in the dough, it should be totally incorporated with the dry ingredients.
  • Add the egg, almond extract, and lemon juice.
  • Fold to combine all the ingredients, until a soft dough has formed. It will be sticky, like a cookie dough.
  • In a bowl, mix the pitted cherries, with 3 tbsp of granulated sugar, and 1 tbsp of cornstarch. Set aside.
  • Line the bottom of a 9x9" or 8x8" pan with parchment paper.
  • Spread half of the dough on the bottom of the pan.
  • Pour the cherries over dough and spread evenly.
  • Spread out the other half of the dough on top of cherries. Just drop equal amounts evenly distributed over the cherries. You can use a cookie scoop to do this, as I show on the video.
  • Then use your hands to help spread out the dough and flatten it. If the dough is too sticky you may flour your hands lightly.
  • Bake the bars for about 45 minutes, until the top is golden brown.
  • Let the bars cool down before slicing.

3/4 cup silvered almonds (ground)
1 cup butter (softened)
3/4 cup powdered sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
8 ounces jar maraschino cherries (halved, 1 Tsp juice reserved)
Red Decorating Sugar
2 cups powdered sugar
1 Tablespoon maraschino cherry juice
1 teaspoon almond extract
2-3 Tablespoon milk

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl mix together butter, powdered sugar and vanilla until blended.
  • In a separate bowl combine flour, salt and almonds. Blend dry into butter mixture.
  • To form a cookie take a tablespoon of dough, make a pit in the middle and place a half of a cherry in pit then fold dough over the cherry to form a ball of cookie dough. Place on parchment paper lined baking sheet. Flatten cookie dough slightly.
  • Bake at 375 degrees for 8-9 minutes or until edges are just starting to turn golden brown. Remove from oven and cool.
  • In a small bowl mix together powdered sugar, cherry juice and almond extract for frosting. Add enough milk to make it dipping consistency. Dip tops of cookies in icing, flip over and place on wire rack. Sprinkle with red sugar.

6 tbsps. Crisco® Puritan Canola Oil with Omega-3 DHA
2 tsps. water
1/2 tsp. almond extract
3/4 cup Smucker's® Cherry Sugar Free Preserves or Smucker's® Cherry Preserves
TOPPING:
1/2 cup chopped almonds
1/4 cup brown sugar
2 tbsps. Crisco® Puritan Canola Oil with Omega-3 DHA

Steps:

  • HEAT oven to 350 degrees F. Line bottom and sides of 8 x 8-inch pan with foil, extending foil over edges of pan. Coat lightly with no-stick cooking spray.
  • STIR together flour, brown sugar and salt until mixed. Add oil, water and almond extract. Combine with fork until mixture resembles coarse crumbs. Pat evenly in bottom of prepared pan.
  • BAKE 15 minutes.
  • SPREAD preserves evenly over warm crust. Mix almonds, brown sugar and oil until mixture resembles coarse crumbs. Sprinkle over top of preserves.
  • BAKE 20 minutes. Cool completely. Lift out of pan using foil. Cut into 16 bars. Store in refrigerator.

1 cup confectioners' sugar

Steps:

  • Preheat oven to 375°. Reserve 3 tablespoons cherries for topping. For filling, beat cream cheese, sugar and extract until smooth. Stir in 3/4 cup pecans and remaining cherries., On a lightly floured surface, unroll crescent dough into one long rectangle; press perforations to seal. Fold dough lengthwise in half; roll into an 18x12-in. rectangle. Spread filling over top to within 1 in. of edges. Roll up tightly jelly-roll style, starting with a long side; pinch seam to seal., Transfer to a greased baking sheet, seam side down; shape into a ring, pinching ends to seal. Using kitchen scissors, start at outside edge and cut two-thirds of the way through the ring at 1-in. intervals. Separate sections slightly and twist to show filling., Bake until golden brown, 20-30 minutes. (Cover loosely with foil if it browns too quickly.) , Using two large spatulas, remove from pan to a wire rack. Mix confectioners' sugar, milk and extract; spoon over warm coffeecake. When Beatrice Ojakangas published *The Great Scandinavian Baking Book* in 1988, she won a lot of fans-including Julia Child-who asked Ojakangas to be on her television show. There Ojakangas demonstrated how to make this simplified version of traditional cardamom-scented Danish pastry.

Number Of Ingredients 26

Quick Method Danish Pastry:
3 1/2 to 4 cups all-purpose flour
1 1/2 cups (3 sticks) chilled unsalted butter
2 packages active dry yeast
1/2 cup warm water
1/2 cup heavy cream or undiluted evaporated milk
1/2 teaspoon freshly crushed cardamom seed (optional)
1/2 teaspoon salt
2 eggs, room temperature
1/4 cup sugar
Butter Cream Filling:
1/4 cup (1/2 stick) soft butter
1 cup powdered sugar
1/4 teaspoon almond extract
1 cup finely pulverized almonds
1 (3-ounce) package almond paste
1 egg white
Glaze:
1 slightly beaten egg
2 tablespoons milk or water
Pearl sugar or crushed sugar cubes, for topping
Chopped or sliced almonds for topping
Icing:
1 cup powdered sugar
2 to 3 teaspoons warm water
1/2 teaspoon almond extract

Steps:

  • Quick Method Danish Pastry:
  • Measure 3 1/2 cups flour into a bowl or work bowl of food processor with steel blade in place. Cut the butter into 1/4-inch slices and add to the flour. Process or cut the butter into the flour until the butter is about the size of kidney beans.
  • In a large bowl, dissolve the yeast in the warm water. Let stand 5 minutes. Stir in the cream or milk, cardamom, salt, eggs, and sugar.
  • Turn the flour-butter mixture into the liquid ingredients, and with a rubber spatula mix carefully just until the dry ingredients are moistened. Cover and refrigerate 4 hours, overnight, or up to 4 days.
  • Turn the dough out onto a lightly floured board; dust with flour. Pound and flatten to make a 16- to 20-inch rectangle. Fold into thirds, making 3 layers. Turn dough around and roll out again. Fold from the short sides into thirds. This should result in a perfect square. Repeat folding and rolling again if you wish.
  • Wrap and chill the dough 30 minutes or as long as overnight.
  • To make the Danish Pastry Braid:
  • Cover two baking sheets with parchment paper or lightly grease and flour them.
  • Divide the chilled dough into 2 parts. Roll each part out to make a rectangle 12 by 6 inches. Place these strips on the prepared baking sheets.
  • To make the filling, cream the butter and sugar until light. Blend in the almond extract, almonds, almond paste, and egg white.
  • Spread filling down the length of the center of the strips. Cut slanting strips at 3/4-inch intervals along both sides up toward the center using a pastry wheel. Fold strips over the filling in a crisscross manner
  • Preheat the oven to 400ºF.
  • Let strips rise for 15 to 30 minutes, just until the pastry strips look puffy; they will not double.
  • To make a glaze, beat the egg with the milk or water. Brush the pastry lightly with it. Sprinkle the sugar and/or sliced almonds over the top.
  • Bake about 15 minutes or until golden.
  • Frost, if desired, with almond-water icing. Blend the sugar, water, and almond extract until smooth and thin enough to drizzle over the braids.

ALMOND-CREAM PUFF RING

Although individual cream puffs are an awesome dessert, they require a lot of preparation time...and time is one thing I often don't have enough of! That's why I rely on this recipe.

1 cup water
1/2 cup butter
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
FILLING:
1-1/4 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1/2 teaspoon almond extract
1 cup heavy whipping cream, whipped
GLAZE:
1/2 cup semisweet chocolate chips
1 tablespoon butter
1-1/2 teaspoons light corn syrup
1-1/2 teaspoons milk

Steps:

  • Cover a baking sheet with foil; grease the foil. Trace a 12-in. circle onto foil; set aside. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add egg, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny., Drop batter by rounded tablespoonfuls along the inside of the circle (mounds should be slightly touching). Bake at 400° for 40-45 minutes or until golden brown. Lift foil and transfer to a wire rack. Immediately cut a slit in the side of each puff to allow steam to escape; cool. Carefully cut ring in half horizontally and set top aside; remove soft dough from inside with a fork. Transfer to a serving plate., In a bowl, whisk the milk, pudding mix and extract for 2 minutes. Chill for 5 minutes or until thickened. Fold in whipped cream. Spread over bottom of ring; replace top. In a microwave, melt chocolate chips and butter; stir until smooth. Stir in corn syrup and milk. Drizzle over ring. Refrigerate until serving.

2 cups flour
1/2 cup icing sugar, sifted
1 cup unsalted butter, cold and cut into cubes
1/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs, beaten
1 1/2 cups brown sugar, packed
1 cup almonds, finely chopped
3/4 cup maraschino cherry, drained and chopped
1/4 cup maraschino cherry juice or 1/4 cup milk
3 tablespoons unsalted butter, at room temperature
1/2 teaspoon almond extract
2 cups icing sugar, sifted

Steps:

  • Preheat oven 350 degrees.
  • Spray 9x13 inch baking dish with oil.
  • In a bowl, using a fork, stir flour with 1/2 cup icing sugar; using a pastry blender or 2 knives, cut in the 1 cup of butter until coarse crumbs form.
  • OR.
  • Whirl flour with icing sugar in food processor until mixed. Add butter, pulse until coarse crumbs form.
  • Press mixture over bottom of baking dish.
  • Bake in centre of oven until light golden around the edges, 25 - 30 minutes. Remove from oven, set aside.
  • Meanwhile, in a bowl, stir flour, baking powder and salt.
  • In a separate bowl, put beaten eggs then stir in brown sugar.
  • Gradually stir in flour mixture, then add almonds and cherries.
  • Spread over warm base.
  • Bake in centre of oven until filling is set, 25 - 30 minutes.
  • To prepare topping - in a small bowl, using an electric beater, beat cherry juice with 3 tblsp butter and almond extract.
  • Gradually beat in 2 cups icing sugar until fluffy.
  • Cover and set aside. Cool bars, then spread icing evenly over top.
  • Refrigerate at least 2 hours before cutting into bars.
  • Store in an airtight container, refrigerate up to 1 week or freeze up to 1 month.
  • Note: if you use the cherry juice for the frosting it will be a nice pink colour!
