CHEF JOHN'S ITALIAN MEATBALLS

Chef John's Italian Meatballs image

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

Yield 30

Number Of Ingredients 14

⅓ cup plain bread crumbs
½ cup milk
2 tablespoons olive oil
1 onion, diced
1 pound ground beef
1 pound ground pork
2 eggs
¼ bunch fresh parsley, chopped
3 cloves garlic, crushed
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes

2 tablespoons grated Parmesan cheese

Steps:

  • Cover a baking sheet with foil and spray lightly with cooking spray.
  • Soak bread crumbs in milk in a small bowl for 20 minutes.

THE BEST MEATBALLS

The Best Meatballs image

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Categories     World Cuisine Recipes     European     Italian

Time 50m

Yield 8

Number Of Ingredients 11

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

MEATBALLS WITH ANY MEAT

Meatballs With Any Meat image

Making great meatballs is all about memorizing a basic ratio that you can adjust to suit your taste. Start with a pound of ground meat - any kind will work, even fish if you want to take it in that direction. Add 1/2 cup bread crumbs for lightness, a teaspoon of salt, and an egg to bind it together. That's all you need. Pepper and other spices, chopped herbs and minced allium (garlic, onion, scallions or shallot) can be added to taste. Then broil or fry as you like.

  • PREHEAT OVEN to 500F. Line 2 pans (with 1 inch sides) with tin foil and spray with oil. I use one large and one smaller pan to fit side by side in my oven, but use whatever you have.
  • PREPARE INGREDIENTS: Onion and parsley can be chopped with knife. Bread can be torn into small pieces by hand. Alternatively, use processor to first finely dice onion, then coarsely process bread, then finely mince parsley.
  • SAUTE ONIONS AND GARLIC: Heat oil on medium high. Add onions and saute for 5-7 minutes until soft and translucent (not brown). Add garlic and saute another minute. Allow to cool while you continue.
  • MAKE MEAT MIXTURE: In large bowl, add seasonings/bindings for meat (bread, milk, parsley, eggs, salt and Parmesan). Mix to combine well. Mixture will be mushy. Add ground meats, onion and garlic. Using clean hands, mix all ingredients together GENTLY. Don't overwork the meat. (I spread fingers on one hand, form a cup and use a twisting motion to mix). Wet hands (to avoid sticking) and lightly form balls about 1 1/2-2 inches diameter (or any size you like). I make about 60 balls. Lay on prepared pans 1/2 inch apart.

  • In a mixing bowl, you’ll start with 2 pounds of ground beef. I generally use a lean cut, but not too lean. You do want some fat in there, because meatballs are not going to be fried, they will be baked. You can also use half beef and half ground pork if you like. I’ve also used beef & turkey on occasion. Most often though, I just go with all beef. Place the meat in the bowl and break it up with your fingers. Set it aside for now.
  • In a small dish, combine the Worcestershire sauce with the garlic paste. Whisk them together and then pour the mixture all over the meat. Set this aside for a moment.
  • Tear 2 or 3 slices of fresh bread into pieces. Toss them in your food processor and pulse until they are fine crumbs. You’ll need 1 1/4 cup of crumbs.
