CHICKEN ALFREDO SANDWICHES

1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon canola oil
1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1/4 cup butter, melted
2 tablespoons minced fresh parsley
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
4 Italian rolls (6 inches), split
1 cup fresh baby spinach
1/2 cup Alfredo sauce, warmed

Steps:

  • Combine the Italian seasoning, salt and pepper; sprinkle over chicken. In a large skillet, cook chicken in oil over medium heat for 8-10 minutes on each side or a thermometer reads 170°, topping with red pepper strips during the last 3 minutes. , Meanwhile, in a small bowl, combine the butter, parsley, onion powder and garlic powder; brush over cut sides of rolls. Place cut side up on an ungreased baking sheet. Broil 4 in. from the heat for 2-3 minutes or until lightly browned. , On each roll bottom, layer 1/4 cup spinach, 1 tablespoon Alfredo sauce, a chicken breast half and another tablespoon of Alfredo sauce. Replace roll tops.

¼ cup butter
1 cup heavy cream
1 clove garlic, crushed
1 ½ cups freshly grated Parmesan cheese
¼ cup chopped fresh parsley

Steps:

  • Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

Fill a hoagie bun with tender baked meatballs, creamy Alfredo sauce and slices of provolone cheese and bake until toasted.

1 egg, lightly beaten
½ cup fine dry bread crumbs
½ teaspoon garlic salt
¼ teaspoon black pepper
1 pound lean ground beef
6 each hoagie buns
1 (15 ounce) jar Classico® Light Creamy Alfredo pasta sauce
6 slices provolone cheese

Steps:

  • Preheat oven to 350 degrees F. In a large bowl combine egg, bread crumbs, garlic salt, and pepper. Add ground beef; mix well. Shape mixture into twenty-four 1 1/4-inch meatballs. Arrange in a 9 x 13-inch baking pan. Bake, uncovered, for 15 minutes.
  • Split hoagie buns nearly all the way through but leave a long side attached. Spread 2 tablespoons of Classico® Light Creamy Alfredo pasta sauce over the bottom of each bun. Fill buns with meatballs and cheese.
  • Place sandwiches on a large baking sheet. Bake, uncovered, for 6 to 8 minutes or until buns are toasted and cheese is melted. Meanwhile, heat the remaining Classico® Light Creamy Alfredo pasta sauce and serve with sandwiches for dipping.

1 lb ground beef
3 green onions, sliced
1 (10 ounce) container refrigerated alfredo sauce
3 Italian plum tomatoes, quartered and sliced
2 tablespoons fresh basil, chopped

Steps:

  • Cook penne to desired doneness, drain and cover to keep warm.
  • Meanwhile, brown ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.
  • Drain.
  • Stir in onions and sauce.
  • Reduce heat to medium; cook and stir 3 to 5 minutes or until bubbly.
  • Add cooked penne, tomatoes and basil;cook 3 to 5 minutes or until thoroughly heated, stirring occasionally.
  • If desired, add salt and freshly ground pepper to taste.
