PEACH-BLUEBERRY CRISP



Peach-Blueberry Crisp image

This crisp is summer in a casserole dish! The combination of juicy peaches and sweet-tart blueberries is divine-so much so that you won't even notice that our version is lower in sugar. Although frozen fruit will suffice in a pinch, we recommend you use the freshest varieties you can find, even if that means substituting another berry and stone fruit.

Number Of Ingredients 11

2 pounds fresh peaches, peeled and cut into 3/4-in. chunks (about 6 cups)
2 cups fresh blueberries (about 10 1/2 oz.)
2 tablespoons cornstarch
2 teaspoons lemon zest plus 2 Tbsp. fresh juice (from 1 lemon)
1/2 cup granulated sugar, divided
3/4 cup (about 2 5/8 oz.) whole-wheat pastry flour
1/4 cup packed light brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/3 cup (5 1/3 oz.) cold unsalted butter, diced
1/2 cup old-fashioned regular rolled oats

Steps:

  • Preheat oven to 350°F. Gently stir together peaches, blueberries, cornstarch, lemon zest, lemon juice, and 1/4 cup of the granulated sugar in a large bowl. Spoon mixture into an 11- x 7-inch (2-quart) baking dish.
  • Whisk together flour, brown sugar, salt, cinnamon, and remaining 1/4 cup granulated sugar until mixture is completely smooth (no clumps). Add butter, and toss to coat. Using fingers, rub butter into flour until a pebble consistency is reached and flour is fully moistened. Stir in oats. Crumble topping evenly over peach mixture.
  • Bake in preheated oven until top is golden and fruit is bubbling, about 45 minutes. Serve warm.

2 (10 ounce) packages frozen sliced peaches(such as Cascadian Farm®), thawed and drained
1 (10 ounce) package frozen blueberries(such as Cascadian Farm®), thawed and drained
2 teaspoons lemon juice
2 tablespoons all-purpose flour
2 tablespoons white sugar
½ cup old-fashioned oats
⅓ cup firmly packed brown sugar
¼ cup all-purpose flour
¼ cup chopped almonds
½ teaspoon ground cinnamon
⅛ teaspoon nutmeg
¼ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Gently stir peaches, blueberries, and lemon juice together in an 8-inch square baking dish. Stir 2 tablespoons flour and white sugar into the fruit mixture.
  • Stir oats, brown sugar, 1/4 cup flour, almonds, cinnamon, and nutmeg together in a small bowl. Mash butter into the oats mixture with a pastry cutter or a fork until the mixture is crumbly; sprinkle over the fruit to cover.
  • Bake in preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes.

5 cups wild maine blueberries
1/4 cup sugar
1/2 teaspoon grated lemon rind
1 cup diced peeled apple
1/2 cup light brown sugar
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 cup white flour
1/2 cup chopped pecans (optional)
1/2 cup rolled oats
3 tablespoons butter

Steps:

  • Preheat oven to 325 degrees.
  • Filling: In a small bowl, combine the Wild Blueberries, sugar, lemon rind, and apples.
  • Mix well and place in a well buttered 8 x 8 x 2 inch pan.
  • Crisp: In a medium bowl, combine brown sugar, cinnamon, nutmeg, flour, pecans, oats, salt, and rub in the butter with your fingers until it resembles coarse crumbs.
  • Spread evenly over the Wild Blueberry filling.
  • Bake 45 minutes or until the crust is brown.

2 fresh ripe peaches, sliced
1 tablespoon cornstarch
1 tablespoon lemon juice

1/2 cup uncooked oatmeal
1/2 cup firmly packed brown sugar
1 cup flour
2/3 cup butter or 2/3 cup margarine

Steps:

  • Preheat oven to 375 degrees.
  • Grease an 8x8 or 9x9 pan.
  • In a bowl, toss together blueberries, peaches, sugar, cornstarch, lemon juice and salt; distribute evenly over bottom of pan.
  • Set aside.
  • In a medium bowl, mix dry topping ingredients together.
  • Cut in butter until crumbly.
  • Sprinkle topping mix over fruit.
  • Bake until topping is lightly browned and fruit mixture is bubbly; about 30 minutes.

10 -12 ripe peaches (Use a large can of well-drained peaches if you don't have access to fresh ones)
1 cup blueberries
1/4 cup flour
3 tablespoons sugar
1 tablespoon fresh lemon juice
1 cup flour
2/3 cup brown sugar
1/2 cup rolled oats
1 pinch cinnamon
1 pinch ground ginger
1/2 cup butter or 1/2 cup margarine, melted

Steps:

  • In bowl, mix peaches, blueberries, flour, sugar and lemon juice.
  • Spoon into buttered 9x13 baking pan.
  • Combine topping ingredients.
  • Mix well.
  • Sprinkle over fruit.

10 ounces blueberries, fresh or frozen
1 lb peach slices, fresh or frozen
1/4 cup apple juice
1/2 cup almonds
1/2 cup rolled oats
1 cup pitted dates
2 tablespoons apple juice
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350. Place blueberries in the bottom of a square 8 inch baking pan. If you are using frozen, make sure they are completely thawed and drained of excess water. Place peach slices on top of blueberries. If they are frozen make sure they are also thawed and drained of excess water. Drizzle ¼ cup apple juice over fruit.
  • Remove pits from dates and place in the bowl of a food processor along with oats, almonds and cinnamon. After running for a minute and dates are blended with oats and almonds, add apple juice, and mix well.
  • Place mixture evenly over peaches and blueberries, and bake uncovered for about 45 minutes. Serve warm or cool.
  • Healthy Cooking Tips:.
  • Make sure the topping is well ground, and mixed while still ending with a coarse texture. It will have a tendency to be in clumps after processing it. When you place it over the fruit mixture crumple it with your hands into an even layer. Otherwise it will be in big clumps and will not look or taste as good.

5 cups blueberries (frozen or thawed)
1 lb frozen peaches, roughly chopped
4 tablespoons sugar or 4 tablespoons Splenda granular, sugar substitute
3 tablespoons flour
1 cup rolled oatmeal
1 cup brown sugar, packed
1/2 cup flour
1/2 teaspoon ground cinnamon
1/2 cup margarine or 1/2 cup butter
1/2 cup pecans, chopped or 1/2 cup low-fat granola

Steps:

  • Preheat oven to 375 deg.
  • Wash blueberries right before using and drain. Combine blueberries with chopped peaches. Toss with sugar or Splenda and flour. Place in the bottom of 9x13 or large casserole dish.
  • In a separate bowl, combine oats, brown sugar, flour and cinnamon. Cut in butter using pastry blender or two forks until mixture resembles peas. Gently mix in pecans or granola.
