MINI PIZZAS RECIPE

Mini pizzas make for a fun and easy pizza night. Make a big batch for freezing and cold-pizza breakfast, too.

Number Of Ingredients 11

1 1/2 cup warm water
1 tbsp active, dry yeast
2 tbsp sugar
1/4 cup olive oil
4 1/2 cup bread flour
1 tbsp salt
1/2 tsp dried basil
1/2 tsp dried oregano
1 cup Pizza Sauce
16 oz mozzarella cheese (shredded) (Monterey Jack, cheddar, crumbled feta or goat, any combination (4 cups))
6 oz pepperoni (sliced) ( or other pizza toppings)

Steps:

  • Place the warm water in a large mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
  • Add the oil, flour, salt, and herbs. Stir with a wooden spoon until a shaggy dough forms.
  • Transfer the dough to a lightly floured surface and knead for about five minutes until a smooth dough ball is formed.
  • Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
  • Combine the dough ingredients in the bread machine pan, according to the order recommended by the manufacturer.
  • Set on dough and start the machine, checking after ten minutes to make sure all the ingredients have been incorporated and not stuck to the side of the pan. Scrape down any stray ingredients to insure they are mixed in.
  • Place the warm water in the mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
  • Add the oil, flour, salt, and herbs. Attach the dough hook and run the machine until all the ingredients are incorporated, stopping the machine to scrape the sides as necessary. Knead with the dough hook until a smooth dough ball is formed.
  • Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
  • Preheat the oven to 500 °. Spray baking sheets with nonstick cooking spray and sprinkle with corn meal to prevent sticking or line the pans with parchment paper for easier cleanup.
  • Divide the dough into 16 portions. Flatten each portion into a thin round and place on the cooking sheet.
  • Spread sauce and sprinkle toppings as desired.
  • Bake for 8 to 10 minutes or until the crust is crisp and the cheese melted and lightly browned.
  • Wrap cooled pizzas in foil or plastic wrap and stash in a larger ziptop freezer bag. Thaw and reheat in a 350 oven for about 5 minutes.
  • Assemble the pizzas as directed, but instead of baking, place the trays in the freezer. Once the pizzas are frozen solid (this will take several hours), stack them between layers of patty papers or waxed paper and store in a freezer bag or box in the freezer. To serve: bake from frozen at 450 degrees, for 10 to 12 minutes.

1 can (15 ounces) black beans, rinsed and drained
1 medium red onion, chopped
1 small sweet yellow pepper, chopped
3 teaspoons chili powder
3/4 teaspoon ground cumin
3 medium tomatoes, chopped
1 jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
1 prebaked 12-inch thin pizza crust
2 cups chopped fresh spinach
2 tablespoons minced fresh cilantro
Hot pepper sauce to taste
1/2 cup shredded reduced-fat cheddar cheese
1/2 cup shredded pepper jack cheese

Steps:

  • In a small bowl, mash black beans. Stir in the onion, yellow pepper, chili powder and cumin. In another bowl, combine the tomatoes, jalapeno and garlic. , Place crust on an ungreased 12-in. pizza pan; spread with bean mixture. Top with tomato mixture and spinach. Sprinkle with cilantro, pepper sauce and cheeses. , Bake at 400° for 12-15 minutes or until cheese is melted.

2 corn meal pizza crust pre-baked
1 (12-ounce) package bacon
2 (14 1/2-ounce) cans stewed tomatoes
2 tablespoons tomato paste
16 ounces mozzarella cheese shredded (about 4 cups)
2 red bell peppers small, cut in thin strips
4 ounces sharp cheddar cheese shredded (about 1 cup)
green onion Sliced

Steps:

  • In a large skillet over medium-high heat, fry bacon until crisp. Drain on paper towels set aside.Drain stewed tomatoes, reserving juice. Coarsely chop tomatoes and place tomatoes in a medium bowl. Add 1/2 cup of the reserved tomato juice and tomato paste. Stir until combined.Divide tomato sauce and other ingredients in half. For each pizza, cover crust with 1 cup of the mozzarella cheese. Spoon tomato sauce over mozzarella cheese on crust.Bake one pizza on a hot baking sheet in a 400° oven for 5 minutes. Sprinkle with 1 cup mozzarella cheese. Top with bacon, then red pepper and sprinkle with Cheddar cheese. Bake 5 minutes longer or until cheese melts and is bubbly. Sprinkle with green onions. Bake second pizza.Cornmeal Pizza Crust: Make Basic Pizza Crust as directed but inStep 1, add 1 tablespoon sugar. In Step 3, use only 1 cup all-purpose flour and stir in with 1/2 cup yellow cornmeal.

8 apples medium golden delicious thinly sliced (about 12 cups)
1 cup brown sugar packed
2 teaspoons apple pie spice
1 pound pork sausage
16 ounces sharp cheddar cheese shredded (about 4 cups)

Steps:

  • In a Dutch oven over medium heat, melt butter or margarine. Add apples and cover. Cook for 6 minutes. Uncover cook and stir for 8 minutes or until apples are almost tender. Stir in brown sugar and apple pie spice. Cook and stir for 2 minutes or until apples are tender and glazed.Meanwhile, in a large skillet, cook sausages drain on paper towels.Divide ingredients in half. For each pizza, cover crust with 1 1/2 cups of the cheese. Spread with apples.Bake one pizza on a hot baking sheet in a 400° oven for 5 minutes. Arrange sausages on top. Sprinkle with 1/2 cup of the cheese. Bake 5 minutes longer or until cheese melts. Bake second pizza on hot baking sheet.*To make your own apple pie spice, mix 3 tablespoons ground cinnamon, 1 tablespoon ground nutmeg and 1 tablespoon ground allspice. Makes about 1/3 cup.Note: If you prefer, 2 cans (20 oz. each) apple pie filling may be used in place of making the apple topping. Stir 1/2 teaspoon apple pie spice into each can of filling before spreading on pizzas.

When Mom baked this old-fashioned sugar pie, family members would clamor for second servings. We love the combination of cinnamon, coconut, nuts and raisins. She'd sometimes toss in a few chocolate chips for variety. Thanksgiving and Christmas dinner were not complete without this dessert.

Pastry for two single-crust pies (9 inches)
1-1/2 cups raisins
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
6 eggs
2 teaspoons vanilla extract
2 to 4 teaspoons ground cinnamon
1 cup chopped nuts
1 cup sweetened shredded coconut
Whipped topping and additional chopped nuts, optional

Steps:

  • Line two 9-in. pie plates with pastry. Trim pastry to 1/2 in. beyond edge of plates; flute edges. Line crusts with a double thickness of heavy-duty foil. Bake at 450° for 10 minutes. Place on wire racks to cool; discard foil. , Place raisins in a saucepan and cover with water; bring to a boil. Remove from heat; set aside. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs, vanilla and cinnamon until blended., Drain raisins. Stir the raisins, nuts and coconut into creamed mixture (mixture will appear curdled). Pour into the crusts. Bake at 350° for 30-35 minutes or until set. Cool on wire racks. Garnish with whipped topping and nuts if desired.

1/2 cup celery thinly sliced

1 clove garlic minced
2 (16-ounce) cans tomatoes peeled, drained and coarsely chopped
1 (8-ounce) can tomato sauce
1 bay leaf
1 teaspoon paprika
1/2 teaspoon thyme dried, crushed
1/2 teaspoon salt
1/4 teaspoon cayenne pepper or to taste
18 ounces mozzarella cheese shredded (about 4 1/2 cups)
12 ounces shrimp cooked medium, thawed if frozen and drained
2 (6-ounce) jars marinated artichoke hearts drained and coarsely chopped
20 mushrooms medium, sliced

Steps:

  • In a medium saucepan over medium-high heat, heat oil until hot. Saute green pepper, celery, onion and garlic for 4 to 6 minutes or until vegetables are almost tender. Stir in tomatoes, tomato sauce, bay leaf, paprika, thyme, salt and cayenne pepper. Reduce heat to low and simmer, uncovered, for 10 to 12 minutes or until vegetables are tender and sauce is thickened.Divide sauce and other ingredients in half. For each pizza, cover crust with 1 cup of the mozzarella cheese. Spread with sauce. Top with shrimp, then artichokes and mushrooms. Sprinkle with 1 1/4 cups of the mozzarella cheese.Bake one pizza on a hot baking sheet in a 400° oven for 15 minutes or until cheese melts and is bubbly. Bake second pizza on hot baking sheet.
