BEST DAMN AIR FRYER PORK TENDERLOIN

Steps:
- Mix all dry ingredients in a bowl.
- Trim the pork tenderloin of any excess fat/silver skin. Coat with a 1/2 tablespoon olive oil. Rub spice mixture on entire pork tenderloin.
- Preheat air fryer to 400° F for 5 minutes. After 5 minutes, carefully place pork tenderloin into air fryer and air fry at 400° F for 20-22 minutes. Internal temp should be 145° - 160° F.
- When air fryer cycle is complete, carefully remove pork tenderloin to a cutting board and let rest for 5 minutes before slicing. Save any juices to serve over sliced meat.
AIR FRYER PORK TENDERLOIN WITH CARROTS, POTATOES AND ONION GRAVY
This satisfying and hearty meal is perfect for weekend uppers with the family. The gravy and cooked veggies makes this meal another family favorite! This is for a pork tenderloin, not a pork loin. Tenderloins are thinner and cook quicker. If using pork loin instead of pork tenderloin, it is thicker than a pork tenderloin and will take longer to cook. Cut several 1/2" slits through the pork loin fatty side to help it cook through evenly.

- In large bowl combine oil, Worcestershire sauce, garlic powder, dried herbs, salt and pepper. Whisk ingredients together. Add tenderloin, potatoes and carrots. Stir to coat everything with marinade.
- Lay loin, potatoes and carrots in air fryer basket.
- Air Fry at 370°F/190°C for 30-35 minutes, flipping pork halfway through, and stir the vegetables. Cook to your preferred doneness or until center temperature reaches 145-160°F (63-71°C).
- WHILE PORK IS COOKING, MAKE THE GRAVY: Heat large skillet on medium heat. Melt the butter and add onions. Cook onions until golden and caramelized, about 5 minutes. Stir onions often so they don't burn.
- Whisk together flour and broth until well combined. Add Worcestershire sauce and salt and pepper to taste.
- Reduce heat to Low, stirring often, and simmer until thickened, about 5 minutes depending on your preferred thickness. When pork and vegetables are finished cooking, transfer to a platter and cover. Let rest for 5 minutes. Serve warm with gravy on top.

Steps:
- Stir brown sugar, paprika, ground mustard, salt, black pepper, garlic powder, and cayenne pepper together in a small bowl until evenly combined.
- Brush olive oil on pork tenderloin until coated. Rub spice mixture on all sides of tenderloin and let sit for 5 minutes.
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Carefully place tenderloin in the air fryer basket and cook, undisturbed, in the preheated air fryer for 20 minutes.
- Meanwhile, place broccoli in a microwave-safe bowl. Microwave on high until tender, about 3 minutes. Stir in olive oil and season with salt and pepper.
- Transfer tenderloin to a cutting board and let rest for 10 minutes before slicing.
- While tenderloin is resting, place broccoli in the air fryer basket. Cook for 10 minutes, shaking the basket halfway through.

- In a small mixing bowl, combine all of the spices, salt, pepper, and oil to create a rub.
- Place the pork tenderloin on a cutting board and coat all over with the rub.
- Place in the air fryer basket and cook at 400°F for 20 minutes. Ensure the internal temperature reaches 145-160°F with a meat thermometer.
- Once done, remove the pork tenderloin from the air fryer, let it rest for 5 minutes before slicing it.

- In a large mixing bowl whisk together the paprika, salt & pepper, garlic powder, onion, powder, oregano, mustard powder, cumin and sage. Set aside.
- Place Pork tenderloin on a cutting board and with a sharp knife remove the silverskin from the pork. Discard the silverskin.
- With a dry paper towel pat all the surface of the pork removing as much moisture as possible. Throw away the damp paper towels.
- You will use 2 tablespoons of pork rub per each pound of pork tenderloin. Pictured is a 1 pound tenderloin.
- Remove 2 tablespoons of the pork rub from the mixing bowl.
- Place pork in the mixing bowl with the remaining pork rub and coat the tenderloin with the rub. Gently pat the rub on the pork.
- Shake off any excess pork rub and place in the air fryer basket.
- Turn the air fryer to 375°F degrees and set the timer to 17 minutes or according to the manufactures recommendation. Turn the pork half way though the cooking time. Cook until the internal meat thermometer reaches 140°F degrees.
- Let the pork tenderloin rest for 3 minutes before cutting into it. The meat will continue to cook and according to the National Pork Board, pork tenderloin should reach 145°F degrees.

- Preheat air fryer to 375°. Cut tenderloin crosswise into 8 slices. Place bread crumbs in a shallow bowl. Dip pork slices in crumbs, patting to help coating adhere. In batches, place pork on greased tray in air-fryer basket; spritz with cooking spray. Cook until a thermometer reads 145°, 4-5 minutes per side.
