This recipe comes from Nestle Kitchens Pie Recipe Contest finalist, Lisa Speer. This is a creamy and tart lime flavored pie.

CRUST:
1 1/2 clove graham cracker crumbs
1/3 c unsalted butter,melted
3 Tbsp granulated sugar
FILLING:
3/4 c white candy chips
14 oz sweetened condensed milk, not evaporated milk
8 oz mascarpone cheese, at room temperature
1/2 c plus 2 tablespoons fresh key lime juice
1 tsp grated lime zest
thawed whipped topping
toasted flaked coconut and lime slices for garnish

Steps:

  • 1. Crust: Preheat oven to 350^. Combine graham cracker crumbs, butter and sugar in a large bowl; stir until well mixed. Press into a 9-inch glass plate to form a crust. Bake 10 minutes; transfer to a wire rack and cool completely.(you may use a store bought pie shell if desired.) --- Filling: Place chips in a small microwave-safe bowl. Microwave at medium power for 30 second intervals until melted, stirring after each interval. Stir until smooth. Combine chips and sweetened condensed milk. mascarpone, lime juice and lime zest; whisk or beat with an electric mixer until smooth. Pour into cooled crust; smooth top. Chill at least 4 hours; or place in freezer for 15 minutes just before serving. Slice pie into 8 wedges. Serve with dollops or whipped topping. Garnish with toasted coconut and lime slices.

1 teaspoon(s) grated lime rind
1/3 cup(s) fresh key lime or lime juice
1 - (9") ready-made graham cracker crust or your favorite prepared recipe
- garnish: lime slices

Steps:

  • Combine cream and white chocolate morsels in a medium saucepan over low heat. Cook 5 minutes or until morsels melt, stirring constantly. Remove from heat. Add sour cream, lime rind, and juice; stir well. Pour into crust. Cover and chill at least 8 hours. Garnish, if desired.

1/4 cup sugar
1/3 cup butter, melted
pie filling
1 cup whipping cream
11 ounces white chocolate chips
1 tablespoon sour cream
1 teaspoon lime zest
1/3 cup lime juice
lime slices and chopped white chocolate

Steps:

  • Mix ingredients together in a 9-inch pie plate until evenly combined.
  • Press evenly onto the bottom and up the sides of the pie plate.
  • Refrigerate for 30 minutes before filling.
  • Melt together cream and chocolate chips in a small saucepan set over low heat.
  • Remove from heat, stir in sour cream, lime zest and juice.
  • Pour into prepared pie crust.
  • Cover with plastic wrap and refrigerate for 8 hours, or overnight.
