BEST DAMN AIR FRYER CHICKEN WINGS

- Mix all dry ingredients. Set aside.
- Add chicken wings to a large bowl or zip-top bag and toss with vegetable oil. Add seasoning mix and toss to coat all the chicken well.
- Preheat air fryer for 5 minutes at 390°(F).
- Add chicken wings to tray or basket of air fryer. Air fry at 390°(F) for 20-24 minutes. Shake basket/turn wings 2-3 times during cooking for even crisping.
- When done, remove wings to a large bowl and toss with and drippings from bottom of air fryer basket or drip tray.

- Preheat an air fryer to 390 degrees F (200 degrees C) according to manufacturer's instructions. Spray the basket with cooking spray.
- Rinse chicken wings and pat dry. Mix black pepper, paprika, cumin, garlic powder, onion powder, herbes de Provence, and kosher salt together in a bowl. Sprinkle on both sides of the wings.
- Place wings in the fryer basket, making sure they do not touch. Fry until browned and no longer pink in the centers, about 9 minutes per side.

Steps:
- Separate each chicken wing in two at the joint, removing the wing tips if you like using sharp kitchen scissors. Toss the chicken wings in the oil and seasoning, then tip into an air fryer (you can either use one with a paddle, or arrange them on the tray of your air fryer if it doesn't have a paddle).
- Program the air fryer to cook for 35 mins. Check the wings are tender and cooked through - they should be almost falling off the bone - and cook for a further 5 mins if needed. The skin should have bubbled and crisped up, and any excess fat from the chicken will have dripped off into base of the fryer (discard this). Don't leave the chicken in the fryer, or the steam will make the skin soft again. Immediately tip into a bowl and serve with sauce for dipping.

- For oil-free version, place in even layer in air fryer basket/tray. Follow air fry instructions below. For Extra Crispy Crust, follow optional steps for corn starch crust.
- Add seasoning to the wings then lay them in single layer on a plate or cutting board. Sprinkle cornstarch over the wings on both sides. Liberally spray wings evenly with oil spray so that all the cornstarch is coated in oil. There should be no dry white clumps of cornstarch or else they will cook hard and dry.
- Air Fry wings at 400°F/205°C for 30-35 minutes or until cripsy and cooked through. You must flip the wings over after the first 20 minutes of cooking. Or you might need an extra flip to get the wings crispy to your personal preference.
