Easy Air Fryer Beef Taquitos image

Easy and healthy air fryer beef taquitos in under 30 minutes. These taco-seasoned ground beef with cheese rolled in a corn and flour blend tortilla are so tasty and crunchy. Make a few for a great snack, or a bunch for a dish the family will enjoy!

1 pound ground beef (80/20 preferred)
14 medium sized corn and flour blend tortilla (or 100% flour tortillas)
1 1/2 cups Mexican blend shredded cheese
1 teaspoon kosher salt
1 teaspoon oregano
1 teaspoon garlic powder
3/4 teaspoon cumin
1/4 teaspoon ground pepper
Oil spray (I use olive oil in my Misto sprayer)

Steps:

  • Preheat air fryer at 350 degrees Fahrenheit for 10 minutes.
  • Add salt, pepper, oregano, garlic powder and cumin seasoning to the ground beef. Mix well.
  • Add beef filling to tortilla, making sure to spread to the edges of the tortilla. Add cheese and roll tightly. Secure the ends with toothpicks.
  • Spray oil on all sides of taquitos.
  • Add the taquitos, toothpick side down, in a single layer in the air fryer basket.
  • Air Fry for about 8 minutes, until taquitos are golden brown and crispy.
  • Take out immediately and serve with dip/salsa of choice.

1 pound ground beef
1 packet taco seasoning
4 ounces chopped green chiles
1 cup shredded pepper jack cheese
15 corn tortillas

Steps:

  • Brown the beef in a large skillet over medium heat. Drain fat.
  • Add the taco seasoning, green chiles, and ¼ cup of water to the beef and simmer for 5 minutes.
  • Add the tortillas to a microwave safe plate and cover with a damp paper towel. Microwave for 30 seconds.
  • Fill each tortilla with about 2 tablespoons of the beef mixture, top with cheese, and roll tightly.
  • Place the taquitos seam side down in an air fryer basket, being sure not to overcrowd the basket.
  • Spray with nonstick spray.
  • Cook at 400 degrees for 6-7 minutes or until taquitos are as crispy as you'd like.
  • Serve with salsa, sour cream, and queso for dipping.

2 large eggs
1/2 cup dry bread crumbs
3 tablespoons taco seasoning
1 pound lean ground beef (90% lean)
10 corn tortillas (6 inches), warmed
Cooking spray
Optional: Salsa and guacamole

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine eggs, bread crumbs and taco seasoning. Add beef; mix lightly but thoroughly. , Spoon 1/4 cup beef mixture down the center of each tortilla. Roll up tightly and secure with toothpicks. In batches, arrange taquitos in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook 6 minutes; turn and cook until meat is cooked through and taquitos are golden brown and crispy, 6-7 minutes longer. Discard toothpicks before serving. If desired, serve with salsa and guacamole.

The next time a craving for those dippable mini Mexi-rolls hits, skip the freezer section and reach for this Air Fryer Taquitos recipe!

2 Tablespoons olive oil for sautéing
1 medium yellow onion (diced)
1 green pepper (diced)
1.5 lbs ground beef
2 teaspoons garlic powder
1 teaspoon paprika powder
salt & pepper to taste
2 eggs
24 soft corn tortillas
2 cups shredded marble or Mexican blend cheese
corn husk strips or kitchen string (cut into ~ 7" long sections)
natural cooking spray

Steps:

  • Heat olive oil in a large frying pan over medium heat, and sauté the onions and peppers, stirring until the onions sweat and turn slightly brown and the green peppers are softened.
  • Add ground beef, stirring and breaking down any large pieces with a wooden sauce spoon. Cook until the beef is browned with no pink remaining.
  • Add garlic powder and paprika and stir to thoroughly coat. Take the pan off the heat, and season with salt and pepper to taste.
  • Transfer the ground beef mixture into a bowl, stirring continuously for a minute to help the mixture cool down.
  • Whisk 2 eggs in a small bowl. Once the ground beef mixture is cool (about 5-10 minutes), add eggs and mix well.
  • On a clean work surface or a plate, lay down one corn husk strip (or kitchen string) sideways (in horizontal position). Place a soft corn tortilla on top of the strip. (See notes below for corn husk prep.)
  • Put 1 tablespoon of shredded cheese on the tortilla, forming a line from top to bottom (vertically). Add 1-1/2 tablespoons of ground beef mixture on top of the cheese.
  • Roll the tortilla. Start by taking the right side and bring it over to the left, covering the cheese and meat mixture. Tuck the edge under the filling mixture, then slowly and as tight as possible, roll the tortilla. Tie the corn husk strip/kitchen string securely around the middle of the roll. Push any filling that might have come out of the ends back into roll and cut off excess length of the strip/string.
  • Repeat the process for the remainder of the tortillas. (*see note for time saving)
  • Spray the base and sides of your air-fryer basket with propellant-free oil cooking spray. Place as many taquitos in the basket and rack as you can without crowding them and spray lightly with cooking spray.
  • Set the heat to 375°F and timer to 6 minutes. Check the taquitos and once the top surface is brown and crispy, flip them over. Fry for another 3-5 minutes, or until the taquitos are browned and crisp on both sides.
  • Repeat the process for the remainder of the taquitos.
  • Serve immediately with toppings of your choice (*see notes).

2 tablespoons adobo sauce from chipotle peppers
1 teaspoon ground cumin
1 teaspoon onion powder
½ (8 ounce) tub vegan cream cheese (such as Toffutti®)
1 tablespoon nutritional yeast
½ teaspoon salt
16 corn tortillas
cooking spray

Steps:

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook for 3 minutes. Add vegetarian beef crumbles, chipotle peppers, adobo sauce, cumin, and onion powder. Cook and stir for 5 minutes.
  • Add cream cheese, nutritional yeast, and salt. Cook until cheese is melted and everything is evenly combined, about 2 minutes. Remove from heat.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Spoon a heaping tablespoon of mixture into the middle of each tortilla and roll up. Working in batches, place a single layer of taquitos in the air fryer basket, seam-side down. Spray the tops with cooking spray. Air fry for 6 minutes. Transfer to a paper towel-lined plate. Repeat with remaining taquitos.
