I love aguas and this one is a little different. The mint makes it refreshing. Note: To make your glasses look festive you can wet the rim of the glass with water, juice or by running a lime or lemon along the rim. Then, dip the glass in decorative sugar of your choice.

- Place pineapple, lime juice, mint and sugar in blender container.
- Blend on High until mixture is frothy, about 30 seconds to 1 minute.
- Pour into a tall pitcher. Add club soda and stir once or twice to mix. Immedieately pour itno 6 sugar-dipped ice-filled glasses. Garnish each serving with a mint sprig.

- Unpeel the fresh tamarind pods.
- Scrape any remaining peel bits under running water,.
- Bring unpeeled tamarind to boil in some of the recipe water.
- Simmer for about 3 min.
- Let cool and with hands get the pits out.
- Process unpitted pulp in blender.
- Sweeten remainding water.
- Mix everything together.
- Sieve for any remaining pulp threads or peel bits.
- Chill and enjoy.

CANTALOUPE AGUA FRESCA
I found this recipe in a Texas Highways cookbook. My family has always made agua fresca de melon, but never with limes.

- Peel, seed, and coarsely chop melon.
- Place 2 cups melon in a blender, add enough water to cover melon, and blend well. Strain, reserving liquid.
- Place liquid in a 2-qt pitcher and discard solids.
- Repeat procedure with remaining cantaloupe.
- Add lime juice and sugar to pitcher and stir well. Serve over ice.
