CLASSIC FRANK AND BEAN CASSEROLE
Here is a simple to make and oh so delicious casserole that's sure to become a family favorite. Serve for a side dish or a main. All mixed together in one casserole dish for easy of preparation.

Steps:
- 1.Preheat oven to 375 degrees. spray a casserole dish (This is the same one my mom gave me all those years ago, it's a classic and comes with a lid) with cooking spray, set aside. 2.Grill or fry the hot dogs in a nonstick pan or grill pan use a tablespoon of butter or olive oil. Cook just until a few minutes just to make them slightly crispy or with grill marks. This step is optional. 3.Let the hot dogs cool just so you can slice them up into about 1 inch pieces.4.Toss the cut hot dogs into the casserole dish along with the two cans beans and the spices. Gently mix in all the ingredients. Try not to break up the beans. 5.Bake on a foil lined cookie sheet for about 20 to 30 minutes or until casserole is bubbling. Take out of the oven and let sit on cooling rack for about 5 minutes. Now, serve up! Enjoy!
CREOLE-STYLE WHITE BEANS AND ANDOUILLE SAUSAGE OVER RICE
Steps:
- Heat the oil in a large heavy saucepan over medium high heat. Add the ham hock, onions, celery, and bell pepper and cook, stirring, until the vegetables are soft, 4 to 5 minutes. Add the bay leaves, thyme, and garlic, and cook, stirring, for 2 minutes. Add the beans and chicken stock and bring to a boil. Reduce the heat so that the beans just simmer and cook, uncovered and stirring occasionally, until the skin on the beans is tender and the beans begin to soften, about 2 hours. Season, to taste, with salt and pepper. Add the sausage and continue to cook, stirring occasionally, until the beans are soft and creamy, about 1 hour longer*. (If desired, the ham hock can be removed at this point and either discarded or, when cool enough to handle, the meat can be removed from the bone and returned to the beans and the bone and skin discarded.) Remove the bay leaves and thyme sprigs and serve the beans and sausage over hot white rice.
- Pass the hot sauce at the table for guests to use at their own discretion.

As the two ingredients cook together, the beans disperse and glom onto the rice. For an extra kick, sauté chopped jalapeño with the onions, or add 1/4 cup salsa with the stock.

- In a large saucepan or Dutch oven with a tight-fitting lid, warm the olive oil over medium heat. Add onion and sauté until translucent, about 3 minutes. Add the stock, cover and bring to a boil.
- Add the salt, rice and beans (including the liquid). Stir just to combine, then cover.
- Turn the heat down as low as it will go, then let simmer, undisturbed, for 18 to 20 minutes. Remove from heat and let sit for 4 minutes, then fluff with a fork.

Usually, franks and beans is made by opening up a couple cans of baked beans, and heating it up with some sliced hotdogs. Not exactly something you'd serve to visiting dignitaries. However, by adding some fresh veggies, plain beans, and high-quality beef hot dogs, we can achieve something much healthier, equally delicious, and every bit as comforting. Serve with buttered toast and Champagne.

- Lightly score hot dog skins from end to end on 4 sides. This helps keep them flat when they cook. Slice into 1/2-inch rounds.
- Melt butter in large pot over medium heat. Add onions, poblano pepper, celery, and cayenne pepper. Season with salt and pepper. Cook and stir until vegetables are soft and onions are translucent, 5 to 7 minutes.
- Stir in hot dog slices and cook until heated through and fat from hot dogs mixes with the butter, about 3 minutes. Add brown sugar, ketchup, mustard, Worcestershire sauce; pour in chicken broth. Stir in beans. Raise heat to bring mixture to a simmer; reduce heat to low and cook until flavors mix, about 30 minutes. While beans are cooking, use a wooden spoon to crush some of them against the side of the pot to help thicken the stew. If mixture gets too thick, add more broth.
- Just before serving, stir in chopped green onions.

I searched RecipeZaar for a recipe like this and i couldnt find one so i made this up. Easy and tasty recipe that the kids will love. Hebrew National Hot dogs are a must! They are the best.

- 1. In a Large Heavy Pot place the beans, tomatoes, brown sugar and cayenne pepper . Bring up to a simmer over medium heat, stirring often.
- 2. In a skillet, heat oilive oil.
- 3. Saute chopped onions over medium heat until soft and brown then put the onions into the pot.
- 4. Cut hot dogs in the 2 inch pieces. Saute hot dog pieces in hotpan until browned on all sides then put into pot.
