BAKED CRANBERRY FRUIT CASSEROLE
This has become a family favorite. So good as a sweet fruity side dish or a yummy fruit dessert with ice cream.

- 1. Place cranberries in a 9 x 13 inch casserole dish.
- 2. Top with sliced apples and crushed pineapple
- 3. Mix sugar, oatmeal, flour, brown sugar, and pecans; spread over fruit.

- 5. Bake at 350 degrees until brown, about 30 minutes.

- Preheat oven to 350°. In a small bowl, mix brown sugar and butter; spread onto the bottom of a greased 13x9-in. baking pan. Top with pineapple slices. Place a whole cranberry in the center of each pineapple; sprinkle remaining cranberries around pineapple., For cake, in a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, salt, cinnamon and allspice; add to creamed mixture alternately with sour cream, beating well after each addition. Fold in cranberries; spoon over pineapple., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool 10 minutes; invert onto a serving plate. Serve warm; if desired, top with whipped cream.

AMAZING PINEAPPLE CRANBERRY SAUCE
This is a variation on classic, fresh Ocean Spray® cranberry sauce! My grandma has made it for years and people who don't like cranberry sauce request that I make this at our events! It's different and great! This is a nice change of pace. and I've yet to meet anyone who doesn't like it! Tastes best if stored in refrigerator overnight.

- Drain juice from canned pineapple into a measuring cup. Fill the measuring cup with enough water to equal 1 cup liquid altogether.
- Stir pineapple juice mixture and sugar together in a saucepan; bring to a boil, stirring constantly. Add cranberries and return to a boil. Reduce heat to low and simmer until cranberries burst, about 10 minutes.
- Mix pineapple chunks into cranberry mixture. Cool to room temperature before serving.

AFTER THE HOLIDAY CASSEROLE W/ PINEAPPLE & FRESH CRANBERRIES
From my Aunt Alta's recipe box, this was from an old newspaper clipping. If you don't have leftover sweet potatoes, you can mash up some freshly cooked ones or mash some drained canned ones. Remove any marshmallow toppings if you are using leftovers. NOTE: The sugar is present to tone down the tang of the fresh cranberries and to the sweet potatoes. I would imagine Splenda could be used in its place. If you wish to use whole berry cranberry sauce (drained) that you already have prepared, I would suggest heavily reducing or possibly leaving out the sugar altogether, depending upon how sweet your leftover cranberry sauce is.

- Peel, core and roughly chop the apples and pineapple. Peel and roughly chop the onions. Mix together the apples, pineapple, onions, cranberries, dates, raisins, garlic and ginger.
- Put the mix of fruit and vegetables in batches through the food processor until finely chopped. Tip into a large wide pan or preserving pan.
- Add the spices, salt and vinegar and bring to the boil. Simmer for 20 mins until the apple is pulpy, then add the sugar and stir to dissolve. Bring to theboil, then simmer for about 40-45 mins, until the chutney is thick and pulpy.
- Pot into warm, sterilised jars. Seal, label and store for at least a month in a cool dry place.
