AFRICAN SPINACH AND PEANUT BUTTER STEW

African Spinach and Peanut Butter Stew image

Found online at www.fooddownunder.com, while looking for economical 'African' recipes. Tasty and nutritious, a vegetarian main dish or a good side dish. You could easily add garlic, cooking it with the onions, add some mushrooms, adding with the tomatoes, and I think some chilli, fresh, powdered or flaked, would also add a bit of spice to this very versatile dish!

SOUL-SOOTHING PEANUT STEW

Soul-Soothing Peanut Stew image

This wholesome peanut-based dish takes inspiration from a West African groundnut stew. Soothing, lightly spiced and vegan, it is enriched with chickpeas, spinach and natural peanut butter.

Categories     Dinner, Main Course

Time 55m

Number Of Ingredients 1

Peanut butter, Sweet Potato

Steps:

  • In a large saucepan, heat the oil over a medium heat. Add the onion and garlic and sauté for about 5 minutes, or until the onion is translucent. Add the bell pepper, jalapeno (if using), sweet potato, and tomatoes with their juices. Raise the heat to medium-high and simmer for 5 minutes more. Season the vegetables with salt and black pepper. In a medium bowl, whisk together the peanut butter and 250ml of the vegetable broth until no clumps remain. Stir the mixture into the vegetables along with the remaining 750ml broth, chilli powder, and the cayenne (if using). Cover the pan with a lid and reduce the heat to medium-low. Simmer for 10 to 20 minutes, or until the sweet potato is fork-tender. Stir in the chickpeas and spinach and cook until the spinach is wilted. Season with salt and black pepper to taste. Ladle the stew into bowls and garnish with coriander or parsley and roasted peanuts. Tip: Have some leftover cooked rice? This soup is fabulous with some stirred in.

AFRICAN PEANUT BUTTER STEW

African Peanut Butter Stew image

Once, when I was visiting Paris, my friend Emile from Gabon, Africa, made this dish for me. I was amazed that cooking with peanut butter could be so good.

Yield serves 2

Number Of Ingredients 14

Canola oil spray or 2 teaspoons peanut oil
1/2 medium onion, diced
3/4 cup white rice
3/4 cup plus 1 tablespoon broth (chicken or vegetable) or water
1/2 to 3/4 pound chicken breasts or thighs
1/2 red bell pepper, cored, seeded, and sliced
2/3 cup milk (skim is okay) or water
2 to 4 garlic cloves, minced or crushed
1/2 teaspoon cayenne
Sea salt
3 tablespoons peanut butter, creamy or chunky
3 or 4 tomatoes, diced, or one 14-ounce can diced, drained
1/2 sweet potato, cut into 3/4-inch cubes
1 handful fresh spinach, or about 5 ounces frozen

Steps:

  • Preheat the oven to 450°F.
  • Spray the inside and lid of a cast-iron Dutch oven with canola oil or wipe with peanut oil.
  • Scatter the onion in the pot.
  • Rinse the rice in a strainer under cold water until the water runs clear. Tip the rice into the pot, add the liquid, and stir to make an even layer.
  • Place the chicken on the rice. Add the bell pepper.
  • In a measuring cup, whisk the milk, garlic, cayenne, salt, and peanut butter until the peanut butter dissolves. Pour over the chicken.
  • Layer in the tomatoes, sweet potato, and spinach.
  • Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.
  • Use coconut milk instead of milk. Substituting soy or rice milk is also always acceptable in a Glorious One-Pot Meal.
  • Substitute a minced jalapeño chile instead of the cayenne. Or use four shakes of red pepper flakes.
  • Shrimp and/or scallops instead of, or along with, the chicken taste great, too. Or try tofu (use extra-firm cubes).
  • Use sweet or white potatoes instead of rice.

WEST AFRICAN PEANUT STEW

West African Peanut Stew image

A hearty stew that's super-easy to make and great for peanut butter lovers. Can be made vegetarian or with chicken. In a pinch, feel free to use vegetable or corn oil for peanut oil, powdered ginger for fresh, water for stock, etc. Kale works well in place of collard greens.

Time 1h5m

Yield 4

Number Of Ingredients 12

2 tablespoons peanut oil
1 red onion, chopped
2 cloves garlic, minced
2 tablespoons chopped fresh ginger
1 pound chicken, cut into chunks
1 tablespoon crushed red pepper, or to taste
salt and ground black pepper to taste
5 cups chicken stock
3 small sweet potatoes, cut into chunks
1 (16 ounce) can chopped tomatoes, with liquid
¼ pound collard greens, roughly chopped
1 cup chunky peanut butter

Steps:

  • Heat the peanut oil in a large pot over medium-high heat; cook and stir the onion, garlic, and ginger in the hot oil until softened, about 5 minutes. Add the chicken; cook and stir until completely browned. Season with the crushed red pepper, salt, and black pepper. Pour the chicken stock over the mixture. Stir the sweet potatoes into the liquid and bring the mixture to a boil; reduce heat to low, cover the pot partially with a lid, and cook at a simmer for 15 minutes.
  • Stir the tomatoes, collard greens, and peanut butter into the soup. Partially cover the pot again and continue cooking, stirring occasionally, another 20 minutes.

Provided by Kare for Kitchen Treaty

Time 35m

Number Of Ingredients 17

1 tablespoon olive oil
1 medium yellow onion (diced) (about 2 cups)
3 medium cloves garlic (minced)
2 teaspoons ground cumin
1 teaspoon ground coriander
4 cups low-sodium vegetable broth
1 15-ounce can crushed tomatoes
2 medium sweet potatoes (peeled and diced) (about 2 cups)
1 tablespoon fresh ginger
1/4 teaspoon ground red cayenne pepper (plus or minus to taste)
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/2 cup creamy peanut butter
4 cups packed fresh baby spinach
2 cups cooked brown rice
Fresh cilantro
Chopped salted peanuts

Steps:

  • Cook the rice according to package instructions.
  • While the rice cooks, make the stew. Set a medium soup pot or Dutch oven over medium-low heat. When hot, add the olive oil and the onion. Cook, stirring occasionally, until softened, 6-8 minutes. Add the garlic, cumin, and coriander and cook, stirring frequently, for 1 minute.
  • Add the broth, tomatoes, sweet potatoes, ginger, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Increase heat to high and bring to a boil. Once the stew comes to a boil, reduce heat to low and simmer uncovered until the sweet potatoes are tender, 8-10 minutes.

  • Serve with a scoop of brown rice and garnish with cilantro and peanuts.

AFRICAN SPINACH AND GROUNDNUT STEW (AKA PEANUT, KENYA/TANZANIA)

African Spinach and Groundnut Stew (Aka Peanut, Kenya/Tanzania) image

This is from "Best of Regional African Cooking". The original calls for 1/2 c. finely ground unsalted peanuts. That's too much work, so I substituted peanut butter. This is a very thick, rich vegetable side. It is not a stew like we think of stews in the US. My husband liked it, and it is the only spinach dish he will eat.
