100 g pearl barley
500 g pumpkin, peeled and diced 1cm (crown or buttercup)
3 tablespoons olive oil
salt & freshly ground black pepper
1 onion, finely chopped
3 courgettes, finely chopped
3 garlic cloves, finely sliced
1 liter chicken stock
1/2 cup choped green herbs (sorrel, basil, flat-leafed parsley, mint)
4 medium tomatoes, peeled, seeded and diced 1cm

Steps:

  • Rinse the pearl barley and place in a saucepan of cold water. Bring to the boil, lower the heat and simmer gently until just cooked (around 40 minutes). Drain and set aside.
  • Preheat the oven to 180°C
  • Toss the pumpkin in 1 tablespoon of the olive oil, season with salt and pepper and place in a single layer in a roasting dish. Roast until cooked (around 15 minutes). Set aside.
  • Heat the remaining olive oil in a large saucepan. Add the onion and sauté until soft but not coloured then add the courgettes and sauté until soft. Add the garlic and cook for another minute then add the chicken stock.Bring to the boil then simmer very gently for 20 minutes.
  • When ready to serve add the barley and pumpkin. Bring back to the boil then add the herbs and tomatoes to the soup.

Just looking for new recipes featuring pear vodka since I have a HUGE bottle to play with. There are other versions of this on Zaar, but they all call for cranberry juice. Recipe from the Absolute website. NOTE: this is a pretty strong martini, not a fun, fruity cocktail, so feel free to increase the amount of juice to your taste.. .serving it ice cold is key.

2 ounces pear vodka
1 ounce apple juice
1 dash grenadine

Steps:

  • Chill a martini glass in the freezer.
  • Pour vodka, apple juice and grenadine into a shaker. Fill the shaker with ice cubes and shake it until the shaker is very cold.
  • Strain the drink into the martini glass and serve.

  • Heat the extra-virgin olive oil in a large saute' pan over medium-low heat. Stir in the garlic, rosemary and cubed pumpkin. Cook over medium-heat for 2 minutes, then pour in 1/3 of the stock and allow to reduce.
  • Fold in the barley and toast for about 1 minute. Pour in the remaining stock, cover with a lid and allow to cook for 20 minutess.
  • Make sure to stir all the ingredients every now and then, and feel free to pour in a ladle of extra warm stock or water if the risotto becomes too dry. Season with about 1/2 teaspoon of fine sea salt or to taste.
