A very flavorful seasoned salt used in everyday Russian (from the Caucasus) cooking. use wherever salt is called for in recipes for meats, vegetables and breads and casseroles, soups.

salt, - 500 gr (you can take iodized or sea)
ground coriander, - 1 tbsp. a spoon (seeds)
hop, suneli - 1 tbsp. a spoon (pre-mixed,russian spice blend)
cilantro, - 1 tbsp. a spoon (dried herbs)
dill, - 1 tbsp. a spoon (dried herbs)
parsley, - 1 tbsp. a spoon (dried herbs)
marjoram, - 1 tbsp. a spoon (dried herbs)
basil, - 1 tbsp. a spoon (dried herbs)
savory, - 1 tbsp. a spoon (dried herbs)
paprika, - . 1 tsp
black pepper, - . 1 tsp
ground red pepper, - 0 . 5 tsp

Steps:

  • Garlic cleaned, washed and ground using a blender or grater.
  • To add minced garlic salt and all the spices. First, the mixture is stirred thoroughly, then carefully rubbed and pounded in a mortar.
  • Ready Adygei salt shift into a clean glass jar, cover with a lid and store in a dry place.
  • Note: Composition of spices, as well as their number may be different, it all depends on your taste preferences. Adygei salt is used as a seasoning for ready meals.

Steps:

  • In a small, dry skillet, combine cumin seeds and both kinds of peppercorns.
  • Roast over medium heat for 3 minutes, or until lightly toasted & fragrant. Transfer to small bowl to cool.
  • In a spice mill or with a mortar and pestle, grind the roasted spices until they are a fine powder.

6 sprigs thyme (leaves only)
8 cloves, whole

Steps:

  • Place all but the salt and sugar in a coffee grinder used for only herbs and grind. Mix in with to sugar and salt.
  • To make the brine add 1/2 cup mixture to 1 quart liquid be it water, apple juice, & or beer.

1 1/2 lbs fingerling potatoes, scrubbed
1 tablespoon extra virgin olive oil

Steps:

  • Preheat oven to 400°F.
  • Heat a large ovenproof gratin dish or skillet in the oven for 15 minutes. Combine salt, pepper, thyme and rosemary in a small bowl.
  • Toss potatoes in a medium bowl with the olive oil. Sprinkle generously with seasoned-salt mixture, and arrange potatoes in a single layer in preheated pan.
  • Roast until they are golden on the outside and tender when pierced with a sharp knife 25-30 minutes.
  • Remove from oven, and serve hot with additional seasoned salt on the side.

I like to use this when I reach for salt, So I lower my intake of salt and kick up the flavor of what I cook. I used home grown herbs that I dried whole. Leaves that are loosely packed into measuring cups. So if using store bought do take note the amounts of the whole herbs would be a lot less. I guesstimate my 2/3's. Great to season any game, roast beef or roast poultry. Season roast veggies, stuffing, rice or potatoes. How about a touch on your eggs. I do like heat but I kept it down in this using only peppercorns. You can add chili powder to really make it hot!
