While waiting for my order, I usually treated myself to their only 'appetizer', a little foam container stuffed with chopped shrimp and celery, bound together with mayonnaise. So simple, but surprisingly addictive! I don't get back to San Jose very...

4 - 6 stalks celery
1 c diced shrimp (i use the cans of 'salad' shrimp)
1/2 tsp celery seed
1/2 tsp salt
2 tsp minced shallots, or green onions
1/2 c mayonnaise

Steps:

  • 1. Peel celery to get rid of stringy material. Chop finely. If shrimp is from a can, rinse well before using. Chop shrimp roughly.
  • 2. Mix mayonnaise with all other ingredients. Adjust seasoning as needed. Chill. Enjoy!

1 small red onion, thinly sliced
2-1/2 teaspoons capers
1/3 cup canola oil
1/4 cup white wine vinegar
1/2 teaspoon salt
1/2 teaspoon celery seed

Steps:

  • In a large serving bowl, combine the shrimp, onion and capers. In a small bowl, whisk the oil, vinegar, salt and celery seed. , Pour over shrimp mixture; toss to coat. Cover and refrigerate for 6 hours or overnight, stirring occasionally. Serve with a slotted spoon.,

1 pound peeled and deveined cooked shrimp, chopped
1 can (6 ounces) lump crabmeat, drained
2 celery ribs, finely chopped
1/4 cup Dijon-mayonnaise blend
24 Belgian endive leaves (3 to 4 heads) or small Bibb lettuce leaves
Chopped fresh parsley, optional

Steps:

  • In a large bowl, combine shrimp, crab and celery. Add mayonnaise blend; toss to coat. To serve, top each leaf with about 2 tablespoons shrimp mixture. If desired, top with chopped parsley.

1 tablespoon capers, drained and chopped
1 tablespoon chives, chopped
2 tablespoons Dijon mustard
1 lb cooked shrimp, cleaned
3 -4 stalks celery

Steps:

  • Drain any liquid from the sour cream and whip until thickened.
  • Stir in the capers, chives and mustard.
  • Cover and refrigerate until ready to serve.
  • Cut shrimp in halves or thirds.
  • Trim celery. Cut each stalk into 2 inch lengths.
  • Trim base of each piece so they will sit flat.
  • Spon sour cream mixture evenly into celery.
  • Top with shrimp and serve.

1 tablespoon minced fresh parsley
1 -2 drop hot sauce
1/4 teaspoon salt
