I have tried and tried meatloaf recipes they all fall apart before you get them out of the pan. This meatloaf is very good and sticks together to be served. Leftover meatloaf makes wonderful sandwiches with mayonnaise.

1 green bell pepper, seeded and cubed
1 medium onion, roughly chopped
3 small stalks celery
1 ¼ pounds ground beef
1 pound mild pork sausage
1 ½ cups cracker crumbs
1 (1 ounce) envelope dry onion soup mix
¼ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried sage
1 ½ cups milk
½ cup ketchup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a food processor or blender, combine the bell pepper, onion and celery. Process until finely chopped, but not liquid. Transfer to a large bowl. Add the ground beef, ground pork, cracker crumbs, onion soup mix, salt, pepper, sage and milk. Mix well using your hands, or if you have a stand mixer, mix using the paddle attachment. Transfer to a 9x5 inch loaf pan and form into a loaf, mounding in the center. Cover with a generous layer of ketchup.
  • Bake for 1 1/2 hours in the preheated oven. Serve hot. Refrigerate leftovers, slice and serve cold in sandwiches.

Accidental Meatloaf (Not Too Sweet & No Milk) image

Haven't made meatloaf in YEARS and couldn't find my favorite recipe for it. I decided to wing it after discovering I didn't have enough ingredients in the cupboard to make the standard variety. It turned out F-A-B-U-L-O-U-S. Super-moist and very flavorful. Not too sweet. Leftovers made great sandwiches. To make the fresh breadcrumbs, simply tear some slices of bread up into smaller pieces and pulse in a food processor until fine. Enjoy!

Number Of Ingredients 14

2 lbs lean ground beef
1/4 cup ketchup (I used a lower sugar ketchup)
1/4 cup barbecue sauce (I used a Texas-style sauce that has lower sugar in it)
1 (14 1/2 ounce) can diced tomatoes (I used a fire roasted tomato with adobo sauce)
1 cup soft breadcrumbs (fresh)
3 large eggs, beaten
1 tablespoon Worcestershire sauce
1 teaspoon salt
2 small onions, finely diced
2 ounces fresh mushrooms, sliced thinly & halved
2 garlic cloves, minced
1 red bell pepper, seeded, cored, and finely diced
8 slices bacon
olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a tablespoon of olive oil in a large cast iron skillet. Cook the mushrooms over medium/high heat until softened and lightly browned.
  • Reduce the heat to medium/low. Add the onion, bell pepper, and garlic. Cook until the onions are soft and translucent, stirring often.
  • Turn off heat and put vegetables aside to cool slightly.
  • Combine the beef, ketchup, bbq sauce, tomatoes, breadcrumbs, eggs, worcestershire, and salt in a large bowl. Mix very well.
  • Add the vegetables to the meat mixture. Mix well.
  • Put the meat mixture into the cast iron skillet. Form it into a standard loaf shape or pat it down to fit the skillet. It will take more time to cook if it's a loaf shape.
  • Cover with the strips of bacon.
  • Bake for at least 1 hour. Mine took 1 hour and 15 minutes in a conventional oven. The meat should be cooked in the very center and the bacon should be slightly crisp. Cooking time will vary based on your oven and the shape of the loaf. It may take up to 1 hour and 30 minutes.
  • Let rest for 15 minutes. Pour off any separated fat. Serve warm.
  • Makes GREAT meatloaf sandwiches the next day.

"BETTER THAN BEEF" MEATLESS MEATLOAF



Thanks to caramelized brown onions, there's some real magic going on in this meatless meatloaf! Despite having no beef in it, it's super savory with a meaty texture and flavor. With just enough binder to keep it together, it's slightly crumbly, but still melt-in-your-mouth tender and moist. Serve with mashed potatoes, green beans, and gravy.

4 tablespoons olive oil
2 pounds brown mushrooms, sliced
2 teaspoons kosher salt, divided
½ cup diced yellow onion
¼ cup diced celery
2 tablespoons tomato paste
2 teaspoons beef base (such as Better than Bouillon®)
¼ cup water
1 cup cooked black lentils
2 large eggs, beaten
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 pinch cayenne pepper, or to taste
2 tablespoons ketchup
½ cup fine dry bread crumbs
⅔ cup rolled oats
1 cup grated Parmigiano-Reggiano cheese
2 teaspoons olive oil
2 tablespoons ketchup
2 tablespoons Dijon mustard
2 tablespoons brown sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Very generously grease a loaf pan.
  • Heat olive oil in a large skillet over high heat. Add mushrooms and 1 teaspoon kosher salt and sauté until nicely browned and juices have evaporated, about 10 minutes. Stir in onion and cook until soft, another 5 to 7 minutes.
  • Add celery, tomato paste, and beef base; cook and stir until tomato paste begins to toast on the bottom of the pan, about 3 minutes. Stir in water and turn off the heat; let sit for about 3 minutes.
  • Transfer mushroom mixture into a food processor. Add cooked lentils and pulse until finely chopped but not pureed.
  • Transfer to a mixing bowl and add eggs, soy sauce, Worcestershire sauce, onion powder, garlic powder, pepper, remaining 1 teaspoon salt, oregano, thyme, cayenne, ketchup, bread crumbs, oats, and Parmigiano-Reggiano cheese. Mix until thoroughly combined.
  • Transfer mixture into the prepared loaf pan, then wrap with foil and place on a sheet pan.
  • Bake in the center of the preheated oven until firm to the touch, about 1 hour.
  • Remove the loaf from the oven and place on a wire rack. Remove the foil and place it on the baking sheet. Grease the foil with 2 teaspoons olive oil. Let the loaf sit for 10 to 15 minutes, and increase the oven temperature to 450 degrees F (230 degrees C).
  • While the loaf is resting, make the glaze: Whisk ketchup, Dijon mustard, and brown sugar together in a small bowl.
  • Invert the loaf onto the foil and spread glaze all over the surface, mostly on the top but some on the sides.
  • Return to the oven and bake until the glaze is cooked on, 15 to 20 minutes.
  • Carefully transfer the loaf onto a cutting board. Cut into 6 slices and serve.

My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

¾ cup minced onion
½ cup finely chopped bell pepper
½ cup milk
2 large eggs

2 teaspoons Dijon mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
  • Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.
  • Combine remaining ketchup with balsamic vinegar and remaining 1 teaspoon Worcestershire in a small bowl. Mix until well combined and spread over the top of the meatloaf.
  • Bake in the preheated oven until an instant read thermometer inserted in the center reads 160 degrees F (71 degrees C), about 1 hour. Let stand for 10 minutes before slicing and serving. The longer it sits, the easier it will be to slice.

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.
