TRADITIONAL WHITE PIZZA

Number Of Ingredients 16

1/2 recipe basic pizza dough, recipe follows
All-purpose flour, for dusting
1 tablespoon cornmeal
6 ounces mozzarella cheese, sliced
6 ounces Taleggio cheese, diced
1/2 teaspoon fresh oregano leaves
Salt and freshly ground black pepper
2 tablespoons Parmigiano-Reggiano
2 tablespoons extra-virgin olive oil
1 package active dry yeast
1 cup warm water (110 degrees F)
Pinch of sugar
1 1/2 teaspoons salt
1 1/2 tablespoons extra virgin olive oil, plus more for coating bowl
2 1/2 to 3 cups all-purpose flour plus more, if necessary
Cornmeal, as necessary for dusting pizza peel

Steps:

  • Preheat oven to 500 degrees F and, if you have one, place a pizza stone on the bottom rack of the oven.
  • Place the rolled out pizza dough onto a pizza peel or the back of a cookie sheet, dusted with cornmeal and using flour, as necessary, to help facilitate moving the dough. Sprinkle the pizza with the cheeses, oregano, salt and pepper. Bake the pizza for 10 to 12 minutes, use the peel to turn the pizza around and back an additional, 10 to 12 minutes, or until the cheese has melted and the pizza is golden. Sprinkle the cheese and olive oil over the pizza and serve immediately.
  • In a large bowl combine yeast with water and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Add the salt, olive oil, and half of the flour and mix well to thoroughly combine. Add all remaining flour except 1/2 cup and mix well with your hands, working to incorporate the flour little by little. The dough should be slightly sticky to the touch. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour, as necessary, to form a smooth and elastic dough that is not sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
  • Preheat oven to 500 degrees F and if you have one, place a pizza stone on the bottom rack of the oven.
  • Divide dough into 2 portions for 2 (12 to 14-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a 1/8-inch thickness. Transfer dough to a pizza peel (sprinkle with cornmeal to help facilitate moving dough) and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings and the thickness of the crust). Remove from the oven with a metal peel or spatula and serve immediately.
  • Yield: 2 (12 or 14-inch) pizzas or 4 calzones, serving 4 to 6

1 store bought pizza dough - or pick one up from your favorite pizzeria
Extra- virgin olive oil, for drizzling
2 cups whole or part skim ricotta
2 cloves garlic, finely chopped
Handful flat-leaf parsley, finely chopped
2 cups shredded mozzarella or provolone, 1 pouch
10 fresh basil leaves, 1/2 cup, shredded

Steps:

  • Preheat a pizza stone if you use one along with the oven to 425 degrees F.
  • Stretch dough to form a pie and transfer to stone or pizza baking tray. Pierce the dough with the tines of a fork in several places. Drizzle extra-virgin olive oil around the crust. Mix the ricotta cheese with garlic and parsley and season it with salt and black pepper. Spread the ricotta across the dough. Top the pizza with mozzarella or provolone. Bake until crispy, 20 minutes. Top the white pizza pie with the shredded basil leaves, cut and serve.

My kids eat this on a regular basis BUT they think that Ranch dressing and cheese are condiments like ketchup is! We make these also as snack size using an english muffin. This is the actual recipe from California cheese with the added variations. Serving size is for 4 normal meal size portions or 1 teenage son!

Steps:

  • Preheat oven to 425°F.
  • Spread Ranch dressing on partially baked crust.
  • Sprinkle Mozzarella and Monterey Jack evenly over dressing.
  • Sprinkle herbs evenly over cheese.
  • Variation #1:.
  • Western White; Ricotta is a fresh Italian-style cheese that gives this pizza a slightly sweet and creamy texture.
  • Mix 1 cup Ricotta with oregano, basil, and salt and pepper to taste.
  • Spread the seasoned Ricotta over Ranch dressing.
  • Add ½ cup diced onion and sprinkle Mozzarella and Monterey Jack over all.
  • Variation #2:.
  • Western Green and White; for a more adventurous version of the classic White Pizza, sprinkle 1 cup chopped fresh spinach and 1 cup cooked chicken (shredded or cubed) over Ranch dressing.
  • Sprinkle Mozzarella, Monterey Jack and herbs over all.
  • Bake about 15 minutes, or until cheese is melted and bubbly and the crust is crisp and golden.

extra virgin olive oil, for drizzling
3 large garlic cloves, minced
1 cup shredded mozzarella cheese
1 cup shredded provolone cheese
1/4 cup grated parmigiano-reggiano cheese (a handful) or 1/4 cup romano cheese (a handful)
1/4 cup chopped parsley

Steps:

  • Preheat oven to 500 degrees F.
  • Put the pizza shell or focaccia onto a pizza pan or cookie sheet. Drizzle shell with oil and scatter minced garlic over shell to edges. Cover the pie with a layer of all 3 cheeses combined and work all the way to the edge of the shells. Cook 6 to 8 minutes, until cheeses have melted and begin to bubble. My Whole Wheat Yeast Free Herbed Pizza Dough #111650 is a perfect match for this pizza and is the ONLY crust I use when making this pizza. Note: I have been making this pizza for so long I don't measure the cottage cheese - I think I use closer to 1 cup.

1 tablespoon olive oil
1 garlic clove, minced
1 whole ready to bake pizza dough (OR Whole Wheat Yeast Free Herbed Pizza Dough recipe 111650)
5 ounces part-skim mozzarella cheese
2 teaspoons parmesan cheese
1 teaspoon chopped fresh parsley
1/8 teaspoon oregano
3/4 cup part-skim cottage cheese

Steps:

  • Heat olive oil, add garlic and cook until golden.
  • Brush garlic oil mixture over dough leaving 1/2" of outer dough uncovered.
  • Sprinkle oiled surface of dough with mozzarella cheese.
  • Bake 10 minutes at 400°F.
  • Combine parmesan, parsley, and oregano.
  • Remove pizza from oven and drop cottage cheese by 8 rounded piles in a circular pattern onto pizza.
  • Sprinkle with parmesan mixture.

I was looking for a white pizza recipe and couldn't find just what i was looking for. We used to get the best white pizza from a place on the west side of buffalo, ny "la nova" (1 of the best pizza places). When i couldn't find it i was on a mission and this is what i came up with. As with all my recipes adjust to your own liking. The seasoning are as close as i can get. I you are making your own dough plan ahead.

1 (12 -16 inch) prepared pizza crust, store bought (or homemade )
1/4 cup olive oil (more may be needed)
2 cups sliced onions
2 tablespoons anchovy paste (to taste)
3 garlic cloves, minced (jarred is fine)
1 teaspoon italian seasoning
parmesan cheese
1 -2 cup shredded mozzarella cheese (i used 1/2 fresh motz)
1 (14 ounce) jar artichokes, drained and rough chopped

Steps:

  • *If using home made dough do this a head of time allowing the needed time.
  • Slice onions and carmelize; add garlic and anchovy paste or anchovies 1/2 thru cooking about 5 minutes into cooking you want to add the Italian seasoning now.
  • You don't want garlic to burn.
  • Pre heat oven to 425.
  • *Prepare dough for pan.
  • Top your dough with the onion mixture.
  • Top with your cheese.
  • Top with the tomatoes and artichokes.
  • Sprinkle with the parm cheese.
  • If it seems on the dry side drizzle with olive oil.
  • Bake for 20 - 25 minutes.
  • Pour a glass of wine and enjoy!

I don't like ricotta cheese, so I never liked traditional white pizza. But, my mom used to make a different kind of white pizza without ricotta. It's a completely different flavor. I usually don't measure and go by eye, so the measurements below are not exact.

3 -4 tablespoons olive oil
1 large onion, chopped
2 tablespoons garlic, minced
2 sprigs fresh rosemary, stems removed
salt
pepper
1 prepared pizza crust (I get these premade so I don't have to mess with dough.)
1/2 cup romano cheese, grated (Parmesan will work too)
1/2 cup mozzarella cheese, shredded
1/2 cup provolone cheese, shredded (You can use 1 cup of either mozzarella or provolone if you prefer, but I like it better with both.)

Steps:

  • Preheat your oven to 450°F.
  • In a small pot, begin to cook the chopped onion in the olive oil over medium heat. Cook slowly, you don't want the onions to brown.
  • When the onions are about 1/2 way cooked, add the garlic and rosemary. Continue cooking until the onions are soft.
  • Spread the onion mixture over the top of your pizza shell.
  • Salt and pepper your pizza.
  • Spread the Romano (or Parmesan) cheese first followed by the mozzarella and provolone.
  • Bake for about 15 minutes - until the cheese is melted, bubbling, and starting to brown.
  • Remove from oven and cut into 8 pieces.
  • Enjoy!
