A MAINLY CITRUS SALAD (DESSERT)
This is an easy to prepare salad that kind of goes well with summer. But it is so good to have during the winter, because it provides vitamin C which helps fight off the common flu virus. There is no cooking involved, but you might want to let refrigerate for a little while so the flavours will blend together. As for the sectioning of the citrus, it doesn't have to be perfect, but you do want individual pieces going into the salad.

- After sectioning the citrus, washing the berries and cutting the strawberries in half, put them all in a large bowl.
- In a small bowl mix the white wine, honey and key lime juice together. Note: I freshly squeezed my lime juice. As well I used Sauvignon white wine because it has a citric taste to it, and although it doesn't usually pair well with fruits, it blended too well with the fruit salad.
- Pour the mix into the salad, and let it marinate for at least 30 minutes before serving.

WINTER CITRUS SALAD WITH HONEY DRESSING
This citrus salad requires only that you overcome the notion that salads must be green; it's a novel and wonderful antidote to sorry-looking lettuce. If you're lucky and can find blood oranges, use them; same with the odd, supremely delicious and usually quite pricey pomelos.

- Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.
- Whisk together olive oil, vinegar, honey, lime juice and tarragon until well combined; taste, adjust seasoning as needed and drizzle over salad.

CITRUS SALAD WITH PROSECCO
This elegant, simple variation on fruit salad makes a refreshing first course, but could also be dessert, depending on the menu. A sprinkling of sugar and a splash of Prosecco elevates fresh fruit in a surprising way. In winter or early spring, make it with all kinds of colorful citrus- especially blood orange and pink grapefruit. In summer, use the same method with stone fruits and berries, like peaches and blackberries.

- With a serrated knife, peel all the fruit, removing both skin and pith.
- Slice all the fruit crosswise about 1/4 inch thick. Arrange slices in shallow bowls, making sure each serving has all colors. Add a few blanched almonds to garnish. Sprinkle lightly with sugar.
- At the table, pour about 2 tablespoons of prosecco over each bowl.
CITRUS SALAD WITH POMEGRANATE SEEDS
The fruit can be segmented one day ahead and stored in its juices in the refrigerator. The salad can be loosely covered and stored in the refrigerator for up to eight hours.

- Cut away peel and pith of citrus fruits. Then, working over a bowl to catch the juices, cut segments free of membrane.
- Line a large serving platter with pomelo slices and place citrus segments in rows on top. Sprinkle with pomegranate seeds and garnish with gooseberries.

CITRUS AND POMEGRANATE FRUIT SALAD - ONCE UPON A CHEF

- Place the pomegranate on a surface that won’t stain. Starting at the crown, cut a cross into the fruit about halfway down. Put a large bowl in the sink and, holding the pomegranate crown side down over the bowl, break it apart into quarters. Squeeze each quarter firmly over the bowl to release the seeds and juice, then bend each quarter back to release more seeds. (Don’t worry about getting all the seeds out. What you really want is the juice, so squeeze the pomegranate again to release the juice from any remaining seeds still attached to the fruit.) Pick out any bits of the white membrane so all that remains in the bowl are seeds and juice.
- For the oranges and grapefruits, cut a slice off the top and bottom of each fruit so they sit flat on a cutting board. Using a sharp knife, work your way around the fruits to remove all the skin and pith. Cupping the fruit in one hand and working over the bowl, carefully cut the segments out from between the membranes. (Be sure to cut only until you reach the middle of the fruit!) Firmly squeeze the remaining membranes over the bowl to release all the juices. Cover and refrigerate until ready to serve. Be sure to serve this fruit salad in bowls, so the juice can be spooned up with the fruit.
- Note: Pomegranate juice will stain wooden cutting boards and some countertops. To be safe, you can cut pomegranates on disposable plastic shopping bags.
