2 tablespoons warm glossy chocolate sauce, recipe follows
2 teaspoons malt powder
1 cup chilled heavy cream

Steps:

  • Warm Glossy Chocolate Sauce:
  • In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the corn syrup and water. Whisk until smooth and shiny.
  • Combine all the ingredients in a blender and blend until smooth.

1/2 cup 1 percent, 2 percent or whole milk
1/4 cup chocolate, strawberry or any flavored syrup
2 tablespoons malted-milk powder, or to taste
1/2 teaspoon vanilla extract
Pinch nutmeg or whipped cream, optional

Steps:

  • In a blender, pulse all the ingredients on low speed just until smooth, about 20 seconds. (Don't overblend -- the shake will become too soupy.) Pour the shake into a soda glass and top with nutmeg or whipped cream, if desired.

225ml sunflower oil, plus extra for the tin
250g caster sugar
3 eggs
225ml milk
250g self-raising flour
4 tbsp cocoa powder
2 tbsp malted milk powder
1½ tsp bicarbonate of soda
15 chocolate balls bashed with a rolling pin to a coarse rubble
4 chocolate bunnies
10 chocolate mini eggs halved
100g butter, softened
200g icing sugar
2 tbsp malted milk powder
1 tsp vanilla bean paste

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil a 20 x 30cm traybake tin and line with baking parchment. Whisk the oil, sugar, eggs and milk together in a large bowl. Sieve over the flour, cocoa, malted milk powder and bicarbonate of soda, then fold the dry ingredients into the wet until well-combined. Pour the batter into the prepared tin and bake for 30-35 mins until the sponge has risen and springs back when gently pressed - a skewer inserted into the middle should come out clean. Set the tin on a wire rack and leave to cool completely.
  • While the sponge cools, make the buttercream. Beat the butter, icing sugar, malted milk powder, vanilla and 1 tbsp boiling water from the kettle together using an electric whisk until pale and fluffy. Spoon the buttercream over the cooled cake and gently spread to the edges using a spatula or palette knife. Scatter over the bashed chocolate balls, then decorate with the chocolate bunnies and halved chocolate eggs before serving. Will keep in an airtight container for up to three days.

1/3 cup very cold heavy cream
1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup malted milk powder
1 1/2 cups vanilla ice cream
Maraschino cherry, for garnish, optional

Steps:

  • Chill one 16-ounce serving glass (or two 8-ounce serving glasses) in the freezer.
  • For the whipped cream: Combine the heavy cream and sugar in a large, deep bowl. Whisk vigorously by hand until soft peaks form, 30 to 60 seconds. Set aside.
  • For the milkshake: Blend the milk and malted milk powder in a blender on high speed until the malted milk powder dissolves, 15 to 20 seconds. Add the vanilla ice cream and blend on high until creamy and thick, pushing the mixture down as needed, 20 to 25 seconds.
  • Pour the milkshake into the chilled glass and top with the whipped cream. Garnish with a maraschino cherry if using and serve immediately.

270g strong brown bread flour , plus extra for dusting
40g malted bread flour
4g fast-action dried yeast
55g malt extract
two-thirds of a tbsp olive oil , plus extra for the tin

Steps:

  • Tip both flours into a bowl, then add two-thirds of a tsp salt to one side of the bowl and the yeast to the other side of the bowl. Mix well.
  • Put the malt extract in a separate bowl, then pour in the olive oil and 145ml tepid water and stir until the extract dissolves. Tip into the bowl with the flour mix.
  • Bring the mixture together with your hands to make a rough dough. Tip out onto a surface lightly dusted with flour and knead for 10 mins until you have a smooth dough. Put the dough in a clean bowl, cover with a tea towel and leave to prove for at least 2 hrs until doubled in size.
  • Lightly oil a 900g loaf tin. Roll out the dough into a log shape and transfer to the loaf tin, then cover with a tea towel and leave to prove for 1 hr more, or until doubled in size. Heat oven to 220C/200C fan/gas 7.
  • Bake for 25-30 mins, or until golden brown. Turn out the loaf onto a wire rack and leave to cool.

140g butter , softened
50g golden caster sugar
100g soft light brown sugar
2 medium eggs
200g plain flour
175g malted milk drink powder (we used Horlicks)
½ tsp baking powder
100g bar dark chocolate , chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Beat the butter and sugars in a bowl until light and fluffy, then beat in the eggs one at a time.
  • Add the flour, malted milk drink powder, baking powder and a good pinch of salt, then stir with a wooden spoon until the mixture forms a dough. Tip out onto the work surface and gently knead in the chocolate. Divide the mixture into 20 pieces, roughly the size of a whole walnut. Roll each piece into a ball and place on the baking trays, leaving plenty of room for the cookies to spread. Flatten each ball slightly with your hand.
  • Bake for 10-12 mins until starting to turn golden brown on the edges. Remove from the oven, leave on the baking tray for 5 mins to cool slightly then transfer to a wire rack to cool completely. Will keep in a cake tin or cookie jar for up to 5 days.
