CRUNCHY NUT BROWN SUGAR COOKIES
This recipe was given to me quite some time ago by a friend of the family. My husband is not a big cookie lover, but he loved these, so I requested the recipe. Shortening can be substituted for butter for a crispier cookie.

Steps:
- Preheat oven to 350 degrees.
- Combine all ingredients except flour and walnuts in a mixing bowl. Mix well.
- Gradually add flour until well mixed.
- Add walnuts. You can substitute any nut you prefer.
- Variation: I have occasionally omitted the nuts for chocolate chips - or used both. I would almost say they are better than the toll house recipe.
- Bake cookies for about 12 minutes on a cookie sheet.
- Enjoy!

CHEWY BROWN SUGAR COOKIES (NO MIXER) - PRETTY.
From prettysimplesweet.com

- In a medium bowl whisk together flour, cornstarch, baking soda, baking powder, and salt. Set aside.
- I like to brown the butter for the best cookie flavor, but, if you want to skip this step, simply melt the butter in a large bowl, and continue to the next step (without changing anything else in the recipe). To brown the butter: place butter in a light colored pan over medium heat. Stir the butter or swirl the pan constantly. Soon after the butter has melted, it will begin to sizzle and foam. Within about 3-5 minutes the butter will turn golden brown and you’ll see tiny milk solids in toasty brown color. The smell will be nutty. Once it happens, immediately remove the pan from the heat and transfer to a bowl.
- Add brown sugar to the butter. Whisk until well combined. Whisk in the eggs and vanilla extract. Add flour mixture and mix just until combined. Do not overmix.

- In a medium size bowl, whisk the melted butter and brown sugar together until no brown sugar lumps remain. Whisk in the egg. Finally, whisk in the vanilla. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough will be very soft, yet thick. Cover the dough and chill for 2 hours, or up to 3 days. Chilling is mandatory.
- Take the dough out of the refrigerator and allow to slightly soften at room temperature for 10 minutes if you had it chilling for more than 2 hours.
- Preheat the oven to 325°F (163°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
