Kosher salt and freshly cracked black pepper
1 cup sweet picante peppers, such as Peppadews, chopped
1 cup pitted kalamata olives, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced

1/2 cup fresh parsley, chopped
1/2 teaspoon sumac
1 large eggplant (about 1 pound)
1/4 cup mayonnaise
1/4 cup crumbled feta
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
3 cups plain yogurt, strained overnight in the refrigerator in a colander over a bowl (straining optional)

Provided by á-50671

Number Of Ingredients 24

BULGUR:
3 ounces feta cheese, crumbled, about 3/4 cup
3 plum tomatoes, chopped
1/4 cup mint, chopped
3/4 cup parsley, chopped
2 tablespoons red onion, finely chopped
1 tablespoon olive oil
1 tablespoon lemon juice
1/3 cup water
1/3 cup bulgur
1 tablespoon olive oil
salt to taste
TZATZIKI:
1/2 cup plain Greek yogurt
1/2 cup cucumber, diced
1 tablespoon lemon juice
1 tablespoon olive oil
GRILLED VEGETABLES:
1 small eggplant, sliced to 1/2-inch thick
1/2 medium zucchini, sliced lengthwise to 1/2-inch thick
olive oil, to coat
salt and black pepper to taste
kalamata olives, pitted and coarsely chopped
3/4 cup hummus, preferably roasted red pepper flavor

Steps:

  • You'll need a 2-quart bowl or small trifle dish for these dips. Scoop them out with a big spoon; each dip serves about 8. Toss 3 chopped plum tomatoes with chopped mint and parsley, chopped red onion, olive oil and lemon juice. BULGUR: Bring 1/3 cup water to a boil; add 1/3 cup bulgur, season with salt and simmer over low heat, covered, until tender, 10 minutes. Add 1 teaspoon olive oil and fluff with a fork; let cool. TZATZIKI: Combine 1/2 cup each plain Greek yogurt and diced cucumber, 1 tablespoon each lemon juice and olive oil, and salt and pepper to taste. GRILLED VEGETABLES: Heat a grill pan or grill to medium-high heat. Cook eggplant and zucchini, turning until tender, about 8 minutes. Let cool; coarsely chop. Layer all ingredients in the bowl, from bottom to top, in this order: hummus, olives, grilled vegetables, tzatziki, bulgur, chopped tomato salad, and feta. Serve with pita chips.

SEVEN-LAYER VEGETARIAN GREEK DIP

Seven-Layer Vegetarian Greek Dip image

Grab a plate, scoop and then dip. Squeezing out the vegetables before you assemble this dip removes any extra moisture, so your layers stay in place. Make the day before and refrigerate to save time on game day.

Provided by Food Network Kitchen

Time 1h40m

Yield 10 to 12 servings

Number Of Ingredients 15

1 medium cucumber, peeled and seeded
Kosher salt
2 cups 2-percent Greek yogurt
2 tablespoons extra virgin olive oil
1 large clove garlic, finely grated
1/2 teaspoon dried mint or oregano
2 cups fresh parsley leaves, chopped (about 1 large bunch)
1/2 cup chopped, pitted kalamata olives
1 teaspoon lemon zest
4 scallions, chopped
Two 14-ounce cans artichoke hearts, drained, coarsely chopped
2 cups chopped jarred roasted red bell peppers (about 14 ounces)
2 cups crushed pita chips, plus more for serving
2 cups prepared hummus
1 cup crumbled feta (about 8 ounces)

Steps:

  • Shred the cucumber on a box grater, toss with a large pinch of salt and let drain in a strainer for 10 minutes. Squeeze out any remaining liquid. Mix the drained cucumber with the yogurt, olive oil, garlic and mint in a medium bowl.
  • Toss together the parsley, olives, lemon zest and scallions in a small bowl. Place the artichokes in a piece of cheesecloth or in a strainer and squeeze dry. Repeat with the peppers.
  • Layer the dip in a medium 3-quart clear glass trifle bowl or your favorite small serving bowl. Spread out the artichokes on the bottom, then top, in even layers, with the cucumber-yogurt mixture, peppers, pita chips, hummus, feta and the olive-herb mixture.
  • Wrap and refrigerate until chilled, at least 1 hour or overnight (if refrigerating overnight then top with the olive-herb mixture right before serving). Serve with pita chips.

GREEK SALAD LAYERED DIP

Greek Salad Layered Dip image

Layer fresh Greek salad toppings over a cool yogurt dip with sweet cucumber and creamy feta cheese for a refreshing, lighter-tasting option at parties.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 4 cups

Number Of Ingredients 11

1 seedless cucumber
Kosher salt
2 cups low-fat Greek yogurt
4 ounces feta cheese, crumbled
2 cloves garlic, minced
1/4 cup plus 2 tablespoons chopped fresh mint
Freshly ground black pepper
2 small vine ripe or plum tomatos, diced
1 small red onion, diced
1/2 cup pitted black olives, such as kalamata or nicoise, coarsely chopped
Warm pita bread and/or root vegetable chips (such as Terra Chips), for serving

Steps:

  • Grate the cucumber on the large holes of a box grater into a bowl. Toss with 1/4 teaspoon salt and pour into a fine-mesh sieve set over a bowl. Let stand for 10 minutes. Using your hands and working with a bit of the cucumber at a time, squeeze the excess liquid out of the cucumber and place the cucumber in a large bowl. Add the yogurt, feta, garlic, 1/4 cup of the chopped mint, 1/4 teaspoon salt and 1/4 teaspoon pepper to the bowl with the cucumber. Stir to combine and add more salt and pepper to taste. Transfer to a shallow serving bowl.
  • Toss the tomatoes, red onion, olives and remaining 2 tablespoons mint together in a medium bowl. Sprinkle the mixture over the cucumber mixture. Serve the dip with warm pita or vegetable chips.

7-LAYER DIP - GREEK STYLE

7-Layer Dip - Greek Style image

This is like the classic Mexican 7-layer dip, only in a Mediterranean way! I sometimes make this and leave the meat out - it is still good and vegetarian thataway! Serve with fresh-baked pita chips. I estimated amounts, use more or less to your taste. Serving size is approximate too.

Provided by Snicklefritzie

Categories     Greek

Time 40m

Yield 8 serving(s)

Number Of Ingredients 8

2 cups hummus
1/2 lb ground lamb
1/2 cup finely chopped red onion
1/2 cup chopped seeded cucumber
1/2 cup chopped seeded tomatoes
1 cup tzatziki (Greek yogurt dip)
1/4 cup chopped kalamata olive
1/4 teaspoon of fresh mint, finely chopped

Steps:

  • Spread hummus on platter. I usually use a pretty garlicky kind, stir in some olive oil and lemon zest, a little cayenne.
  • Brown lamb - can use beef or turkey- in skillet with garlic and some oregano and marjoram. Drain well. I usually brown my meet, drain and rinse it with boiling water and then add some spices. Layer meat on top of hummus.
  • Layer onion, cucumbers, tomatoes and tzaziki (greek yogurt dip). The amounts I gave are approximate, use more or less to your preference.
  • Scatter olives and mint over top. Serve with fresh-baked pita chips and watch it dissappear!
