I recently prepared Chili to feed the Homeless and have never cooked in such mass quantity. My Wife and I prepared 32 Gallons of Red, we used 18 Qt Roaster ovens. This recipe will entail the ingredients of one 4 Gallon batch or 16 Qt's

1 (10 lb) can of diced tomatoes
1.5 (10 lb) cans chili beans
0.5 (10 lb) can black beans
0.5 (10 lb) can tomato paste
0.5 (10 lb) can water
2 tablespoons ground cumin
3 tablespoons minced garlic (Dry)
4 tablespoons chili powder
2 tablespoons salt
2 teaspoons ground dried chile (Hot)
1/2 teaspoon ground black pepper
8 teaspoons beef base
9 cups ground beef
3 lbs chopped onions

Steps:

  • You'll need a five (5) Gallon Pot or portable Roaster oven (18 Qts) or larger. This Recipe will produce aprox 4 Gallons or 48 cups of Chili.
  • Start by Browning the meat and draining excess fat/water. Add onions and soften.
  • Add all additional ingredients and slow cook. Adjust thickness by adding water or vegetable juice. Of course season with additional spices to taste or serve with hot sauce on the side.
  • I slow cooked my Chili for 24 hrs at 225 degrees and stirred it every couple of hours.

Beans, black, 8 OZ
Beans, red kidney, 32 OZ
Onions, raw, 5 small
Celery, raw, 10 stalk, medium
Hunt's Tomato Sauce, 1 CAN
Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 2 CANS
DICED TOMATOES W/ GREEN CHILIES, 2 CANS
HEINZ CHILI SAUCE, 24 OZ
Ground Beef 93% Lean, 3 LBS
CHILI POWDER TO TASTE

Steps:

  • SOAK BEANS OVERNIGHT. CHOP ONIONS AND CELERY AND COOK WITH MEAT. MIX WITH BEANS AND OTHER INGREDIENTS. COOK ON MED FOR ABOUT 5 HOURS.

3 pounds ground beef
1 large onion, chopped
1 medium green pepper, chopped
2 celery ribs, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
1 can (29 ounces) tomato puree
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 to 2 cups water
1/4 cup chili powder
2 tablespoons Worcestershire sauce
1 tablespoon dried basil
2 teaspoons ground cumin
2 teaspoons steak sauce
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon coarsely ground pepper
1-1/2 teaspoons browning sauce, optional
Additional chopped onion and shredded cheese, optional

Steps:

  • In a stockpot, cook the beef, onion, green pepper and celery over medium heat until meat is no longer pink and vegetables are tender; drain., Stir in the beans, tomato puree, salsa, tomatoes, broth, water, seasonings and, if desired, browning sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until chili reaches desired thickness. If desired, garnish with chopped onion and cheese.

30 pounds hamburger
2 (6-pound) cans chili beans
3 (6-pound) cans kidney beans
2 (6-pound) cans crushed tomatoes
1 (6-pound) can peeled tomatoes
1 (6-pound) can tomato paste
40 tablespoons chili powder
16 to 18 small onions, chopped
4 mild green peppers, chopped
4 tablespoons sugar
Salt and black pepper to taste

Steps:

  • In batches, brown hamburger in skillet and drain off fat. Add all other ingredients and cook in several large Dutch ovens on low heat for 2 hours. Salt and black pepper to taste. Serve immediately. Freezes well.

This chili for a crowd was handed down to me by my aunt, who said she got it from a "grizzled Montana mountain man." I added some zesty ingredients to come up with the final version. Hot food is something that my husband's family isn't accustomed to, so I adjust the spices for them. 3 pounds ground beef
2 cans (28 ounces each) diced tomatoes, undrained
4 cans (16 ounces each) kidney beans or 4 cans (15 ounces each) pinto beans or black beans, rinsed and drained
1 pound smoked kielbasa, sliced and halved
2 large onions, halved and thinly sliced
2 cans (8 ounces each) tomato sauce
2/3 cup hickory-flavored barbecue sauce
1-1/2 cups water
1/2 cup packed brown sugar
5 fresh banana peppers, seeded and sliced
2 tablespoons chili powder
2 teaspoons ground mustard
2 teaspoons instant coffee granules
1 teaspoon each dried oregano, thyme and sage
1/2 to 1 teaspoon cayenne pepper
1/2 to 1 teaspoon crushed red pepper flakes
2 garlic cloves, minced

Steps:

  • In an 8-qt. kettle or Dutch oven, cook beef over medium heat until no longer pink; drain. , Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally.

  • To freeze: Let chili stand 30 minutes. Evenly divide chili mixture into 3 (1-gallon) zip-top plastic freezer bags; seal and lay each bag flat. Stack bags of chili in freezer. Freeze up to 1 month. Thaw frozen chili overnight in refrigerator or defrost in microwave. Pour thawed chili into a 9-inch square baking dish. Cover tightly with heavy-duty plastic wrap, and fold back a corner to allow steam to escape. Microwave at HIGH 6 to 7 minutes or until bubbly, stirring after 3 1/2 minutes.
