A delicious homemade wonton soup made from scratch with a filling of shrimp/prawn and pork in a flavourful chicken broth, this is comfort food at its best; Asian style. Quick and easy to make, with delicious dumplings that take only minutes to make, this soup is ideal for a busy midweek dinner, and it's better than any Chinese take-away. Ready in just 15 minutes, this is a fantastic recipe for the Chinese New Year

100 g ground pork
100 g shrimp/prawns, finely chopped
1 spring onion, finely chopped
1 tsp ginger, finely chopped
2 cloves a garlic, finely chopped
1/2 tsp oyster sauce
1/2 tsp soy sauce
1/2 tsp rice vinegar
1 tsp sesame oil
25 wonton wrappers
5 cups chicken broth (stock)
a handful of pak choi
2 spring onions, chopped
2 cloves of garlic, chopped
1 tsp ginger, chopped

Steps:

  • To make the filling, mix all the ingredients.
  • Place about a teaspoon of the mixture onto a wonton wrapper, then brush the edges with water.
  • Fold the wrapper like a triangle, then bring the corners together to seal. Repeat until you use up the mixture.
  • Add boiling water to a pan, then add about 5-10 wontons at a time, depending how big your pan is.
  • Leave to boil for about 5 minutes or until the wontons float and they are cooked through.
  • To make the soup, add the chicken broth to a pan together with the garlic, ginger, pak choi and spring onion, then bring to a boil.
  • Add one-two ladlefuls of the chicken broth, then some wontons.
  • Serve hot!

Number Of Ingredients 8

1 leek, white parts, thinly sliced (or sub 1 shallot or ½ cup onion)
4 slices ginger (the size of a quarter, leave peels on- or 1 tablespoon ginger paste)
1 tablespoon olive oil
4 cups chicken broth ( or veggie broth)
10-14 wontons ( chicken, shrimp or vegetarian)
salt and lemon juice to taste
a couple handful of chopped greens- baby spinach, arugula, bok choy, chopped kale
garnish options: scallions, cilantro, sesame seeds, chili flakes or sriracha

Steps:

  • In a medium pot, saute the leeks and ginger in oil, over medium heat, until fragrant, about 2 minutes.
  • Add the broth, cover, and bring to a boil.
  • Add the wontons and simmer according to directions on the package ( 3-5 minutes- depending on size) They normally float when cooked through.
  • Taste the broth and add salt and a squeeze of lemon if you like. I like mine quite lemony, but season to your own taste.
  • Drop in the greens, cooking until wilted. Spinach will take 45 seconds, kale will take longer.
  • Divide among two bowls and sprinkle with any of the garnishes.

This 15-Minute Wonton Soup is made for busy weeknights! Wonton soup is always a hit with my family & I love that this recipe is loaded with veggies.

8 ounces shiitake mushrooms (can substitute crimini mushrooms)
1 teaspoon avocado or canola oil
1 tablespoon minced ginger
3 cloves garlic (minced)
½ teaspoon ground pepper
4 cups low sodium chicken broth
2 tablespoons soy sauce
2 teaspoon hoisin sauce
½ teaspoon chili garlic sauce (optional)
24 mini frozen wontons (I use Trader Joe's chicken cilantro wontons)
4 cups chopped chard (stems removed)

Steps:

  • Remove the stems from the mushrooms and discard the stems. Thinly slice the mushrooms.
  • Set a large nonstick saucepan over medium heat and add the avocado oil.
  • Add the mushrooms and ginger, and cook until the mushrooms are tenders, 3 to 4 minutes. Add the garlic and pepper, and cook for 1 minute.
  • Stir in the chicken broth, soy sauce, hoisin sauce and chili garlic sauce (if using). Bring to a boil, then lower the heat to medium.
  • Stir in the wontons and cook until the wontons are heated through, about 2 minutes.
  • Remove from the heat. Stir in the chard. Serve.

This quick and easy wonton soup is super simple, loaded with veggies and takes under 15 minutes to make thanks to the frozen wontons.

6 cups chicken broth low sodium
1- inch piece fresh ginger (sliced thin)
1 clove minced garlic
20 mini frozen wontons (I love the Chicken Cilantro one's from Trader Joe's)
1 1/2 cups sliced shiitake mushrooms
4 baby bok choy (halved lengthwise and halved)
1 tablespoon soy sauce
1 teaspoon sesame oil
scallions (sliced green parts only for garnish)

Steps:

  • Bring chicken broth to a boil in a large pot.
  • Smash the sliced ginger with the side of a knife to bring out the flavor and add to the pot with the garlic, cover and cook 5 minutes.
  • Add the bok choy and partially cook 5 minutes, then add the frozen wontons and mushroom, simmer for 2 to 3 minutes, until the wontons are heated through and bok choy is tender and wilted.
  • Stir in soy sauce and sesame oil.
  • Divide soup in four bowls. Garnish with fresh scallions.

4 cups chicken stock
1 cup frozen mixed vegetable, such as peas and carrots
20 frozen chicken and vegetable wontons
½ teaspoon kosher salt
¼ teaspoon ground black pepper
dried thyme, optional

Steps:

  • In a large pot, bring the chicken stock to a boil over high heat.
  • Reduce the heat to medium and add the frozen vegetables, chicken wontons, salt, pepper, and dried thyme, if using, and simmer until the wontons are warmed through and float to the surface, 8-10 minutes.
  • Divide the soup among 4 bowls and serve immediately. The soup will keep in an airtight container in the refrigerator for up to 3 days.

1 (8 ounce) box tofu, cut into bite sized cubes (soft or medium works best)
1/2 lb bok choy (kale would work) or 1/2 lb spinach (kale would work)
1 bunch green onion, chopped white and green pieces
40 mini wontons (frozen or fresh)
chili oil (optional)
sesame oil (optional)

Steps:

  • 1. Bring broth to rolling boil on High.
  • 2. Add tofu and veggies, cook 3-5 minutes.
  • 3. Reduce heat to medium.
  • 4. Add wonton. Cook until they float to the top. About 2-3 minutes for fresh, 5-7 minutes for frozen, They are done when wonton skin is translucent and shrunken.
  • 5. Serve with a drizzle of chili and sesame oils, if desired.
