HEALTHY STRAWBERRY OATMEAL BARS



Healthy Strawberry Oatmeal Bars image

The easiest, best strawberry oatmeal bars with butter crumb topping. One bowl, simple ingredients, and 100% whole grain-perfect for a snack or dessert!

1 cup old-fashioned rolled oats
3/4 cup white whole wheat flour
1/3 cup light brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
6 tablespoons unsalted butter (melted (or substitute melted coconut oil to make vegan/dairy free))
2 cups small-diced strawberries (about 10 ounces, divided)
1 teaspoon cornstarch
1 tablespoon freshly squeezed lemon juice (from about 1/2 small lemon)
1 tablespoon granulated sugar (divided)
1/2 cup powdered sugar (sifted)
1/2 teaspoon pure vanilla extract
1 tablespoon milk (any kind you like)

Steps:

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
  • Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
  • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.

2 sticks (1 cup) salted butter, cut into pieces, plus more for greasing pan
1 1/2 cups all-purpose flour
1 1/2 cup oats
1 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
One 10 to 12-ounce jar strawberry preserves

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
  • Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

1/2 cup extra-light vegetable oil spread (such as I Can't Believe It's Not Butter! Mediterranean Blend 60 percent vegetable oil spread)
1 cup granulated sugar
1/2 teaspoon almond extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups old fashioned oats
3/4 cup low-sugar strawberry preserves
1/4 cup applesauce
1/2 teaspoon lemon juice
confectioners' sugar (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • Line 9-inch square baking pan with foil; coat with cooking spray.
  • On medium speed, beat spread and granulated sugar until fluffy, 30 seconds; beat in extract.
  • Beat in flour, soda and salt until combined.
  • Beat in oats.
  • Reserve 1 cup dough.
  • Spread remaining dough in pan.
  • In bowl, combine preserves, applesauce and lemon juice; spread over dough in pan.
  • Drop reserved dough by 1/2 teaspoonfuls on top.
  • Bake 40 minutes or until golden.
  • Cool.
  • Use foil to lift cookie from pan.
  • Peel foil from edges.
  • Sprinkle with confectioners' sugar, if desired.
  • Cut into bars.

1 cup butter, melted
½ cup corn syrup
2 tablespoons corn syrup
⅓ cup brown sugar
1 teaspoon vanilla extract
4 cups quick cooking oats
½ cup chopped strawberries
¼ cup white chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 13x9-inch glass baking dish with cooking spray.
  • Place butter in a large microwave-safe bowl and microwave for 1 minute. If butter has not melted, microwave 30 seconds longer. Pour 1/2 cup plus 2 tablespoons corn syrup, brown sugar, and vanilla extract into melted butter; stir until combined. Add oats and mix to combine; mixture may be a bit thick but do not add additional liquid.
  • Stir in strawberries and white chocolate chips. Spoon batter into the prepared baking dish and lightly press mixture into the dish.
  • Bake in the preheated oven until golden on top, about 25 minutes. Allow to cool before slicing into bars.
