QUICK AND EASY CHINESE NOODLE SOUP



Quick and Easy Chinese Noodle Soup image

A delicious soup with plenty of vibrant flavors that are brought together in one pot. Once you try this recipe, you'll never go back to the packaged soups again!

Number Of Ingredients 7

4 cups chicken stock
3 green onions (finely sliced into rounds)
1 tablespoon Oyster Sauce
1 tablespoon low sodium Soy Sauce
1 tablespoon low sodium dark Soy Sauce ((this can be held until the end and added if needed by taste).)
4 oz Dried Chinese noodles (of your choice)
4 leaves Bok Choy/pak choi (sliced)

Steps:

  • In a large saucepan, heat the chicken stock and bring to a boil.
  • Add the green onions, Bok Choy or Chinese greens, soy sauces, oyster sauce & the noodles.
  • Reduce the heat and cook according to noodle package instructions (just until tender). Serve hot

Number Of Ingredients 3

4 -5 lbs stewing chicken or 4 -5 lbs roasting chickens
3 -4 lbs lean pork or 3 -4 lbs smoked ham hock
6 slices gingerroot

Steps:

  • Cut chicken into small pieces, remove any fat.
  • Trim any access fat off the lean pork.
  • Put chicken& pork into a large pot.
  • Add water to cover and bring to a boil, then lower heat.
  • Cook for about 10 minutes until the scum comes to the top.
  • Put the chicken& pork into a colander and then run cold water over to remove any scum.
  • Clean the stock pot and then put back the chicken& pork and add the gingerroot.
  • Add water to cover (Three-quarters to the top of the pot) and bring to a boil.
  • Lower heat.
  • Simmer the stock on a VERY, VERY LOW HEAT (A few bubbles showing and with no cover on the pot) for about 3 to 5 or so hours.
  • Strain the stock by using a colander and cheese cloth (Discard the bones).
  • Let cool and then put into the refrigerator.
  • After several hours remove any fat from the surface.
  • Note: You can make a richer more flavorful stock by also adding about 1lb of a smoked Ham Hock to the recipe above.
  • However, prior to adding it to the pot, blanch to remove any of the spices.
  • As an alternative use College Brand Chicken Stock (46 fl oz can) and add a small piece of smoked Ham Hock for a quick way to get a flavorful stock.

When I first made this soup for Esthur our exchange student from Hong Kong she couldn't believe how much it tasted like home. I guess that proves this is an authentic Chinese soup.

Number Of Ingredients 8

8 green onions
6 oz cabbage
8 oz pork tenderloin
1 1/2 Tbsp oil
6 c chicken stock
2 Tbsp soy sauce
1/2 tsp grated fresh ginger
4 oz thin chinese noodles or vermecelli

Steps:

  • 1. Cut onions into thin diagonal slices. Shred cabbage. Slice pork into thin strips.
  • 2. Heat oil in wok over medium-high heat. Add pork and cabbage. Stir-fry until pork is no longer pink, about 5 minutes.
  • 3. Add chicken stock, soy sauce, and ginger to pork mixture. Cook until mixture boils. Reduce heat and simmer 10 minutes.
  • 4. Stir in noodles and onions. Cook just until noodles are tender, 1-4 minutes.
