1-2-3 Grilled Salmon image

I love salmon, but my husband doesn't. So I combined flavors I knew he liked to create this grilled recipe, and now it's the only salmon he will eat. It's so easy and only requires a handful of ingredients. -Nicole Clayton, Prescott, Arizona

Number Of Ingredients 5

1/3 cup olive oil
3 tablespoons reduced-sodium soy sauce
2 tablespoons Dijon mustard
1/2 teaspoon dried minced garlic
6 salmon fillets (5 ounces each)

Steps:

  • In a small bowl, combine the oil, soy sauce, mustard and garlic. Pour half of marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for 30 minutes. Refrigerate remaining marinade., Drain fish and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, covered, over high heat for 5-10 minutes or until fish flakes easily with a fork. Drizzle with reserved marinade.

Cover and refrigerate remaining marinade., Drain fish and discard marinade. On a greased grill rack, grill salmon, covered, over high heat until fish flakes easily with a fork, 5-10 minutes. Drizzle with reserved marinade. If desired, sprinkle with green onions.

2 salmon steaks (6 ounces each)
1/2 teaspoon lemon-pepper seasoning
1/2 cup shredded carrots
1/4 cup julienned sweet yellow pepper
1/4 cup julienned green pepper
2 teaspoons lemon juice
1/2 teaspoon dried parsley flakes
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Sprinkle salmon with lemon-pepper. Place each salmon steak on a double thickness of heavy-duty foil (about 12 in. square). Top with carrots and peppers. Sprinkle with remaining ingredients., Fold foil around fish and seal tightly. Grill, covered, over medium heat for 15-20 minutes or until fish flakes easily with a fork.
