1 package (9 ounces) refrigerated cheese tortellini
1 cup frozen peas
3 tablespoons olive oil, divided
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper

Steps:

  • Cook tortellini according to package directions, adding peas during the last 5 minutes of cooking., Meanwhile, in a large nonstick skillet, heat 2 tablespoons oil over medium-high heat. Add shrimp; cook and stir 2 minutes. Add garlic; cook 1-2 minutes longer or until shrimp turn pink., Drain tortellini mixture; add to skillet. Stir in salt, thyme, pepper and remaining oil; toss to coat.

1 (16 ounce) package uncooked linguini pasta
2 tablespoons olive oil
1 teaspoon chili oil
1 ½ pounds medium shrimp, peeled and deveined
1 pound sugar snap pea pods
2 large cloves garlic, minced
1 ½ cups dry white wine
¼ cup reserved pasta water
1 tablespoon unsalted butter
1 tablespoon fresh lemon juice
⅓ cup chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes or until al dente. Drain, reserving 1/4 cup liquid.
  • Heat the olive oil and chili oil in a wok over medium-high heat. Mix in the shrimp, pea pods, and garlic. Cook and stir 2 minutes, until shrimp are almost opaque. Remove from heat, and set aside.
  • Pour the wine into the wok, and bring to a boil. Cook until reduced by 1/3. Return shrimp, peas, and garlic to the wok, and stir in the reserved pasta water. Continue to cook and stir until shrimp are opaque. Remove wok from heat, and mix in the butter, lemon juice, and basil. Toss with the cooked pasta to serve.

1 cup fresh basil leaves
¼ cup lemon juice
3 tablespoons olive oil
1 clove garlic, or to taste
½ teaspoon salt
2 teaspoons olive oil
1 (8 ounce) package sugar snap peas
¾ pound peeled and deveined shrimp
⅛ teaspoon crushed red pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain.
  • Blend basil, lemon juice, 3 tablespoons olive oil, garlic, and salt in a blender until smooth.
  • Heat 2 teaspoons olive oil in a skillet over medium heat. Cook and stir sugar snap peas in hot oil until tender, about 5 minutes. Add shrimp and red pepper; continue to cook until the shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Stir basil sauce into the shrimp mixture and remove from heat; spoon over spaghetti to serve.

1 1/2 lbs large shrimp, peeled and deveined
8 ounces sugar snap peas
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups cherry tomatoes
1 teaspoon garlic, minced
3 tablespoons parsley, chopped
1 1/2 teaspoons lemon peel, grated
1 lemon, cut in wedges

Steps:

  • Melt butter in large nonstick skillet. Add shrimp, peas, salt and pepper. Cook over medium-high heat, stirring often for 3 minutes until shrimp are almost cooked through.
  • Add tomatoes and garlic to skillet, cover and, shaking often, cook 2 minutes until tomatoes soften and shrimp are pink. Stir in parsley and lemon peel. Serve with lemon wedges.

2 teaspoons chinese rice wine or 2 teaspoons dry sherry
2 teaspoons cornstarch
1 teaspoon red chili pepper flakes
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon white pepper
3/4 lb medium shrimp, peeled and deveined
1 tablespoon vegetable oil
1/2 yellow onion, thinly sliced
6 ounces sugar snap peas (about 2 cups)
1/4 cup chicken broth
1/2 teaspoon sesame oil

Steps:

  • Make the marinade: combine all the marinade ingredients in a bowl; mix well.
  • Add the shrimp; stir to coat evenly; let stand for 10 minutes.
  • Put stir-fry pan over high heat until hot.
  • Add in the oil; swirling to coat the sides.
  • Add the onion and sugar snap peas; stir-fry until the peas are tender-crisp, about 2 minutes.
  • Add in the shrimp; stir-fry until they turn pink, about 1 ½ minutes.

Stir-Fried Shrimp With Snow Peas and Red Peppers image

This is not unlike the shrimp with snow peas you get in many Cantonese restaurants. But there are more vegetables in this version.

3/4 pound snow peas or sugar snap peas, strings and stems removed
2 teaspoons cornstarch
1 1/2 tablespoons soy sauce
1 tablespoon rice wine or dry sherry
2 teaspoons sesame oil
1 teaspoon sugar
1 pound medium shrimp, shelled and deveined
1/2 cup chicken or vegetable stock
2 tablespoons vegetable, peanut or canola oil
1 tablespoon chopped fresh ginger
3 large garlic cloves, green shoots removed, minced
1 red bell pepper, cut into 1-inch squares
3 scallions, trimmed and cut into 1-inch lengths, dark green parts separated

Steps:

  • Bring a large pot of water to a boil. Fill a bowl with ice water. When the water comes to a boil, salt generously and add the snow peas or sugar snap peas. Boil 30 seconds, and transfer immediately to the ice water. Allow to cool for a few minutes, drain and set aside.
  • In a medium bowl, mix together 1 teaspoon of the corn starch, 1 1/2 teaspoons soy sauce, 1 teaspoon of the rice wine or sherry, 1 teaspoon of the sesame oil, and 1/2 teaspoon of the sugar. Add the shrimp, and stir together to coat.
  • Place the remaining corn starch, soy sauce, rice wine or sherry, sesame oil and sugar in another bowl. Add the stock, and stir together well. Set aside.
  • Heat a large, heavy nonstick skillet or wok over high heat until a drop of water evaporates immediately upon contact. Add 1 tablespoon of the oil, and turn the heat to medium. Add the ginger and garlic, and stir together for about 20 seconds, then add the red pepper and the white and light green parts of the scallions. Stir-fry for two to three minutes, until the pepper begins to soften. Stir to the side of the pan. Add the remaining oil and the shrimp. Cook, stirring, for two minutes, stir in the snow peas or snap peas, and continue to stir-fry for another two or three minutes until the shrimp is pink and cooked through. Give the sauce a stir, and add it to the pan along with the dark green ends of the scallions. Stir everything together with the sauce until the shrimp and vegetables are lightly glazed. Serve hot, with rice.

Easy weeknight meal that also has company pleasing capabilities. I threw this together one night based on what I had handy.

20 ounces cheese tortellini
12 ounces raw shrimp, deveined, shelled and cleaned
12 ounces sugar snap peas, frozen
2 garlic cloves, more if you like it garlicky, minced
2 tablespoons basil, fresh leaves cut in chiffonade
1/2 cup butter
1/2 cup olive oil

Steps:

  • Cook tortellini according to package instructions, mine took 5 minutes.
  • Heat heavy skillet and once hot, add oil.
  • Add 1/4 of the stick of butter to the oil, it should sizzle.
  • Add the garlic and shrimp to the skillet and cook on medium heat 2-3 minutes, stirring frequently.
  • Add the sugar snap peas and basil and cook for 4 minutes more.
  • Add the remaining butter and stir to make sure nothing sticks.
  • Add the cooked pasta and continue stirring until the shrimp is fully cooked and pink.
  • If you like cooking with wine, add some white wine to the shrimp in step four & let it cook down a little before adding the sugar snap peas and basil. I haven't used the wine so let me know how it goes.
