ÜBER-QUICK BANOFFEE PUDDING / DESSERT
I love this when I'm home alone for dinner and can't be bothered to make a proper dessert for one, or for when I need a quick sugar fix. This is really quick and easy and is SO yummy. You could easily multiply the ingredient amounts up to serve any number of people, however the presentation means you'll probably only ever want to serve it to family rather than company.

Steps:
- Pre-heat your oven to 200c / 400f.
- Slice up the banana and place it on an over-sized sheet of tin foil.
- Dot the two tablespoons of dulche du leche over the top of the bananas.
- Bring the opposite corners of the foil together to make a little banana parcel.
- Bake in the oven for approximately 15 minutes.
- While the banana is cooking, break your two digestive biscuits / graham crackers into little pieces in a bowl.
- When the bananas are cooked, empty them and the dulche du leche out onto your digestive biscuits / graham crackers and mix well.
- Leave to cool for a minute or so and then eat it all up while it's nice and hot!

FANCY PUDDING DESSERT
These are so pretty, my grandkids think they are at a party when I make these for them. The only thing that is really fancy is the glasses (but don't tell them that, ha).

Steps:
- Divide whipped topping into 6 dessert glasses.
- Use about 1/3 cup in each glass.
- With the back of a spoon make a depression in the center and spread toping up sides of glasses.
- Prepare pudding mix with milk.
- Spoon into glasses and chill.
- When ready to serve, top with a maraschino cherry and serve.

SUMMER PEACH PUDDING DESSERT
Very light baked summer dessert. I've always asked for my mom to make this many times as I was growing up.

- Preheat oven at 350 degrees.
- Spread peaches in a well greased 13x9 baking dish.
- Blend flour, sugar, baking powder and salt.
- Add milk, beating until a batter forms.
- Pour over peaches.
- Drizzle margarine over top of mixture.
- Bake at 350 degrees for 40 minutes.
- Let cool and refrigerate about 4 hours prior to serving.
