MINESTRA MARITATA (ITALIAN WEDDING SOUP)

Minestra Maritata (Italian Wedding Soup) image

Forget the marble-size meatballs you find in many versions of this Italian Wedding Soup. In this easy recipe, they're full-size, full-flavored and plenty filling.

Time 20m

Number Of Ingredients 12

4 tablespoons extra-virgin olive oil, divided
1 ⅓ cups chopped yellow onion
⅔ cup chopped carrot
⅔ cup chopped celery
2 tablespoons minced garlic
6 cups unsalted chicken broth
6 ounces orzo, preferably whole-wheat
1 ½ tablespoons chopped fresh oregano
½ teaspoon kosher salt
24 cooked chicken meatballs (12 ounces), such as Easy Chicken Meatballs (see associated recipe)
4 cups baby spinach
¼ cup grated Parmesan cheese

Steps:

  • Heat 1 tablespoon oil in a large pot over medium-high heat. Add onion, carrot, celery and garlic; cook, stirring occasionally, until the onion is translucent, 4 to 5 minutes.
  • Add broth, cover and bring to a boil. Add orzo, oregano and salt; cover and cook, stirring occasionally, until the orzo is just tender, about 9 minutes.
  • Stir in meatballs and spinach; cook until the meatballs are heated through and the spinach is wilted, 2 to 4 minutes.
  • Serve sprinkled with cheese and drizzled with the remaining 3 tablespoons oil.

ZUPPA MARITATA

Zuppa Maritata image

Mayor Ed Koch had a slight stroke while he was mayor of New York City and while lying bedridden at Gracie Mansion, he heard that he had a visitor. He was soon shocked to learn that Mother Teresa had come to call. He leaped up and put on a bathrobe, saying, "Mother, what are you doing here?" Mother Teresa answered, "You need your friends when you are sick." In honor of friendship, healing, Mother Teresa, and Ed Koch, here is a true comfort soup that bridges all lands and creeds.

ITALIAN WEDDING SOUP (ZUPPA MARITATA)

Italian Wedding Soup (Zuppa Maritata) image

This is a super delicious soup. There are many different recipes for this soup that vary a little from each other, but I feel that this is the best one. Try to use Parmesanno-Reggiano Cheese, as it's truly the "King of all Cheeses".

ZUPPA INGLESE

Zuppa Inglese image

This Zuppa Inglese recipe is an Italian cream rum cake that requires no baking. It is sooo rich and delicious...My Mom made it for special occasions. For a slightly different taste use almond sponge cookies and almond flavoring in place of the rum.

Categories     World Cuisine Recipes     European     Italian

Time 2h25m

Yield 12

Number Of Ingredients 8

1 (10 ounce) jar maraschino cherries
1 teaspoon rum flavored extract
1 (3.4 ounce) package instant vanilla pudding mix
1 (3.9 ounce) package instant chocolate pudding mix
2 (3 ounce) packages ladyfinger cookies
1 pint heavy cream
1 teaspoon white sugar
2 ounces almonds, lightly toasted

Steps:

  • In a small bowl, drain cherry juice and add rum; set aside. Prepare vanilla and chocolate puddings in separate bowls, according to package directions. Allow to set up 5 minutes.
  • In a 9x13 inch baking dish, place a layer of cookies on the bottom of the dish; cut a few of the cookies in order to create a tight fit, if needed.
