1 1/2 cups light brown sugar
1/2 cup granulated sugar
1 1/4 cup butter, melted
4 eggs, lightly beaten
1 teaspoon vanilla
1/2 teaspoon kosher salt
1 1/2 cups self-rising flour
1 1/2 cups chopped pecans

Steps:

  • Preheat oven to 350°F. Line a 9×13 baking dish with parchment paper. Coat generously with nonstick spray and set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment combine both the sugars and butter, mixing on low until combined. Add in the eggs, vanilla, and salt and turn mixer up to medium speed and mix for 1 minute until smooth.
  • Turn mixer to low and mix in the flour until just combined. Fold in the pecans.
  • Transfer mixture to your prepared pan and bake for 30-35 minutes, or until the center is just set and the edges are lightly golden.
  • Cool completely in the pan, and then cut into squares.

1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon

2 cups grated zucchini
1 cup chopped walnuts

Steps:

  • Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  • Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  • Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  • Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

3 eggs
2 cups white sugar
1 cup vegetable oil
1 tablespoon vanilla extract
2 cups grated zucchini
2 cups all-purpose flour
1 ½ teaspoons ground cinnamon
1 teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare 2 8x4-inch loaf pans with cooking spray.
  • Beat the eggs in a mixing bowl with an electric mixer until frothy. Slowly add the sugar while continually beating. Stir the vegetable oil and vanilla into the egg mixture; continue beating until the mixture is thick. Add the zucchini to the mixture and stir.
  • Mix the flour, cinnamon, baking soda, baking powder, and salt together in a separate bowl; pour into the wet mixture and stir until just combined. Add the chopped walnuts and stir. Divide the batter between the two prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before loosening the edges with a knife and removing to cool completely on a wire rack.

1 medium zucchini
1 1/2 cups all purpose flour
1/2 cup sugar
1/4 cup brown sugar (lightly packed)
1 1/2 teaspoons baking powder
pinch salt
1 teaspoon cinnamon
1/2 cup chopped nuts (pecans, walnuts or hazelnuts)
2 eggs
1/3 cup + 1 tablespoon vegetable oil ( I use corn or sunflower oil) ((78 grams in total))
1 teaspoon vanilla

Steps:

  • Pre heat oven to 350 F (180 C) and grease and flour a 9 x 5 inch (22 x 12 centimeter) loaf pan.
  • Shred the zucchini and squeeze out excess moisture. Set aside.
  • In a large bowl whisk together the flour, sugars, baking powder, cinnamon, salt and pecans.
  • In a medium bowl add the eggs and beat slightly with a fork, then add the vegetable oil, zucchini and vanilla. Combine with the fork.
  • Pour the egg mixture into the flour mixture and stir just until combined (approximately 18 stirs). Spoon batter into prepared loaf pan and bake for approximately 55 - 50 minutes. Test for doneness with a toothpick. Let cool before serving. Enjoy.

I found this great Zuke Bread recipe in the Rocky Mountain News, but, it originated in The Uncommon Gourmet Cookbook by Ellen Helman. I've made it many times over the years and have always had good luck with it. I also like to make muffins out of this batter as well. Fill them about 2/3 full and bake about 25 minutes at 350 degrees. Bread or muffins freeze really well. I cut down the prep time by grating and freezing 3 cups of Zuke's in freezer bags and defrosting as I need them.

3 eggs, beaten
1 cup oil
2 1/4 cups sugar
1 1/2 teaspoons vanilla extract
3 cups unpeeled zucchini, coarsely grated
3 cups all-purpose flour, plus
1 tablespoon all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1 pinch clove
1 pinch nutmeg
1 cup chopped pecans
1/2 cup raisins

Steps:

  • Preheat the oven to 350°F.
  • Grease and flour 3 8x4-inch loaf pans.
  • Beat eggs, oil, sugar, and vanilla together until thick.
  • Add the zucchini and stir well.
  • Sift together 3 cups flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  • Gradually add the sifted dry ingredients to the zucchini mixture stirring only till blended.
  • Dust the nuts and raisins with 1 tbs of flour and gently fold into batter.
  • Pour batter into prepared pans, dividing evenly.
  • Bake for 50-60 minutes, or until cake tester inserted in middle comes out clean.
  • Let breads cool in pans for 20 minutes.
  • Remove to racks to completely cool.

ZUCCHINI BREAD PANCAKES

1 cup milk
1 ½ cups all-purpose flour
2 tablespoons white sugar
1 teaspoon ground cinnamon

1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup shredded zucchini
nonstick cooking spray

Steps:

  • Add lemon juice to a cup of milk. Set aside until milk starts to curdle, 5 to 10 minutes.
  • Combine flour, sugar, cinnamon, baking powder, baking soda, and salt in a large bowl. Make a well in the center. Pour in curdled milk, egg, melted butter, and vanilla extract. Stir with a spoon or whisk until the batter is just combined. Add shredded zucchini and mix until well incorporated.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, about 2 minutes. Flip with a spatula, and cook until browned, about 2 more minutes.

I like to have this bread on hand most of the time. It is delicious for morning toast, adding only berry jams and jellies, and great as the base for French toast. Though the recipe looks long, it is actually very simple to make.

Number Of Ingredients 12

1-1/8 teaspoons active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm milk (110° to 115°)
4 teaspoons honey
1 tablespoon olive oil
1-1/2 cups whole wheat flour
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper, optional
1 tablespoon cornmeal
3 tablespoons chopped pecans, toasted
1 tablespoon milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the warm milk, honey and oil. Combine the flours, salt and pepper if desired; add 1-1/2 cups to yeast mixture. Beat on medium speed for 3 minutes. Stir in pecans and remaining flour mixture to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Sprinkle cornmeal over a greased baking sheet. Punch dough down. Shape into a round loaf; place on prepared baking sheet. Cover and let rise until doubled, about 30 minutes., Brush milk over loaf. Bake at 350° for 45-50 minutes or until bread sounds hollow when tapped. Remove from pan to a wire rack to cool.

3/4 cup light brown sugar, firmly packed
6 ounces pecans, broken into large pieces (1 1/2 c.)

Steps:

  • Position oven rack 1/3 up from the bottom of the oven; preheat oven to 350°.
  • Butter an 8-inch loaf pan; dust the pan with fine, dry breadcrumbs; tap to shake out excess crumbs over a piece of paper; set aside.
  • Sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  • In a big bowl, beat the egg to mix; mix in the buttermilk, butter, and the sugar.
  • Add in the dry ingredients; stir or beat only to mix; stir in the nuts.
  • Turn mixture into prepared pan; smooth the top.
  • Bake 1 hour and 5-10 minutes.
  • Cover with a rack and turn the pan and rack over, remove from the pan and then very carefully turn the loaf right side up to cool.
