TUNA MELT

Tuna Melt image

The best tuna melt recipe gives you a toasted sandwich that's properly cheesy and made with a tuna salad that's good enough to shine on its own.

Provided by Genevieve Yam

Time 45m

Yield Makes 4

Number Of Ingredients 10

½ medium onion, thinly sliced
1 cup seasoned rice vinegar
2 (5-oz.) cans tuna packed in olive oil, drained
¼ cup mayonnaise, plus more for spreading
2 Tbsp. chopped celery
1 Tbsp. chopped dill pickles
Kosher salt, freshly ground pepper
8 slices sourdough bread
8 slices sharp cheddar
Dill pickle spears (for serving; optional)

Steps:

  • Combine ½ medium onion, thinly sliced, and 1 cup seasoned rice vinegar in a small bowl. Set aside.
  • Gently mix two 5-oz. cans tuna packed in olive oil, drained, ¼ cup mayonnaise, 2 Tbsp. chopped celery, and 1 Tbsp. chopped pickles in a medium bowl until just combined. Season with kosher salt and freshly ground pepper.
  • Heat a dry large cast-iron skillet over medium-low. Spread mayonnaise over 1 side of 2 slices sourdough bread. Place bread, mayo side down, in skillet; top 1 bread slice with 2 slices sharp cheddar. Cover with a lid and cook until bread is golden brown underneath and cheese is melted, about 4 minutes. (The cheese should form a crispy skirt around the bread.)
  • Uncover skillet and top bread with melted cheddar with one fourth of tuna salad, then some drained reserved pickled onion. Close up sandwich and gently press down on sandwich with a spatula. Transfer to a cutting board and slice in half on a diagonal. Repeat cooking process 3 more times with more mayonnaise and remaining tuna salad, pickled onion, 6 slices sourdough bread, and 6 slices sharp cheddar to make 3 more sandwiches.
  • Serve sandwiches on plates with dill pickle spears if desired.

TUNA MELT SLIDERS

Tuna Melt Sliders image

Served on English muffins, we call these Tuna Sliders because they slide right down. I put "melt" in the title so others could find the recipe. I got this recipe from my mother. Serve with a green salad for a balanced meal. For a real treat, I recommend using #63244 English Muffins (Bread Machine Method) instead of store bought. If you are cooking for just 1 or 2 people, the tuna mixture will keep nicely in the refrigerator for a few days.

KITTENCAL'S TUNA MELT SANDWICH

Kittencal's Tuna Melt Sandwich image

Trust me you will be craving this often once you try it! --- you may use regular white salt but the seasoned salt is better, also use as much cheese and tomato slices as desired, I sometimes add in some chopped sweet yum yum pickles to the tuna filling too --- low-fat mayonnaise and cheese may be used :)

OPEN FACE TUNA MELT SANDWICH

Open Face Tuna Melt Sandwich image

These have become a quick dinner staple. They are sooo good, and comes together in minutes. You can change the type of cheese, but I've found that something with a stronger flavor that melts well, is best. The type of bread I use is called Saloio and is similar to Ciabbata (Saloio is a portuguese bread readily available at our supermarket bakery).

Provided by C. Taylor

Categories     Lunch/Snacks

Time 15m

Yield 8 slices

Number Of Ingredients 9

8 slices saloio bread, cut about 3/4 inch thick and toasted lightly

1 tablespoon lemon juice
1 tablespoon Old Bay Seasoning
salt and pepper
2 tomatoes, sliced
8 slices piquante provolone cheese (or swiss)

  • Mix the tuna, mayo, onion, lemon juice, old bay seasoning, salt and pepper. Mix well.
  • Place enough tuna on a toasted slice of bread and spread to cover slice.
  • Top with slice of tomato (or 2 if the tomato slice is small) and then top with a slice of cheese. Place sandwich slices on a cookie sheet.
