This recipe came from my Crossfit Guru Vanessa VDB while we were stationed in Iraq. Hits the spot every time. You can make these ahead of time - they freeze well. Breakfast for dinner?

Number Of Ingredients 8

1/2 cup steel cut oats (4C)
1/2 cup fat-free cottage cheese (2P)
4 egg whites (2P) or 2 eggs (2P)
2 teaspoons peanut butter (4F) or 4 teaspoons sliced almonds (4F)
cinnamon (optional)
nutmeg (optional)
vanilla (optional)
3 tablespoons maple syrup (optional)

Steps:

  • Mix all ingredients in blender until thick batter. For your fat count, either add peanut/cashew/mac butter to your batter or top with sliced/slivered almonds.
  • Cook on griddle just like pancakes with butter flavored non-stick cooking spray until done, approx 3 mins per side on med heat. Add syrup and enjoy!
  • Scale as necessary. For a 3 block meal, eat only 3 pancakes.
  • I personally add 1 tsp of cinnamon & nutmeg and a Tbsp of vanilla, but I like those spices in my pancakes to come loud and strong.

1 cup diced celery
1 cup diced onion
1 diced green pepper
1/4 cup brown sugar, packed
1/2 cup barbecue sauce
2 cups ketchup
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Saute meat with vegetables. Drain. Add remaining ingrediants and simmer over low heat 20 minutes.

2 2/3 teaspoons canola oil
6 cups red peppers
6 cups asparagus
8 ounces deli ham (cut into 1/2' strips)
1/2 cup egg noodles (cooked)
1 (15 ounce) can fat free chicken broth

Steps:

  • Heat 3 cups of water, and the can of Fat Free Broth until boiling, keep simmering until step 4.
  • In non-stick skillet, heat oil over medium-high heat until hot.
  • Add red pepper and asparagus until vegetables are tender-crisp (approx. 7 minutes).
  • Stir in ham and cook one minute or until ham is thoroughly cooked.
  • Stir noodles into water, cook until tender.
  • Remove saucepan from heat, do not drain the water.
  • Stir in ham and vegetable mixture.

You can use any diet cola type soda for this recipe. The soda gives the sloppy joes a sweetness rather than tang. If your a Weight Watcher you can count 3 points for the sloppy joe but add points for whatever you serve it on. The recipe is core if you serve it over couscous or brown rice.
