Christmas Appetiser: Italian Cheese Loaf image

Recipe video above. Looks so festive, easy to make and a flavour bomb inside! Terrific economical, make ahead alternative to expensive cheese platters. It's like an antipasto platter in cheese log form! Adaptable and versatile! **Can freeform it instead of using loaf pan**

Number Of Ingredients 13

500g/ 1 lb cream cheese (, softened (Note 1))
1/3 cup sour cream ((Note 2))
1/2 tsp EACH thyme, oregano, basil, rosemary, black pepper (OR 1 tsp Italian Seasoning)
1 tsp EACH garlic powder, salt, red pepper/chilli flakes ((adjust to taste))
2 cup cheddar or other cheese (, freshly grated (Note 3))
280g / 9 oz roasted peppers (, drained and finely chopped)
180g / 6 oz salami (, finely chopped (Note 4))
3/4 cup green olives (, finely chopped)
1/3 cup green onion (, finely minced (3 - 4 stalks))
220g / 7 oz sun dried tomato strips with OIL (, roughly chopped)
1/4 cup parsley (, finely chopped (or chives))
Rosemary sprigs ((decoration))
Jatz or other crackers (, for serving)

Steps:

  • Spray a loaf pan with oil then line with cling wrap with overhang.
  • Mix Cheese Log ingredients together. Taste and adjust salt if needed (bear in mind saltiness of crackers you are serving with).
  • Scrape into loaf pan and level surface, pressing to remove air pockets. Smaller pan = taller loaf.
  • Cover with cling wrap overhang and refrigerate for 4 hours+ (up to 1 week).
  • Turn out onto platter, peel off cling wrap.
  • Top with sun dried tomato and pour over oil. Garnish with parsley and rosemary sprigs to give it a festive look.
  • Best to serve closer to room temp than fridge cold. Serve with crackers! Knives for smearing optional - it's soft enough to scoop with crackers.

2 cups shredded Colby cheese
2 cups shredded Monterey Jack cheese
1/4 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon Worcestershire sauce
2 cups chopped pecans, toasted
Butter-flavored crackers

Steps:

  • In a large bowl, beat cream cheese until smooth. Stir in the shredded cheeses, mayonnaise, garlic powder, onion powder and Worcestershire sauce. Shape mixture into two logs, about 6 in. long. Roll in pecans, pressing down gently., Wrap each in plastic wrap; refrigerate for at least 2 hours or overnight. Serve with crackers.

1-1/3 cups uncooked elbow macaroni
1 cup 4% cottage cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese
1 teaspoon cornstarch
1 cup whole milk
1 small onion, grated
1/4 cup finely chopped green pepper
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup crushed cornflakes
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. Cook macaroni according to package directions; drain. Add cottage, mozzarella and cheddar cheeses; set aside., In a large saucepan, combine cornstarch and milk until smooth. Stir in onion, green pepper, mustard, salt and pepper flakes. Bring to a boil; cook and stir 2 minutes or until thickened. Pour over macaroni mixture; gently stir to coat., Transfer to a greased 2-qt. baking dish. Combine cornflakes and butter; sprinkle over top. Bake, uncovered, 25-30 minutes or until bubbly and the top is golden brown.

Quantities of everything (including the cauliflower itself) are all sort of approximate, and can be varied to suit your taste/appetite.

1 head cauliflower
2 tablespoons mayonnaise (Miracle Whip or whatever works fine too, if you prefer)
2 tablespoons mustard
1/2 cup cheddar cheese, shredded or sliced

Steps:

  • Steam the cauliflower until just slightly underdone.
  • While the cauliflower is cooking, mix the mayonnaise and mustard together.
  • When the cauliflower is done, transfer it to a microwave-safe dish and spread the mustard-mayonnaise over it.
  • Cover with cheese.
  • Microwave for 2-3 minutes, until the cheese melts.
  • Or, if whatever else you're cooking isn't done yet, you can just cover the cauliflower and lets its heat melt the cheese until you're ready to serve.
