Ultimate Bibimbap Sauce, 4 Ways image

1/2 cup gochujang ((Korean chili paste))
1/4 cup toasted sesame oil
1/4 cup sugar
1/4 cup water
1/4 cup toasted sesame seeds
4 tsp vinegar (, apple cider vinegar or rice vinegar)
4 tsp minced garlic
1/2 cup doenjang ((Korean soybean paste))
1/4 cup water
1/4 cup toasted sesame oil
1.5 Tbsp honey
2 Tbsp toasted sesame seeds
1 Tbsp minced garlic
1/2 cup soy sauce
4 tsp sugar
4 tsp toasted sesame seeds
2 tsp toasted sesame oil
1 tsp minced garlic

Steps:

  • Choose your choice of sauce. Combine all ingredients in a bowl and mix them well.

GINGER SAUCE (JAPANESE STEAKHOUSE)

1/2 cup chopped yellow onion
1 1/2 tablespoons chopped fresh ginger root (, peeled (use more or less depending on strength preference))
1/3 cup tamari ((highly recommended for the best flavor, but can substitute low sodium soy sauce))
3 tablespoons rice vinegar
zest and juice of one lemon (1 1/2-2 tablespoons juice)
2 teaspoons brown sugar ((optional))

Steps:

  • Place everything in a blender and blend until smooth. Store in a sealed jar in the fridge for up to 5 days. Makes about 3/4 cup ginger sauce.

½ cup ketchup
½ cup water
2 tablespoons molasses
2 tablespoons Worcestershire sauce
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon light brown sugar
½ teaspoon kosher salt
¼ teaspoon hot pepper sauce (such as Tabasco®)
¼ teaspoon granulated garlic
¼ teaspoon freshly ground black pepper

Steps:

  • Whisk the ketchup, water, molasses, Worcestershire sauce, white wine vinegar, Dijon mustard, brown sugar, salt, hot pepper sauce, granulated garlic, and black pepper together in a small heavy-bottomed saucepan and place over medium heat. Bring to a boil, reduce heat to low, and continue cooking at a simmer, stirring together, another 10 minutes. Remove from heat and allow to cool completely. Pour into a glass jar and store uncovered in the refrigerator for 8 hours or overnight. This allows the flavors to blend and reduce any sharpness from the vinegar.

Herby green sauces like chimichurri, chermoula, zhug and salsa verde are some of my favorite condiments. They add instant salt, tang, spice and freshness wherever you add them. Though this one started as a way to stretch a bunch of wilting cilantro, the bright, spicy sauce gets used in my house more than any other. I encourage you to try it on, well, everything: grilled chicken or steamed clams, roasted broccoli, eggs, a hot dog. You can swirl it into yogurt for a quick veggie dip or stir it into mayonnaise and spread on a sandwich.

1 cup chopped fresh herbs, such as parsley, cilantro, basil, mint, or a combination
1 jalapeño or serrano chili, seeded for less heat, roughly chopped
1 garlic clove, smashed
1/4 cup vegetable or olive oil
2 tablespoons lime juice
3/4 teaspoon kosher salt

Steps:

  • Combine all ingredients in a blender or food processor and process until smooth. Sauce will keep in the fridge for about a week. Give it a stir before using.
