Spaghetti with Italian Sausage Red Sauce image

A quick and easy 15-minute weeknight pasta recipe, this spaghetti with red sauce is made with hearty Italian sausage.

12 ounces spaghetti (cooked according to package instructions)
4 links Italian sausage (sweet or spicy)
1 medium onion (diced)
3 cloves garlic (minced)
1 teaspoon oregano
1 teaspoon fennel seeds (optional)
1/2 cup red wine (optional)
16 ounces whole peeled tomatoes
16 ounces tomato sauce (or pureed tomatoes)
salt and pepper (to taste)
parmesan cheese and basil (optional garnish)

Steps:

  • Cook pasta according to package instructions. Tip: Salt the water heavily as this is your only chance to season the pasta.
  • While pasta is cooking, heat a large, deep skillet over medium high heat and spray with cooking spray. Remove sausage from casing and cook in pan until golden brown, using a wooden spoon to break the sausage into bite-sized pieces.
  • When the sausage is cooked, add the onion, garlic, oregano and fennel seeds to the pan, along with a pinch of salt and pepper. Continue cooking until the onions are soft and translucent, about 6-7 minutes.
  • Deglaze the pan with red wine using the wooden spoon to scape up any browned bits from the bottom. Stir in whole peeled tomatoes and tomato sauce then gently break down the whole peeled tomatoes with the wooden spoon. Alternatively, you can use scissors.
  • Bring the sauce to a boil then reduce to low and simmer for 10 minutes. Stir in pasta and garnish with cheese and basil before serving.

2 pounds bulk Italian sausage
2/3 cup chopped onion
2 teaspoons minced garlic
2 pounds plum tomatoes, diced
2 cans (14-1/2 ounces each) beef broth
2 cans (6 ounces each) tomato paste
2 tablespoons brown sugar
2 teaspoons Italian seasoning
1/4 teaspoon ground cinnamon
2 cups shredded part-skim mozzarella cheese
Hot cooked spaghetti

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until sausage is no longer pink. Add garlic; cook 1 minute longer. Drain. , Add the tomatoes, broth, tomato paste, brown sugar, Italian seasoning and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until heated through. Stir in cheese., Serve desired amount over spaghetti. Cool remaining sauce; transfer to freezer containers. Freeze for up to 3 months., To use frozen sauce: Thaw in the refrigerator overnight. Place in a saucepan and heat through.

1 pound Italian sausage links
½ pound lean ground beef
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
1 (16 ounce) can canned tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf

Steps:

  • Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  • In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  • Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

1 pound bulk Italian sausage
3 tablespoons olive oil, divided
3 dried whole red chilies
1 can (28 ounces) plum tomatoes, drained and chopped
3 garlic cloves, minced
2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
3 large sweet red peppers, thinly sliced
4 cups hot cooked spaghetti
1/2 cup minced fresh parsley
1/2 cup shredded Parmesan cheese

Steps:

  • In a large skillet, cook sausage over medium heat, until no longer pink; drain. I started off with my family's favorite recipe for homemade spaghetti sauce, which is very good but a bit mild for my preference. So I kept adding certain ingredients until I was satisfied, and I ended up with the recipe posted here. I have added red pepper flakes on occasion too, but that makes the sauce a bit spicy and "over the top" for my kids.

1 lb ground Italian sausage or 1 lb beef
1/2 onion, chopped
2 tablespoons oil
2 -3 garlic cloves, minced
6 ounces mushroom pieces (reserve the liquid)
1/2 green pepper, chopped
28 ounces tomato sauce
6 ounces tomato paste
1/2 cup water or 1/2 cup mushroom juice
1 1/2 teaspoons minced parsley
1/8 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sugar
1 1/2 teaspoons oregano
1 bay leaf
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce (or more, to suit) (optional)

Steps:

  • In a medium skillet, brown the sausage (or beef) with the chopped onion until no pink remains in the sausage and the onion is transparent. Drain excess grease.
  • In the meantime, heat oil in a kettle or stock pot, and sauté the minced garlic, mushroom pieces, and green pepper in the oil until the pepper is tender. Add remaining ingredients, including enough mushroom juice or water to reach the right consistency. Cover; let sauce simmer over low heat for 15 minutes.
  • Add the browned meat/onion mixture to the kettle. Cover and let the sauce simmer for 20 minutes. Serve over cooked and drained spaghetti noodles.

This is a variation of my Grandmother's beloved sauce recipe that adds a bit more flavor to boring spaghetti. Don't let the number of ingredients fool you, it's VERY easy to make. This yields about 2 gallons of sauce, so plan to use it as a OAMC recipe or cut it in half. It freezes well and makes a great sauce for lasagna, baked rigatoni, or served over spaghetti squash. I use a store-bought canned sauce for the base to save time, but you can use your own if you'd prefer. To make a Southwest version, substitute the stewed tomatoes with a jar of salsa, and add a can of corn and a can of black beans. This sauce depends on the sausage for most of its flavor, so it would probably not make a good vegetarian version, but if anyone comes up with something, let me know!

1 lb lean ground beef
1 lb spicy ground pork sausage (Jimmy Dean HOT breakfast sausage works well, or any Italian ground spicy sausage)
2 (29 ounce) cans store-bought spaghetti sauce (I like Dole Four Cheese blend, but you could use any flavor or brand, or make your own)
4 (14 ounce) cans stewed tomatoes, Italian Style (diced okay, do not drain)
4 stalks celery, coarsely chopped
1 large onion, coarsely chopped (white or yellow)
1 medium red pepper, coarsely chopped
1 medium green pepper, coarsely chopped
2 cups sliced mushrooms (fresh or canned, stems or pieces okay, no need to drain)
4 -6 garlic cloves, minced (to taste, I use minced garlic from a jar)
1 teaspoon oregano
1 teaspoon italian seasoning
1 tablespoon parsley
1 bay leaf
1/2-1 teaspoon sugar (to taste, some people like a sweeter sauce)
1/2-1 teaspoon seasoning salt (I prefer Johnny's brand)
1/2 teaspoon chili powder (to taste)
1/4 teaspoon red cayenne pepper (optional)
1/2-1 cup parmesan cheese, grated (or parmesan or Romano blend)

Steps:

  • In two separate skillets or pots, brown the sausage and ground beef, and break into bite-sized chunks. Do not brown sausage and beef in the same skillet, or all the meat will taste like sausage. Drain grease well, then combine into a large stew pot and set aside.
  • While the meat is browning, chop all veggies into coarse pieces. Add to stew pot with all other ingredients except the parmesan cheese.
  • Simmer sauce over medium heat, stirring occasionally, for about 2 hours or until celery is tender. I recommend covering the pot with splatter guard to prevent splatter, but do not use a lid as the steam needs to escape.
  • In last 10 minutes of cooking, remove bay leaf, stir in the parmesan cheese to thicken the sauce. Use more or less to desired thickness.
