SPAGHETTI WITH ITALIAN SAUSAGE RED SAUCE
Steps:
- Cook pasta according to package instructions. Tip: Salt the water heavily as this is your only chance to season the pasta.
- While pasta is cooking, heat a large, deep skillet over medium high heat and spray with cooking spray. Remove sausage from casing and cook in pan until golden brown, using a wooden spoon to break the sausage into bite-sized pieces.
- When the sausage is cooked, add the onion, garlic, oregano and fennel seeds to the pan, along with a pinch of salt and pepper. Continue cooking until the onions are soft and translucent, about 6-7 minutes.
- Deglaze the pan with red wine using the wooden spoon to scape up any browned bits from the bottom. Stir in whole peeled tomatoes and tomato sauce then gently break down the whole peeled tomatoes with the wooden spoon. Alternatively, you can use scissors.
- Bring the sauce to a boil then reduce to low and simmer for 10 minutes. Stir in pasta and garnish with cheese and basil before serving.

- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.

I started off with my family's favorite recipe for homemade spaghetti sauce, which is very good but a bit mild for my preference. So I kept adding certain ingredients until I was satisfied, and I ended up with the recipe posted here. I have added red pepper flakes on occasion too, but that makes the sauce a bit spicy and "over the top" for my kids.

- In a medium skillet, brown the sausage (or beef) with the chopped onion until no pink remains in the sausage and the onion is transparent. Drain excess grease.
- In the meantime, heat oil in a kettle or stock pot, and sauté the minced garlic, mushroom pieces, and green pepper in the oil until the pepper is tender. Add remaining ingredients, including enough mushroom juice or water to reach the right consistency. Cover; let sauce simmer over low heat for 15 minutes.
- Add the browned meat/onion mixture to the kettle. Cover and let the sauce simmer for 20 minutes. Serve over cooked and drained spaghetti noodles.

ZESTY SPAGHETTI SAUCE WITH SAUSAGE
This is a variation of my Grandmother's beloved sauce recipe that adds a bit more flavor to boring spaghetti. Don't let the number of ingredients fool you, it's VERY easy to make. This yields about 2 gallons of sauce, so plan to use it as a OAMC recipe or cut it in half. It freezes well and makes a great sauce for lasagna, baked rigatoni, or served over spaghetti squash. I use a store-bought canned sauce for the base to save time, but you can use your own if you'd prefer. To make a Southwest version, substitute the stewed tomatoes with a jar of salsa, and add a can of corn and a can of black beans. This sauce depends on the sausage for most of its flavor, so it would probably not make a good vegetarian version, but if anyone comes up with something, let me know!

- In two separate skillets or pots, brown the sausage and ground beef, and break into bite-sized chunks. Do not brown sausage and beef in the same skillet, or all the meat will taste like sausage. Drain grease well, then combine into a large stew pot and set aside.
- While the meat is browning, chop all veggies into coarse pieces. Add to stew pot with all other ingredients except the parmesan cheese.
- Simmer sauce over medium heat, stirring occasionally, for about 2 hours or until celery is tender. I recommend covering the pot with splatter guard to prevent splatter, but do not use a lid as the steam needs to escape.
- In last 10 minutes of cooking, remove bay leaf, stir in the parmesan cheese to thicken the sauce. Use more or less to desired thickness.
