MINT CHICKEN
A favorite family recipe that my Mom has made for hundreds of guests. Fresh lemon juice and mint leaves are a must! Serve over hot cooked white rice.

Steps:
- In a medium bowl, mix together the chicken pieces and garlic. Toss with the flour just to coat, and shake off excess.
- Heat the margarine in a large skillet over medium-high heat. Add the chicken pieces; cook and stir until browned. Add the mint leaves and lemon juice, cover and steam for about 5 minutes, just until the chicken is cooked through. Do not over cook the chicken or it will be tough.

GRILLED CHICKEN, RED ONION, AND MINT KEBABS WITH GREEK SALAD

- Mix chicken, 2 tablespoons oil, garlic, mint, oregano, salt, and pepper in medium bowl. Let marinate 30 minutes. Whisk remaining 2 tablespoons oil and lemon juice in small bowl to blend.
- Prepare barbecue (medium-high heat). Pull off large mint leaves from stems. Alternate chicken, onion, and mint leaves on skewers; sprinkle with salt and pepper. Grill until chicken is just cooked through, turning and basting occasionally with oil-lemon mixture, about 9 minutes. Serve Greek Salad alongside.
SPICY MINT CHICKEN

- Pour oil into a pan over medium heat. Stir-fry Thai chiles and garlic together in the oil until you smell the fragrance. Add the ground chicken and stir-fry until well done. Add the oyster sauce, fish sauce and soy sauces. Mix well, then add the sugar and a little water. Continue to stir-fry and lastly add serrano chiles, black pepper and the Thai basil. Plate the chicken on the side of cooked rice or over rice. Garnish with the bell peppers.
BOBBY FLAY'S PAN-ROASTED CHICKEN WITH MINT SAUCE
Bobby Flay served a version of this chicken at Bolo, the elegant little jewel box of a restaurant he had on 22nd Street until 2007, when the building that housed it was sold. It came pan-roasted beneath a blanket of what Flay called Spanish spices, with a vibrant green mint sauce rich with chiles, honey, salt and mustard. The dish was one of the restaurant's best sellers. I ate it about 3,000 times there before getting the recipe and adapting it for those of us who cook at home. Of course you can make the exact same dish with chicken thighs if you want. But some will prefer the breast meat. Some always have.

- Preheat oven to 425. Rinse the chicken well, then dry it with paper towel. Season the chicken aggressively with salt. Combine the remaining dry ingredients in a small bowl, and rub the mixture all over the skin of the chicken breasts.
- Heat the oil in a large, oven-safe sauté pan or skillet set over medium heat. When it is shimmering, put the breasts into the pan skin side down, and cook, unattended, until the skin is golden brown, approximately 6 to 8 minutes. Using tongs, turn the chicken breasts over, and place the pan in the oven. Roast until the chicken is golden brown all over and the meat cooked entirely through, approximately 12 to 15 minutes. Remove the chicken to a warmed platter, and allow to rest.
- Meanwhile, put the mint, parsley, garlic and serrano into a food processor, and pulse into a paste. Add the honey and mustard, and pulse again, until combined. With the motor running, slowly add the olive oil until the mixture has become emulsified. Transfer the mixture to a bowl, and if necessary, whisk in a few tablespoons of water to thin the sauce. Season with salt and pepper to taste.
- Spoon some of the sauce over each chicken breast, and serve, with the remaining sauce on the side. Roasted potatoes with some thinly sliced lemons makes a fine accompaniment, along with sautéed greens.

ZESTY GREEK CHICKEN WITH MINT
This is a lovely chicken and orzo dish drizzled with tzatziki sauce. The recipe is adapted from one published in Better Homes and Gardens magazine.

- Combine mint, lemon peel, 2 tsp of the lemon juice, olive oil, 1/4 tsp of the salt, and 1/8 tsp of the pepper in a bowl and set aside.
- Bring 4 cups salted water to a boil.
- Prepare tzatziki sauce by peeling and grating half of the cucumber. Cut the remaining half into bite sized pieces and set aside. Squeeze the grated cucumber to remove excess water. Combine the grated cucumber, yogurt, remaining 2 tsp lemon juice, 1 tsp of the garlic and 1/4 tsp salt in a bowl and set aside.
- Halve any large chicken tenders and combine them in a bowl with the cornstarch, 1 Tbsp of the dry sherry, remaining 2 tsp garlic, remaining 1/2 tsp salt and remaining 1/8 tsp pepper. Stir until the cornstarch is no longer visible. Stir in 1 Tbsp of the vegetable oil and set aside.
- Heat a 12 inch stainless steel skillet over high heat until a bead of water evaporates within 2 seconds. Add the orzo and cook, stirring constantly for 1 - 2 minutes to toast it. Transfer the orzo to the boiling water and cook for 9 minutes or until tender. Drain and set aside.
- Meanwhile, add the remaining 1 Tbsp of oil to the pan. Add the chicken, spreading evenly in a single layer. Cook, undisturbed for 1 minutes until the chicken begins to sear. Stir-fry 1 minute or until chicken is just opaque. Swirl in the remaining 2 Tbsp dry sherry and stir-fry another 1 - 2 minutes until the chicken is cooked through. Add the tomato quarters and stir-fry for 30 seconds. Remove the pan from the heat. Stir in the cooked orzo and cucumber pieces.
- Drizzle the chicken and orzo with the mint mixture. Serve with tzatziki sauce.
