Thanks to my friend Tina for this recipe. It's so good because it's so different. If you like corn, green onions and tomatoes, you'll love it!

Ingredients

1 (16 ounce) package shredded Monterey Jack cheese
2 (4 ounce) cans sliced black olives, drained
1 (14.5 ounce) can diced tomatoes, drained
4 (4.5 ounce) cans diced green chiles, drained
1 bunch green onions, chopped
1 (10 ounce) can white corn, drained
1 (16 ounce) bottle Italian salad dressing

Steps:

In a 2 quart bowl or larger, combine the Monterey Jack cheese, black olives, tomatoes, chilies, onions and corn. Pour in salad dressing, and stir to coat. Dressing may be adjusted to suit your taste.

Combine 1 cup sour cream, 2 tablespoons milk, 1/2 teaspoon kosher salt, 1/4 teaspoon each garlic powder and onion powder, 1 tablespoon lemon juice and 2 teaspoons each lemon zest, chopped mint and parsley in a bowl and whisk until smooth.

2 pounds ground beef
2 pounds process cheese Velveeta, cubed
1 can (14-1/2 ounces) stewed tomatoes, cut up
2 cans (4 ounces each) chopped green chiles
3 teaspoons chili powder
3 teaspoons Worcestershire sauce
Tortilla chips

Steps:

In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the cheese, tomatoes, chiles, chili powder and Worcestershire sauce. , Cook, uncovered, for 15 minutes or until cheese is melted, stirring occasionally. Serve warm, with chips.
