1 1/2 cups butter or 1 1/2 cups margarine, melted
3 cups sugar
1 tablespoon vanilla extract
5 eggs
2 cups all-purpose flour
1 cup cocoa
1 teaspoon baking powder
1 teaspoon salt
24 peppermint patties, unwrapped (small)

Steps:

  • Heat oven to 350 degrees.
  • Grease 13 X 9 X 2 inch baking pan.
  • In large bowl stir together butter, sugar and vanilla with spoon or wire whisk.
  • Add eggs and stir until well-blended.
  • Stir in flour, cocoa, baking powder and salt; blend well.
  • Reserve 2 cups batter and set aside.
  • Spread remaining batter in prepared pan.
  • Arrange peppermint patties in single layer over batter, about 1/2 inch apart.
  • Spread reserved 2 cups of batter over patties.
  • Bake 50 to 55 minutes or until brownies begin to pull away from sides of pan.
  • Cool completely in pan on wire rack.
  • Cut into squares.

  • Preheat oven to 350 degrees F. Grease a 13 x 9-inch baking pan. In large bowl with spoon or wire whisk, stir together butter, sugar and vanilla extract. Add eggs; stir until well blended. Stir in flour, cocoa, baking powder and salt; blend well. Reserve 2 cups batter; set aside. Spread remaining batter in prepared pan. Unwrap Peppermint Patties. 8 tablespoons unsalted butter
4 ounces unsweetened chocolate
1 1/4 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 eggs
1/2 cup all-purpose flour
2/3 cup lightly toasted walnuts or pecans (optional)

Steps:

  • Preheat oven to 400 degrees. Line an 8-inch-square metal baking pan with foil. In top of a double boiler set over barely simmering water, or on low power in a microwave, melt butter and chocolate together. Stir often, and remove from heat when a few lumps remain. Stir until smooth.
  • Stir in sugar, vanilla and salt. Stir in eggs one at a time, followed by flour. Stir until very smooth, about 1 minute, until mixture pulls away from sides of bowl. Add nuts, if using. Scrape batter into prepared pan and bake 20 minutes.
  • Meanwhile, prepare a water bath: Pour ice water into a large roasting pan or kitchen sink to a depth of about 1 inch. Remove pan from oven and place in water bath, being careful not to splash water on brownies. Let cool completely, then lift out and cut into 1-inch squares or wrap in foil.

1 1/2 c (3 sticks) butter or margarine, melted
3 c sugar
1 Tbsp vanilla extract

1 tsp baking powder

  • 1. Heat oven to 350°F.(325°F. for glass baking dish). Remove wrappers from peppermint patties. Grease 13x9x2-inch baking pan. Stir together butter, sugar and vanilla in large bowl. Add eggs; beat until well blended. Stir in flour, cocoa, baking powder and salt; blend well. Reserve 2 cups batter. Spread remaining batter in prepared pan.
