Sometimes Indian cooks use yogurt to make a cooling, barely-spicy raita sauce to accompany a meal. But for snacking, and to give a lift to anything that dips into it, you can also make yogurt into a fiery chutney.

Number Of Ingredients 8

1 cup roughly chopped mint leaves
1 cup roughly chopped cilantro leaves
2 or 3 green chiles, chopped
4 scallions, chopped
1/2 teaspoon salt
2 teaspoons sugar
1/8 teaspoon cayenne
1/2 cup plain whole-milk yogurt

Steps:

  • Using a food processor or blender, grind mint, cilantro, chiles, scallions, salt, sugar and cayenne to a purée, adding a small amount of water if necessary.
  • Transfer mixture to a small bowl, stir in yogurt and mix well. Taste and adjust seasoning. It should be very spicy.

In India, dal refers to a number of lentil-shaped legumes. They are served with rice and curries, and are usually soupy, unlike this thick rendition, which resembles refried beans in consistency. If you prefer a soupier dish, double the amount of liquid.

Number Of Ingredients 13

1/2 pound brown lentils (about 1 1/8 cups), washed and picked over
1 small onion, cut in half
2 garlic cloves, cut in half
1 bay leaf
4 cups water (more if necessary)
2 tablespoons canola or peanut oil
1 teaspoon cumin seeds, lightly toasted and ground
1/2 teaspoon chili powder
1/2 teaspoon turmeric
1 to 2 teaspoons curry powder, to taste
Salt, preferably kosher salt, to taste
1/2 cup plain low-fat yogurt
Chopped cilantro for garnish

Steps:

  • Combine the lentils, onion, garlic, bay leaf, and water in a medium soup pot or heavy saucepan. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Add salt to taste (under-salt slightly because you will be reducing the liquid), and continue to simmer for another 15 minutes, until the lentils are falling apart tender and fragrant. Remove the onion and garlic and discard.
  • Heat the oil in a large, heavy nonstick skillet over medium-high heat. Add the spices and stir as they sizzle for about 30 seconds, until very fragrant. Add the beans with their liquid and cook, stirring and mashing with the back of a wooden spoon, until the mixture thickens, like refried beans. Add salt to taste, once the mixture has reduced to the desired consistency. Spoon onto plates and top each serving with a generous spoonful of yogurt and a sprinkling of chopped cilantro.

This method of roasting salmon cubes at a high temperature ensures you get a little charring on the outside yet perfectly cooked salmon on the inside.

500g skinless salmon fillet, cut into 4cm cubes
For the marinade:
4 tablespoons Greek yogurt
1 tablespoon garlic granules
1 heaped tablespoon rose harissa
1 teaspoon ground turmeric
1 teaspoon paprika
Finely grated zest of 1 unwaxed lime and a good squeeze of juice
1 teaspoon olive oil
Generous amount of Maldon sea salt flakes and freshly ground black pepper
To serve:
Tortilla wraps
Sliced tomatoes
Finely sliced onion
Coriander leaves
Greek yogurt

Steps:

  • Preheat your oven to its highest setting (with fan if it has one). Line a baking tray with baking paper.
  • Mix all the marinade ingredients together in a mixing bowl. Add the salmon and turn until well coated in the marinade.
  • Spread the salmon out on the prepared baking tray and roast for 10 minutes until cooked through. Remove from the oven and serve immediately with tortilla wraps, tomatoes, finely sliced onion, coriander leaves and Greek yogurt.

ROASTED BEETS WITH CHILES, GINGER, YOGURT AND INDIAN SPICES



Roasted Beets With Chiles, Ginger, Yogurt and Indian Spices image

The pungent spices, zingy fresh ginger, dollops of tangy yogurt and fiery green chiles found in Indian cuisine tame the sugary beets in this recipe and open up a whole new universe of flavor. In traditional Indian cooking, beets are usually boiled or steamed, then often made into vegetable curries or chutney. But here they are roasted, which intensifies their sweetness.

1 3/4 pounds beets; a mix of red, yellow and chiogga is nice
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt, more to taste
Pepper, to taste
1/2 teaspoon black mustard seeds
1/2 teaspoon coriander seeds
1/2 teaspoon cumin seeds
1 fat garlic clove, finely chopped
1/3 cup plain Greek yogurt
1/2 jalapeño pepper, seeded and finely chopped
1 teaspoon grated fresh ginger
1 teaspoon lime juice, more to taste
2 tablespoons chopped fresh cilantro
Pomegranate seeds for garnish, optional

Steps:

  • Heat the oven to 375 degrees. Peel the beets and cut into 1-inch chunks. Toss with the oil and season with 1/4 teaspoon salt and pepper. Roast for 30 minutes, tossing occasionally, then sprinkle with mustard seeds, coriander and cumin and roast until the beets are tender, about 15 minutes more.
  • While the beets roast, prepare the dressing: using the side of a knife or mortar and pestle, mash the garlic with a pinch of salt until it forms a paste. Place yogurt in a bowl; whisk in garlic paste, jalapeño, ginger, 1/4 teaspoon salt and lime juice. Whisk in the cilantro.
  • Scrape the warm beets into a large bowl. Stir in the dressing and pomegranate seeds, if using. Taste and adjust seasonings if necessary.

1 tablespoon , dried yellow split garbanzo beans, (channa dal), dry-roasted and ground
1 tablespoon split white urad beans (dhulli urad dal), dry-raosted and ground
1 tablespoon yellow mung beans (dhulli mung dal), dry-raosted and ground
2 teaspoons cumin seeds, dry-roasted and coarsely ground

1 tablespoon vegetable oil
2 dried red chili peppers, such as chile de arbol, with stems, broken
1 teaspoon black mustard seeds
1/4 teaspoon ground asafoetida
15 to 20 fresh curry leaves
1 to 2 fresh green chili pepper, such as serrano, coarsely chopped
1/4 cup grated fresh or frozen coconut
2 tablespoons peeled and coarsely chopped fresh ginger
1/2 cup coarsely chopped fresh cilantro, including the soft stems
1 cup nonfat plain yogurt, whisked until smooth
1 teaspoon salt, or to taste

Steps:

  • 1. Prepare the dals and the cumin. Then heat the oil in a small nonstick wok or saucepan over medium-high heat and add the red chili peppers and mustard seeds they should splutter upon contact with the hot oil, so lower the heat and cover the pan until the spluttering subsides.2. Quickly add the asafoetida, curry leaves, green chili peppers, coconut, and ginger, and cook, stirring until the coconut is golden, about 5 minutes. Add the cilantro and stir another 5 minutes. Transfer to a blender or a food processor and process to make a smooth paste.3. Place the yogurt in a serving bowl, mix in the processed herb and coconut paste, then add the roasted dals, cumin (save some cumin for garnish), and the salt, and stir to mix well. Add ginger and garlic and cook, stirring often, just to take the edge off garlic, about 30 seconds. Add ⅓ cup water and simmer, stirring occasionally, until water evaporates, about 1 minute. Add split peas, coriander, turmeric, cardamom, and red pepper flakes and cook, stirring, until fragrant, about 30 seconds. Add 4 cups water and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until split peas are very tender and most of the liquid is absorbed, 12–14 minutes; season with salt. Cover with a lid and keep dal warm over low heat while you make the toppings.
  • Finely grate zest from lime into a small bowl. Cut lime in half and squeeze juice into bowl (you’ll have about 2 Tbsp.). Add red onion, sugar, and a large pinch of salt and toss, squeezing onion with your hands to help it soften quickly.
