1 large egg
1 teaspoon Dijon-style mustard
1 tablespoon white-wine vinegar or lemon juice
1 1/2 cups light olive oil or vegetable oil
Salt and freshly ground white pepper

Steps:

  • Place egg, mustard and vinegar in a food processor. Process until well blended.
  • With the machine running, slowly dribble the oil into the feed tube to make a thick mixture.
  • Season to taste with salt and pepper and keep refrigerated.

1 egg
White wine vinegar
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
1 cup peanut oil
Kosher salt and freshly ground black pepper

Steps:

  • Poach the egg in vinegar water for 2 to 3 minutes.
  • Place the egg in a blender with the mustard and red wine vinegar and blend with the peanut oil. Add the seasonings at the end.

Forget shop-bought and make your own homemade mayonnaise. It takes a little effort but it's well worth it to accompany your favourite dishes

2 egg yolks
1 tbsp Dijon mustard
250ml sunflower oil
2 tsp white wine vinegar or lemon juice

Steps:

  • Tip the egg yolks and mustard into a bowl, season with salt and pepper and whisk together until completely combined. Whisking constantly, add a small drop of oil and whisk until completely combined, then add another drop and continue a drop at a time until the yolks and oil combine and start to thicken. Once you're confident the oil and eggs are coming together you can add the oil a bit more at a time, but be patient, as adding the oil too quickly will cause the mayonnaise to split and curdle.
  • Once all the oil has been whisked into the eggs and you have a thick, spoonable mayonnaise, whisk in the vinegar or lemon juice and season to taste. Will keep in the fridge for two days.

Number Of Ingredients 6

1 large egg yolk*
1 1/2 teaspoons fresh lemon juice
1 teaspoon white wine vinegar
1/4 teaspoon Dijon mustard
1/2 teaspoon salt plus more to taste
3/4 cup canola oil, divided

Steps:

  • Combine egg yolk, lemon juice, vinegar, mustard, and 1/2 teaspoon salt in medium bowl. Whisk until blended and bright yellow, about 30 seconds.
  • Using 1/4 teaspoon measure and whisking constantly, add 1/4 cup oil to yolk mixture, a few drops at a time, about 4 minutes. Gradually add remaining 1/2 cup oil in very slow thin stream, whisking constantly, until mayonnaise is thick, about 8 minutes (mayonnaise will be lighter in color). Cover and chill. do ahead Can be made up to 2 days ahead. Keep chilled.
  • Variation:
  • To make aioli, add 1 minced garlic clove to the egg mixture, and substitute extravirgin olive oil for the canola oil.
  • Raw egg is not recommended for infants, the elderly, pregnant women, and people with weakened immune systems. To avoid the risk of salmonella infection, you can use pasteurized egg yolk instead.

  • In a small food processor or using the small bowl attachement of your large food processor, add the egg, the mustard, apple cider vinegar, and salt and process for 30 seconds.
  • Scrape down the sides of the food processor bowl, turn on the food processor again and slowly start adding the oil. You want to go as slow as possible to allow your mayonnaise to emulsify. Once the mayonnaise mixture start to thicken a little more, you can start adding your oil a little faster.
  • Wait 10 seconds after adding the last bit of your oil, then turn off the food processor, scrape the sides, taste the mayo, and add any salt or lemon juice to taste and process for another 10 seconds.
