1 pound (450 grams) dried giant beans (Gigantes)
1/4 cup olive oil
1 onion, finely chopped or grated
1 carrot, finely chopped
3 cups pureed tomatoes
1 cup chopped parsley or celery
1 1/2 teaspoons fine salt
Freshly grounded black pepper
1 teaspoon sweet paprika
1 teaspoon dried oregano or thyme
2 cups water or vegetable stock

Steps:

  • Soak the beans in a large bowl with plenty of water for at least 12 hours (24 hours will work best).Rinse them well and transfer them in large pot. Fill with enough water to cover them by at least 2 inches and bring to a simmer. Skim any foam from the surface and cook until tender (about 1 hour). Remove from the heat.
  • Preheat your oven to 390°F (200°C).Drain half of the water from the pot and refill with fresh water (this will cool the beans and will help them not to peel-off when drained). Stir gently and let them sit until you prepare the rest of the ingredients.
  • Drain the beans and transfer them to a large casserole dish or baking pan. Add the rest of the ingredients except the water and stir gently to mix. Add enough water to just cover them.
  • Bake for about 60 minutes or until almost all of the liquids have evaporated.
  • Serve with bread and olives. Eat!

Filling and super-healthy! A traditional Greek Gigantes beans recipe (gigantes plaki), made of 'giant' beans baked in a tomato sauce with plenty of fresh herbs, for a unique taste!

500g gigantes beans (17 ounces)
1/2 cup olive oil
1 small clove of garlic
1 large onion, finely chopped
4-5 tbsps parsley, finely chopped
1/2 tbsp celery, finely chopped
1/2 cup of hot water
400g (14 ounces) tinned chopped tomatoes or 600g (21 ounces) ripped fresh tomatoes, grated
1 tsp dried oregano
salt and freshly ground pepper to taste

Steps:

  • To prepare the gigantes (Gigsntes) plaki, start by soaking the gigantes beans overnight into plenty of water. Drain them into a colander and rinse with plenty of water.
  • Place the gigantes in a large pan with cold water, enough to cover them, add a pinch of sea salt and bring to a boil. Turn the heat down and simmer for 45 minutes, until tender but not cooked. Drain them in a colander and set aside.
  • In the meantime, pour into a large baking pan the olive oil, add the chopped onions, the whole garlic clove (peeled) and bake at 180C, until softened and slightly colored (approx. 15 minutes).
  • Turn the baking pan out of the oven. Add the gigantes beans (drained), the celery, the parsley, ½ cup of hot water and season with salt and pepper. Put back in the oven and bake for 30 minutes.
  • Turn the baking tray out of the oven, blend the gigantes beans lightly with a wooden spoon and pour in the grated tomatoes or plum tomatoes. Season with salt and pepper, add a pinch of oregano and bake the gigantes plaki further for 50-60 minutes at 180C, until the beans are soft and tender and the sauce thickens.
  • For an easier alternative, after soaking the gigantes beans overnight, drain and rinse them. Place in a large pan with enough water to cover them and bring to the boil. Boil for 5 minutes, drain them and place into a large baking pan, along with all of the ingredients, cover with some aluminum foil and bake at 180C for approx. 2 hours. The last 30 minutes, bake without the aluminium foil. Enjoy!

The main ingedients are of course, the huge beans & tomato.....try to find original yigandes (gigantes, gigandes) beans at a Greek or ethnic market for this dish, otherwise use the biggest lima beans you can find. 1 lb yigandes beans, soaked for 12 hours, drained (or big lima beans)
2 -3 garlic cloves, minced
2 medium onions, finely chopped
1/2 cup olive oil
1 lb of ripe tomatoes, peeled, finely chopped (or 16oz. of canned chopped plum tomatoes)
2 small vegetable bouillon cubes
sea salt (optional)
fresh ground pepper
2 tablespoons fresh parsley, chopped
2 cups water (1 1/2 cups if using canned tomatoes)

Steps:

  • Add the beans to a pot with enough cold water to cover well. Bring to a boil, reduce heat and cook at a slow boil for 1 hour. Drain and set aside.
  • Preheat the oven to 325F (160C).
  • Using a wooden spoon, sauté the onion and garlic in the olive oil until soft.
  • Add tomatoes (if using canned, add all liquid as well), bouillon cubes, salt, pepper, parsley, and water, and allow to boil gently for 10-30 minutes, until it begins to thicken.
  • Place the beans in an oven-proof pan, add tomato mixture, stir and spread mixture out evenly.
  • Bake 1 1/2 to 2 hours, or until beans are soft. (Check the dish during cooking and if needed, add a small amount of boiling water.) The dish will look crispy on top.
  • Remove from the oven, cover, and allow to cool. Serve warm or at room temperature.
  • When using after refrigerating, allow it to come to room temperature, or heat briefly in the microwave. This dish is not served hot.

Before we moved south I could take or leave a dried lima bean. I have acquired a taste for them and when I saw this recipe in magazine I knew I would have to make them for one of our 'meatless' nights. My friend Anna who is from Greece says she grew up eating this dish several times a month especially when times were lean.

1 lb dried gigantes, butter beans, elephant beans or large lima beans
3 bay leaves
1 Tbsp olive oil
1 medium onion, diced
1 medium carrot, diced
2 celery ribs, diced
4 clove garlic
red pepper flakes to taste
1 qt diced tomatoes
1 tsp paprika
1 tsp oregano
kosher salt and black pepper to taste
1/4 c parsley, chopped
1/4 c dill, chopped

Steps:

  • 1. Soak the dried gigantes beans in water with the bay leaves over night. Bring the water to a boil and simmer until the beans are tender, about 30-40 minutes.
  • 2. Heat the oil in a pan. Add the onions, carrot and celery and cook until tender, about 10-15 minutes. Add the garlic and chili pepper flakes and cook until fragrant, about a minute.
  • 3. Add the tomatoes, paprika and oregano and simmer until the sauce thickens, about 20 minutes. Season the tomato sauce with salt and pepper to taste. Mix the parsley, dill, beans and 1/2 cup of the liquid that the beans were cooked in into the tomato sauce.
  • 4. Pour the mixture into a casserole dish. Bake in a preheated 350-degree oven until the top is browned and most of the liquid has evaporated, about 50-60 minutes.

1/2 cup parmesan cheese, finely grated
1/2 cup romano cheese, finely grated
2 lbs ground beef
1/4 cup tomato sauce
1 large white onion, chopped
6 tablespoons butter
1/3 cup tomato paste
1 egg, beaten
1 lb macaroni, cooked according to package directions
1 cup coarse breadcrumbs
1/2 cup white wine (can substitute white grape juice)
1/4 cup melted butter
1/4 cup fine breadcrumbs
1/2 teaspoon pepper
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 teaspoons salt
1 tomatoes, diced

Steps:

  • Preheat oven to 400°F.
  • Brown beef and onions in butter.
  • Slowly, add tomato paste, wine, spices and diced tomatoes.
  • Simmer 10 minutes; let cool.
  • Mix in the egg and fine bread crumbs.
  • Mix together parmesan and romano cheeses; set aside.
  • Butter a large casserole dish. Cover the bottom with coarse bread crumbs.
  • Layer half the macaroni on top of the bread crumbs and cover with 1/4 cup of the cheese mixture.
  • Top this layer with the beef mixture.
  • Top with half of the remaining cheese mixture then layer the remaining macaroni.
  • Top with tomato sauce and remaining cheese mixture.
  • Top it all with remaining bread crumbs.
  • Pour melted butter evenly over all.
  • Bake 30 minutes in 400F degree oven.

400g dried butter beans
3 tbsp Greek extra virgin olive oil, plus more to serve
1 Spanish onion, finely chopped
2 garlic cloves, finely chopped
2 tbsp tomato purée
800g ripe tomatoes, skins removed, roughly chopped
1 tsp sugar
1 tsp dried oregano
pinch ground cinnamon
2 tbsp chopped flat-leaf parsley, plus extra to serve

Steps:

  • Soak the beans overnight in plenty of water. Drain, rinse, then place in a pan covered with water. Bring to the boil, reduce the heat, then simmer for approx 50 mins until slightly tender but not soft. Drain, then set aside.
  • Heat oven to 180C/160C fan/gas 4. Heat the olive oil in a large frying pan, tip in the onion and garlic, then cook over a medium heat for 10 mins until softened but not browned. Add the tomato purée, cook for a further min, add remaining ingredients, then simmer for 2-3 mins. Season generously, then stir in the beans. Tip into a large ovenproof dish, then bake for approximately 1 hr, uncovered and without stirring, until the beans are tender. The beans will absorb all the fabulous flavours and the sauce will thicken. Allow to cool, then scatter with parsley and drizzle with a little more olive oil to serve.

I don't like potatoes in my moussaka so I leave them out all together, and it cuts down on overall time I have to spend in the kitchen. Steps:

  • Potatoes:.
  • Preheat oven to 375 degrees F.
  • Toss the potatoes with the olive oil in a large bowl.
  • Put them in a single layer on a baking sheet and season to taste.
  • Roast until soft and starting to brown, about 35 minutes.
  • Béchamel Sauce:.
  • In a medium saucepan melt the butter over medium heat.
  • Add flour and cook, stirring, about 2 minutes until it starts bubbling but does not color.
  • Gradually whisk in the hot milk.
  • Continue whisking for about 6 to 8 minutes until it thickens.
  • Season with salt, pepper and nutmeg.
  • Put the eggs in a large bowl.
  • Whisk the béchamel sauce into the eggs.
  • Continue whisking for a few minutes until the béchamel has cooled slightly (enough so that the eggs won't curdle).
  • Cover bowl with plastic wrap.
  • Make sure to place wrap directly on the surface of the sauce so a skin does not form.
  • Set aside.
  • Lamb:.
  • Heat oil in a large, heavy-bottomed pot over medium-high heat.
  • Add lamb and sauté until cooked through, breaking up with back of spoon, about 6 minutes.
  • Add onion and garlic and sauté until tender, about 6 minutes.
  • Add wine, cayenne pepper, and oregano and cook 2 minutes.
  • Stir in cinnamon, tomatoes, tomato paste and nutmeg.
  • Reduce heat to medium.
  • Cover and simmer until sauce is very thick and reduced to about 6 cups, stirring occasionally, about 60-70 minutes.
  • Season to taste with salt and pepper. Meanwhile, preheat the grill on medium-high heat.
  • Brush the eggplant slices with oil and season with salt and pepper.
  • Grill until cooked through and golden, about 2 minutes per side.
  • Set aside.
  • To Assemble:.
  • Preheat oven to 400 degrees F.
  • Coat a 14x10x2-inch glass baking dish with oil.
  • Arrange potatoes in bottom of dish.
  • Arrange half of eggplant slices over potatoes.
  • Pour half of lamb sauce over.
  • Arrange another layer of eggplant slices on top.
  • Pour remaining sauce over.
  • Pour béchamel sauce over moussaka, covering completely.
  • Bake moussaka uncovered until bubbling around edges, about 1 hour or until topping is softly set and browned.
  • Transfer baking dish to rack and let rest 20 minutes before slicing.
