2 cups CLAUSSEN Sauerkraut, drained
3/4 cup apple juice
1 Tbsp. brown sugar
1 Tbsp. GREY POUPON Dijon Mustard
1 pkg. (13 oz.) OSCAR MAYER Natural Uncured Turkey Sausage, cut into 6 pieces

Steps:

  • Heat oil in large skillet on medium heat. Add carrots and onions; cook 5 min. or until onions are lightly browned, stirring frequently.
  • Add sauerkraut, apple juice, sugar and mustard; mix well.
  • Top with sausage; bring to boil. Cover; simmer on medium-low heat 10 min. or until heated through.

This is my take on a recipe from Kraft Foods...can't leave well enough alone, I guess :). I like to serve it over whole wheat egg noodles (about 6 oz, cooked and stirred in before serving).

1 tablespoon olive oil
2 carrots, sliced
1 onion, sliced
1 (14 ounce) package turkey kielbasa, sliced into coins
1 (14 ounce) can sauerkraut, drained
1 tablespoon Dijon mustard
3/4 cup white wine (or I like sherry)
2 teaspoons brown sugar
1 teaspoon caraway seed

Steps:

  • In a large skillet heat olive oil over medium heat.
  • Add onion and carrot and cook until onion begins to brown, stirring often.
  • Add sauerkraut, mustard, sherry, caraway, and brown sugar. Mix well.
  • Add kielbasa and bring mixture to a boil.
  • Reduce heat to medium low and simmer, covered, for 10 minutes.
  • Serve mixed with egg noodles, over potatoes, or with chunky rye bread.

1 tablespoon olive oil
1 1/2 pounds hot or mild (or a combination) Italian turkey sausages (about 6 sausages)
1 1/2 tablespoons unsalted butter
1/4 teaspoon caraway seeds
1 large bulb fennel, trimmed, quartered and thinly sliced, plus 1 tablespoon fronds for garnish
1 Gala apple, cored and thinly sliced
1 pound sauerkraut, drained well
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning occasionally, until browned all over, 6 to 8 minutes. Add a splash of water, cover, and cook until the sausages are just cooked through, about 2 minutes. Transfer to a plate to cool. Once cooled, slice into 2-inch pieces and reserve.
  • Reduce the heat under the skillet to medium and add the butter and caraway seeds, stirring until the butter is melted. Add the fennel and apple; cook, stirring, until slightly softened, about 3 minutes. Add the sauerkraut and sausage pieces and cook, stirring, until the sauerkraut is hot, about 3 minutes more. Season with salt and pepper. Garnish with fennel fronds.

2 packages (2 pounds) turkey sausages
2 tablespoons canola oil
1 small head red cabbage, thinly shredded
1 medium onion, sliced
2 teaspoons chopped garlic
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (12-ounce) can beer
1/2 cup cider vinegar
2 tablespoons spicy brown mustard
1 tablespoon brown sugar
2 Fuji apples, peeled, cored and cut into 1/4-inch slices

Steps:

  • Preheat the grill or grill pan to medium-high heat.
  • Cook the sausage on the outdoor grill or grill pan for about 12 minutes, turning a quarter turn every 3 minutes.
  • While the sausage is cooking, heat the canola oil in a large skillet over medium-high heat. Add the cabbage, onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring often, until the cabbage has wilted slightly, about 4 minutes.
  • Stir in the beer, vinegar, mustard and the brown sugar and simmer for 5 minutes. Add the apples, cover partially with a lid, to allow some steam to escape. Cook the cabbage and apples over medium-low heat until they are tender, about 8 minutes.
  • Reserve 2 sausages and 1 cup of the apple sauerkraut for online Round 2 Recipe.

1 onion, sliced
2 cloves garlic, minced
1 cup water
2 potatoes, sliced
1 cup sliced carrots
2 tablespoons beef bouillon granules
1 teaspoon white sugar
½ teaspoon caraway seeds
1 (14.5 ounce) can sauerkraut, drained
1 pound kielbasa sausage
2 teaspoons all-purpose flour
1 cup sour cream
salt and black pepper to taste

Steps:

  • Heat the butter in a large skillet with a lid over medium heat; cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Stir in the water, potatoes, carrots, beef bouillon granules, sugar, and caraway seeds; bring to a boil. Reduce the heat to a simmer, and cook until the potatoes and carrots are tender, stirring occasionally, about 15 minutes.
  • Place the sauerkraut on top of the vegetables in a layer, and place the sausages onto the sauerkraut. Cover, and cook until the sausages are heated through, about 15 minutes.

4 sweet Italian turkey sausage links (such as Jennie-O®)
1 large red onion, chopped
1 red bell pepper, cut into 1 1/2-inch chunks
1 green bell pepper, cut into 1 1/2-inch chunks
3 cloves garlic, minced
½ teaspoon crushed red pepper, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
  • Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables.
