This sautéed yellow squash is one of my all-time favorite summer squash recipes! A crispy, nutty panko topping contrasts perfectly with the tender, herb-flecked squash.

3 yellow squash
Extra virgin olive oil (for drizzling)
Fresh basil & thyme for garnish (optional)
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
1 small garlic clove (grated)
2 tablespoons parsley (finely chopped)
¼ teaspoon sea salt
Freshly ground black pepper
¼ cup panko bread crumbs
¼ cup Vegan Parmesan
1 tablespoon chopped parsley
¼ to ½ teaspoon sea salt
pinch of red pepper flakes (optional)

Steps:

  • Slice the squash into ¼-inch rounds. If the squash is large, slice the rounds into half-moons.
  • Make the herb oil: In a jar with a tight-fitting lid, combine the lemon juice, olive oil, garlic, parsley, salt, and pepper and shake to combine.
  • Make the topping: In a small bowl, combine the panko, Vegan Parmesan, parsley, salt, several grinds of pepper, and a pinch of red pepper flakes, if desired.
  • Heat a large skillet over medium heat with a few drizzles of olive oil. Add the squash and sauté for about 7 to 10 minutes, stirring occasionally so that all sides get cooked. I like to cook mine until it's soft, yet still has a firm bite, but before it becomes too watery and mushy. Remove from the skillet and toss with the herb oil. Top with the panko mixture, and fresh herbs, if desired.

1 tablespoon olive oil
1 tablespoon butter
3 medium yellow squash, cut into 1/2 inch pieces
3 cloves garlic, minced
5 sprigs fresh thyme, finely chopped
10 fresh basil leaves, finely chopped
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and butter.
  • Once the oil is hot and the butter is bubbling, add the yellow squash. Stir the squash to coat them in the butter and oil. Sauté for 5 minutes. Stir again and flip the squash over and cook for 4 more minutes.
  • Add the garlic and thyme to the pan. Stir to combine and cook for an additional 2 minutes.
  • Remove the squash from the heat and add the chopped basil, lemon juice, salt, and pepper. Stir and serve immediately.

Easy sautéed yellow squash recipe, prepared Mediterranean-style with sweet onions, bell peppers, garlic and a warm Eastern Mediterranean spice combination. You can totally tailor this recipe to your liking, check out the notes for recipe variations.

Extra virgin olive oil (I used our Greek Early Harvest olive oil)
1 sweet onion, halved and thinly sliced
3 garlic cloves, minced
4 medium yellow squash
1 red bell pepper, cored and thinly sliced
Kosher salt
Black pepper
Crumbled feta cheese (optional)
Pitted marinated olives, sliced (optional)
Handful chopped fresh parsley (optional)
1 tsp za'atar, more for later
3/4 tsp to 1 tsp Aleppo pepper (start with less if you're not sure)
3/4 tsp ground cumin

Steps:

  • Heat 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add sweet onions and cook for about 4 minutes until translucent (you can raise heat to medium-hot and toss onions regularly.)
  • Add garlic, yellow squash, and red bell peppers. Drizzle a little more extra virgin olive oil.
  • Season with salt, pepper, and spice mixture. Toss with a wooden spoon to make sure vegetables are well coated with the spices. Cook on medium-high, stirring occasionally, until squash and peppers are nice and tender (I like my squash to have some carmalized parts, so it helps to raise the heat for a little while.)
  • Transfer to a serving platter. Add another drizzle of extra virgin olive oil and a generous pinch of za'atar. If you like, add a sprinkle of crumbled feta cheese, pitted olives, and a handful of chopped fresh herbs like parsley. Enjoy!

MARINATED SUMMER SQUASH WITH HAZELNUTS AND RICOTTA



Marinated Summer Squash with Hazelnuts and Ricotta image

Toss raw halved squash with salt and let it sit for at least ten minutes (and up to 30) to draw out some liquid, and then pat dry with paper towels. This also seasons it from the inside out, concentrating the flavor.

3 medium summer squash or zucchini, cut in half lengthwise
1 1/2 tsp. kosher salt, plus more
1/4 cup blanched hazelnuts
6 Tbsp. extra-virgin olive oil, divided, plus more for drizzling
1 small bunch mint, divided
1 small garlic clove, finely grated
2 Tbsp. white wine vinegar
3/4 tsp. sugar
1/2 tsp. crushed red pepper flakes
Freshly ground black pepper
1/2 lemon
1/2 cup fresh ricotta
Flaky sea salt
Toasted country-style bread (for serving)

Steps:

  • Preheat oven to 300°F. Toss squash and 1 1/2 tsp. kosher salt in a colander; set over a bowl. Let sit 10 minutes, then pat dry with paper towels.
  • Toss hazelnuts and 1 Tbsp. oil on a rimmed baking sheet and roast, shaking occasionally, until golden brown, 15-20 minutes. Let cool; crush into large pieces with a measuring cup or glass.
  • Smack 3 mint sprigs against your cutting board a few times to release their flavor; mix in a large bowl with garlic, vinegar, sugar, red pepper flakes, and 2 Tbsp. oil; set dressing aside.
  • Heat 2 Tbsp. oil in a large skillet, preferably cast iron, over medium-high until shimmering. Arrange squash cut side down in skillet, breaking into smaller pieces if needed in order to fit in a single layer, and cook, moving around in pan to ensure even browning, until golden brown on cut side, about 5 minutes. Reduce heat to medium-low, cover (if you don't have a lid use a baking sheet), and continue to cook until very tender, about 15 minutes. Transfer to a cutting board and let cool slightly.
  • Cut squash into 2" pieces and toss in reserved dressing to coat; season with kosher salt and black pepper. Let sit at room temperature, tossing occasionally, 15 minutes. Pluck out mint sprigs; discard.
  • Meanwhile, zest lemon half into a small bowl, mix in ricotta and remaining 1 Tbsp. oil; season with kosher salt. Hang on to that lemon.
  • Spread lemon ricotta over platter. Top with squash and their juices. Squeeze reserved lemon over. Pull leaves from remaining mint sprigs (you want about 1/4 cup). Scatter mint and hazelnuts over squash. Drizzle generously with oil and sprinkle with sea salt. Serve with toast.

3 medium summer squashes (preferably yellow zucchini), ends trimmed, sliced lengthwise into 1/4-inch-thick ribbons
1/4 cup plus 2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
2 tablespoons minced shallot
2 tablespoons seasoned rice vinegar
2 tablespoons finely chopped toasted blanched hazelnuts
1 1/2 cups fresh ricotta
2 tablespoons thinly sliced fresh basil leaves
1/2 teaspoon finely chopped fresh marjoram leaves
1 tablespoon finely chopped fresh dill
1/4 cup finely grated Pecorino Romano (1 ounce)
1 1/2 teaspoons finely grated lemon zest (from 2 lemons)
1 bunch small-leaved arugula

Steps:

  • Preheat oven to 425 degrees. Toss squash ribbons with 2 tablespoons oil; arrange in a single layer on a rimmed baking sheet and season with salt and pepper. Roast just until tender, about 8 minutes. Let cool completely, about 20 minutes.
  • Meanwhile, in a bowl, combine shallot and vinegar; let stand 15 minutes. Whisk in remaining 1/4 cup oil and hazelnuts; season with salt and pepper.
  • In a bowl, combine ricotta, herbs, Pecorino Romano, and lemon zest; season with salt and pepper. Place 3 arugula leaves crosswise on one end of each squash ribbon. Top with about 1 1/2 tablespoons ricotta filling. Roll squash up to create a little bundle, and place, seamside down, on a platter. Repeat with remaining squash, arugula, and filling. Serve, drizzled with vinaigrette.

GRATED SUMMER SQUASH WITH TRUFFLE PECORINO



Grated Summer Squash with Truffle Pecorino image

This salad is a wonderful way to venture into the world of raw squash. Using the truffle version of pecorino isn't absolutely critical, but its earthiness is a fantastic counterpoint to the brighter flavors of squash and lemon juice. For best results, use the smallest, firmest, freshest squash you can find- they're easier to grate and taste better than the more mature ones. And because this salad is so simple (almost minimalist), the quality of your olive oil really counts.

4 small summer squash (green or yellow or a mix-about 1 pound total)
2-inch chunk truffle pecorino cheese
2 teaspoons freshly squeezed lemon juice, more as needed
2 teaspoons extra-virgin olive oil, plus more for drizzling
Kosher salt

Steps:

  • Trim the squash, grate on the large holes of a box grater, and transfer to a medium bowl. Finely grate enough of the cheese to make 1/4 cup and add to the bowl. Use a vegetable peeler on the remaining chunk of cheese to make a small pile of cheese shards, and set them aside.
  • Drizzle the lemon juice and olive oil over the squash, add a few large pinches of salt, and mix well. Taste and add more lemon juice or salt as needed. Transfer to a serving bowl, drizzle with a little more olive oil, and sprinkle the cheese shards over the top of the salad.
  • Because squash has so much water, it starts to wilt and release liquid as soon as it comes into contact with salt. So for best results, serve this salad within minutes of making it.

3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup finely chopped shallot (6 1/2 ounces)
2 medium zucchini (1 1/2 pound total), cut into 1/3-inch dice
2 medium yellow squash (1 pound total), cut into 1/3-inch dice
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup hazelnuts (4 ounces), toasted , loose skins rubbed off in a kitchen towel, and nuts coarsely chopped
1/2 cup chopped fresh flat-leaf parsley
1/2 cup chopped fresh basil
2 teaspoons finely grated fresh lemon zest

Steps:

  • Cook orzo in a 4- to 5-quart pot of boiling salted water until al dente. Reserve 1/2 cup cooking water, then drain orzo in a colander.
  • While orzo is cooking, heat butter and oil in a deep 12-inch heavy skillet over moderately high heat until foam subsides, then sauté shallot, stirring, until golden, about 5 minutes. Add zucchini, yellow squash, salt, and pepper and sauté, stirring occasionally, until vegetables are just tender, about 5 minutes. Remove from heat and stir in nuts, parsley, basil, and zest.
  • Add cooked orzo to skillet and stir gently. If mixture seems dry, moisten with some reserved pasta water. Season with salt and pepper. Serve warm or at room temperature.

I thought I would try creating something I hadn't seen before. I combined an element of stir fry with some ingredients I had seen popping up in other squash recipes. Squash, onion and jalapeno are fried with bacon for a tasty summer side dish.

2 slices bacon
2 medium yellow squash, thinly sliced
½ medium onion, thinly sliced
1 jalapeno pepper, chopped
1 dash soy sauce
salt and pepper to taste

Steps:

  • Place bacon in a large skillet over medium-high heat. Cook until crisp. Remove bacon from pan, and set aside. Add the squash, onion, and jalapeno to the skillet. Fry in the bacon drippings until tender, but still firm, stirring frequently. Crumble bacon into the skillet, and season with soy sauce, salt and pepper. Stir, to blend in seasonings, and serve.
